ZUCCHINI JELLY
This easy and great way to use zucchini was given to me by my Grandmother many years ago and is still requested by friends and family today. Any flavor gelatin will work, but I have found apricot and strawberry to work best.

Steps:
- Combine the zucchini, sugar, pineapple, and lemon juice in a large pot over medium heat. Boil mixture until the zucchini is clear; remove from heat. Add gelatin mix and stir until completely dissolved.
- Ladle into hot, sterilized jars to within about 1/4 inch of the top. Seal, and process in a boiling water canner for 5 minutes.

Steps:
- 1. In a bowl, dissolve jello in the boiling water, stirring with a wire whisk.
- 2. Stir in yogurt until well blended. Whisk in thawed topping.
- 3. Stir in marshmallows.
- 4. Divided among 4 dessert dishes or lightly coat a 3-cup mold with nonstick cooking spray and pour mixture into it. Cover with plastic wrap and chill for at least 6 hours.
- 5. Serve with a dollop of the whipped topping, if desired. If using a mold, unmold onto a plate and serve.

- Place contents of orange Jello packet in a large bowl. Add 2 cups boiling water. Stir until completely dissolved. Add 1/2 cup cold water. Stir in 2 cups of Cool Whip. It will melt and dissolve. The mixture will be opaque. It will separate into a two layer Jello as it chills. Pour into 8-inch square pan. Chill until firm (preferably overnight). Cut into squares. I cut 6 x 6 for 36 squares.

- In a large bowl combine orange jello mix and boiling hot water. Use a whisk to stir until all jello is dissolved and then add in the cold water. Use a rubber spatula to scrape around the sides of the bowl. Cover bowl with plastic wrap and place in the refrigerator for 15-20 minutes.
- Remove from the refrigerator and whisk in dry instant vanilla pudding mix. Use the rubber spatula to scrape sides of the bowl again to ensure all jello and pudding are dissolved. Cover bowl with plastic wrap and place back in the refrigerator for another 15-20 minutes.

- Preheat oven to 350 degrees. In a large bowl, combine the oil, sugar, egg, vanilla and milk and whisk together until well combined. Stir in the zucchini. In a separate bowl, whisk together the flour, cocoa, baking soda and salt. Add dry ingredients to wet and stir together until just combined. Pour into a greased 9X13-inch baking pan. Bake in preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean.
- Remove from oven and cool for 20 minutes. Using the handle of a wooden spoon, poke holes all over the cake, being careful not to poke all the way to the bottom. Squeeze caramel all over the cake, filling in all the holes. I use the majority of the 20 oz. bottle, but save a little for garnishing the cake when serving. Refrigerate cake for several hours or overnight. When ready, top cake with Cool Whip and toffee bits. Slice and serve. Once the toffee bits are added, this looks best within 24 hours, because they begin to soften on top. Although, it still tastes great for several days.
