Kaandha Poha is a traditional Indian (Maharashtrian) snack or vegetarian main dish that has several variations. In some orthodox families, this is a breakfast speciality! Poha = beaten rice

1 cup beaten rice (poha)
1 1/2 teaspoons vegetable oil
1/2 teaspoon mustard seeds
1/2 teaspoon Urad Dal (split black gram)
1/8 teaspoon turmeric powder
1 green chili pepper, slit lengthwise
1/2 medium onion, thinly sliced
1 small potato, peeled,diced
salt
2 tablespoons water
1/2 lemon, juice of
1 teaspoon chopped coriander leaves

Steps:

  • Soak poha in enough water to cover (NOT the 2 tablespoons of water) for 5 minutes.
  • Drain and squeeze out excess water, working in batches of handfuls.
  • Heat oil in a skillet and add the mustard seeds, Urad dal, turmeric, and slit green chili.
  • When the mustard seeds start to sputter, add the onion and potato and saute for 5 minutes.
  • Add salt and 2 tablespoons of water, and cover.
  • After 5 minutes, uncover, add the poha and saute for another 5 minutes.
  • Remove from flame add the lime juice and garnish with chopped coriander.
  • Serve hot.

  • Fry the potato. Heat oil in a kadai over low-medium heat and once hot add the chopped potato. Fry gently for a few minutes, stirring occasionally, until golden brown from the outside and nicely cooked. Once done carefully remove from the oil and set aside until needed.
  • Rinse the poha. While the potato is cooking, wash the poha. Place it into a sieve and run warm water over the sieve. Gently move the poha around with a spoon or your hand. Repeat this once more until the poha is soft - do no over rinse. Once done, set the sieve aside so all the access water drains, and gently 'fluff' the poha to separate the grains.
  • Cook the poha. Immediately after frying the potatoes, use the excess oil in the pan to begin cooking the poha. Turn the heat to medium and directly add the black mustard seeds. They should splutter and pop straight away.
  • Next add the green chillis, fresh curry leaves, and peanuts. Cook for around 30 seconds, then add the onions. Stir occasionally and cook until the peanuts are crunchy and the onions are just soft. Finally add the turmeric powder and quickly stir, being sure to not let the spice 'catch' and burn.
