CILANTRO TOMATO BRUSCHETTA

Steps:
- Preheat oven to 325°. Place bread slices on ungreased baking sheets; brush with 1/4 cup oil. Bake until golden brown, 10-12 minutes., In a small bowl, whisk together vinegar and remaining oil. Stir in tomatoes, onion, cilantro, salt and pepper., To serve, spoon scant 1 tablespoon tomato mixture onto each slice of bread. Top with cheese.

JIM'S TOMATO-CILANTRO QUICK BREAD
Another one of those recipes from an old Food BBS from the early 90's. It was posted by someone named Sandee. I have no idea who Jim is (or was)!

Steps:
- Preheat oven to 350°F
- Place flour, baking soda, baking powder, salt and cumin in work bowl of food processor with metal blade and process for 2 seconds. Move dry ingredients to another bowl.
- Process cilantro and green onion for 5 seconds. Add tomatoes and tomato paste (and jalapeno if wanted) and process until tomatoes are pureed, about 10 seconds. Add sugar and process for 30 seconds, stopping to scrape down sides of bowl. Add eggs and process for 1 minute, or until mixture becomes fluffy. Return dry ingredients to processor and combine by turning machine on and off 4 to 5 times until mixture is just incorporated.
- Pour mixture into greased and floured 9-inch by 5-inch loaf pan. Spread the mixture evenly and bake at 350 F for 45 minutes or until browned. Let the bread cool in the pan for 10 minutes and turn onto wire rack to cool completely.

CILANTRO BREAD DIP
Tried this recipe at a resteraunt and altered it a little bit at home. Its great with fresh Italian bread with garlic!! Basil is optional! Works great as an appetizer

Steps:
- Wash and de-leaf the cilantro.
- Chop the cilantro (carefully, cause cilantro damages and bruises easily!).
- Dice the green onions.
- Combine all the ingrediants together in a serving dish or bowl.
- Cut or rip the bread into bit size peices.
- Chill for 10- 15 minutes.
- Spoon over bread and enjoy!

CILANTRO TOMATO BRUSCHETTA
Found this in a TOH magazine. A tasty appetizer that my family and friends love. The ingredients meld together for a great-tasting appy that goes well with many different main dishes. While there are many (to many to scroll through) listed here the use of balsamic viniger makes this one a little differant so thought I'd post. Simple, pretty, but oh so good. The recipe calls for tomatoes - however I have use canned Italian tomatoes and it came out well. I think I might add some minced garlic also.

- Make spice sachet by wrapping together in cheesecloth the cinnamon sticks, coriander seeds, cloves, peppercorns, bay leaves, and cardamom pods. Tie with kitchen string.
- In heavy, large pot over high heat, stir together 4 cups water, tomatoes, garlic, ginger, cilantro stems, 1 teaspoon salt, and spice sachet. Bring to boil, then reduce heat and simmer, uncovered, until reduced by 1/3, about 30 minutes. Strain through fine-mesh sieve into large clean pot, reserving solids. Discard spice sachet. Measure 1 cup of strained liquid in pot and transfer to blender. Add reserved solids and pureé until smooth. Strain through fine-mesh sieve back into pot with liquid.
- Place pot over high heat and bring to simmer, about 5 minutes. Stir in ground pepper and remaining 1/4 teaspoon salt. Serve immediately, topping each portion with chopped cilantro leaves.

I begged this recipe from my co-worker when he 'accidentally' mentioned he had a great soda bread recipe. It was perfect timing, because St. Patrick's Day was only days away!

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together bread flour, salt, and baking powder until thoroughly combined. Beat in the butter, buttermilk, and confectioners' sugar to make a dough; gently mix in the onion and Cheddar cheese. Divide dough in half, and shape each half into a ball. Place the loaves onto the prepared baking sheet, and gently flatten to about 2 inches thick. Dust each loaf with flour.
- Bake on a preheated oven until browned, about 30 minutes. Cool on racks for a few minutes; serve warm.

TOMATO SALAD WITH LEMON AND CILANTRO
Another magazine find. The lemon rind and juice get utilized in this salad. I love the lemon oil fragrance in the lemon skin! I had it as a side dish with shrimp scampi and it went well. Nice with sea salt.

- Place tomatoes and cilantro in large bowl.
- With a vegetable peeler, carefully remove peel from lemon, leaving white pith behind.
- Toss with tomatoes.

- To toast bread slices: Lightly brush both sides of bread slices with olive oil (3 to 4 tablespoons total).
- Arrange in a single layer on a large baking sheet.
- Broil 4 to 5 inches from heat for 1 or 2 minutes or until lightly browned.
- Turn over bread slices.
- Broil 1 to 2 minutes more or until lightly browned.
- Transfer to a wire rack to cool.
- In a food processor combine cilantro, mint, pepper, lime juice, sugar, and ginger.
- Cover, process until nearly smooth.
- Add peanuts; cover and process until combined.
- Add water until spreading consistency.
- Spread one side of each toasted baguette slice with some of the mixture.
- Top with the cucumber, tomato, and mint.
