CREAMY KALE SALAD



Creamy Kale Salad image

I have kale coming out of my ears from the garden, so I was looking for another way to eat this most revered food. My cousin Pam helped me come up with the recipe, and it is delicious. It was even better the next day!

4 cups chopped kale (ribs removed)
¼ cup chopped red onion
3 tablespoons raisins
½ cup plain Greek-style yogurt
¼ cup mayonnaise
2 teaspoons sugar
1 lemon, zested and juiced
3 tablespoons sunflower seeds

Steps:

  • Mix kale, red onion, and raisins in a large bowl.
  • Whisk yogurt, mayonnaise, sugar, lemon zest, and lemon juice together in a bowl; pour over the kale mixture and toss to coat. Refrigerate 2 hours to overnight. Sprinkle sunflower seeds over the salad and toss to serve.

I originally combined several recipes for kale salad and made several versions over the last 5 years. Despite numerous requests, I did not write it down until last year and have since perfected it. Whenever I take it to a potluck, I always take an empty bowl home.

½ cup water
½ cup dried cranberries
1 tablespoon honey
16 ounces kale, stems removed and discarded, leaves torn into bite-sized pieces
1 red onion, chopped
3 tablespoons olive oil
3 tablespoons balsamic vinegar
1 teaspoon minced garlic
¾ teaspoon salt
½ teaspoon ground black pepper
5 ounces feta cheese, crumbled
½ cup toasted walnuts, chopped

Steps:

  • Combine water and cranberries in a small saucepan and bring to a boil. Reduce heat and simmer until cranberries are soft and liquid is syrupy, 5 to 10 minutes. Stir in honey, remove from the heat, and allow to cool.
  • Put kale and red onion in an 8-quart pot or a very large bowl.
  • Whisk olive oil, balsamic vinegar, garlic, salt, and pepper together in a small bowl; pour over the kale and stir well. Add feta cheese, walnuts, and moist cranberries with their syrup; stir until well combined. Cover and place in the refrigerator to marinate, stirring occasionally, until kale has wilted and shrunken in size, 3 to 8 hours.
  • To serve, transfer to a smaller serving bowl.

1 teaspoon olive oil
1 bunch kale, stemmed and torn into pieces
1 clove garlic, minced
½ cup water, or as needed
½ cup olive oil
¼ cup red wine vinegar
½ cup orange juice
2 tablespoons soy sauce
1 teaspoon dried minced onion
1 teaspoon ground ginger
salt and ground black pepper to taste
⅓ cup dried cranberries
¼ cup pepitas (pumpkin seeds)
¼ cup slivered almonds

Steps:

  • Heat 1 teaspoon olive oil in a large skillet over medium-high heat. Saute kale and garlic in hot oil until fragrant and kale is bright green, 2 to 3 minutes. Add water to skillet; cook and stir until kale wilts, about 5 minutes more. Drain.
  • Whisk 1/2 cup olive oil, vinegar, orange juice, soy sauce, onion, ginger, salt, and pepper together in a large bowl. Add kale mixture to bowl and toss until kale is evenly coated. Sprinkle cranberries, pepitas, and almonds over the top. Cover the bowl with plastic wrap and refrigerate for 1 hour, or overnight.

  • Prepare the kale by slicing out the stems and chopping out the leaves into small, bite-sized pieces. Transfer the kale to a big salad bowl. Sprinkle a small pinch of sea salt over the kale and massage the leaves with your hands by lightly scrunching big handfuls at a time, until the leaves are darker in color and fragrant.
  • Drizzle salad dressing over the kale (you might not need all of the dressing) and toss well so the kale is lightly coated with dressing. Add the prepared avocado, pomegranate (or dried cranberries), clementines, radishes, cilantro and feta to the bowl.
  • Toast the pepitas in a skillet over medium-low heat for a few minutes, stirring frequently, until they smell fragrant and toasty. Transfer the pepitas to the salad bowl. Toss the salad to combine and serve.
