- In a medium bowl, mix boiling water, strawberry gelatin, sugar and lemon juice. Stir until dissolved.
- In a large bowl, whip evaporated milk with electric mixer until it achieves the consistency of whipped cream. Fold in the strawberry gelatin mixture. Pour into pie shell and refrigerate for 2 to 4 hours before serving.

LIGHT AND FLUFFY LEMON JELLO CHEESECAKE
I got this recipe in 1980 when I worked at University of Michigan hospital. The ward secretary on our unit always brought this to our potluck lunches. Everyone loves it because of its great cheesecake flavor without the heaviness of regular cheesecake. Easy to make, easier to eat!

Steps:
- Mix Graham cracker crumbs, 1 tablespoon sugar, and melted butter or margarine.
- Press Graham cracker crumb mixture into the bottom of a 9"x13" pan. (You do not need to grease the pan.).
- Mix lemon Jello with 2 cups boiling water until Jello is dissolved.
- Add cream cheese to Jello mixture, breaking cheese up with a potato masher or the beaters of an electric mixer.
- In a chilled bowl (glass or metal work best) whip with electric mixer chilled evaporated milk with 1 tablespoon sugar until small peaks form. (Getting peaks to form is much easier if the bowl and milk are cold.).
- Add Jello mixture to evaporated milk and continue to beat until well blended.
- Pour over Graham cracker crust.
- Chill until firm.

- Drain liquid from oranges into a measuring cup. Add enough water to measure 1 cup; set oranges aside. Pour liquid into a saucepan; bring to a boil. Stir in gelatin until dissolved. , Transfer to a large bowl; place mixer beaters in bowl. Cover and refrigerate until mixture becomes syrupy., Add milk. Beat on high speed until nearly doubled. Fold in mandarin oranges. Pour into crust. Refrigerate for 2-3 hours or until set. Garnish with orange slices.

LIME JELLO PIE
Posted in request for this recipe; the recipe is originally from a friend of my grandmother McElderry. An old recipe, the original called for use of ice cube trays (the ones w/ the metal insert for the cubes) to make this. It's a long-time family favorite and wonderful in the summer... so light and cool! (The can sizes are a guess; I have neither in the house right now to check. Both are given in the recipe as the "large" size.)
