The Best Chili image

There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

Number Of Ingredients 16

1/4 cup vegetable oil
1 pound ground beef chuck, preferably coarse grind (see Cook's Note)
1 large yellow onion, diced
1 jalapeno pepper, seeded and diced
4 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 teaspoons tomato paste
1 1/2 cups low-sodium beef broth
One 28-ounce can whole peeled tomatoes, crushed
Two 15.5-ounce cans kidney beans, undrained
Sour cream, shredded Cheddar and sliced scallions, for serving
Tortilla chips, for serving

Steps:

  • Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
  • Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
  • Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
  • Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
  • Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
  • Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
  • Top with sour cream, Cheddar and scallions. Serve with tortilla chips.

2 (15.25 ounce) cans kidney beans, rinsed and drained
1 (15 ounce) can black beans
1 (8 ounce) can tomato sauce
2 (14.5 ounce) cans diced tomatoes
1 tablespoon minced garlic
2 ½ tablespoons chili powder
1 ½ teaspoons paprika
1 tablespoon dried oregano
1 teaspoon dried rosemary
1 teaspoon ground coriander
1 teaspoon garlic powder
1 ½ teaspoons salt
2 tablespoons ground cumin
¼ cup chopped fresh cilantro
2 bay leaves

Steps:

  • Place a large skillet over medium-high heat. Cook the ground beef in the hot skillet until completely browned, 7 to 10 minutes; drain.
  • Combine the drained beef in a slow cooker with the bell peppers, onions, kidney beans, black beans, tomato sauce, and diced tomatoes. Cook on High for 30 minutes. Stir the garlic, chili powder, paprika, oregano, rosemary, coriander, garlic powder, salt, cumin, cilantro, and bay leaves into the beef mixture. Reduce heat to Low and cook another 6 1/2 hours.

1 pound ground turkey
1/2 cup chopped onion
1 can (15-3/4 ounces) pork and beans
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 tablespoon brown sugar
1 tablespoon chili powder

Steps:

  • In a large saucepan, cook turkey and onion over medium heat until meat is no longer pink; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer until heated through, 15-20 minutes.

1 tablespoon olive oil
1 medium onion, finely diced
1 garlic clove, minced
1/4 medium green bell pepper, finely diced
1 (14 ounce) can crushed tomatoes
1/4 cup roasted whole buckwheat groats, rinsed and drained (kasha)
1/2 cup dry red wine
1 (14 1/2 ounce) can vegetable broth
0.5 (15 ounce) can kidney beans
1 tablespoon chili powder
1 tablespoon ground cumin
1/4 bunch cilantro, rinsed and tied with string
1 bay leaf
1/2 cup sliced mushrooms
1 teaspoon salt (optional)
1/2 cup sour cream (optional)
2 scallions, finely chopped (optional)
1/2 cup shredded cheddar cheese (optional)

Steps:

  • In a large soup pot, heat olive oil over medium-high heat. Add onions and cook, stirring occasionally, until soft, about 3 minutes. Add garlic, bell pepper, and tomatoes. Cover and cook 5 minutes. Add kasha, wine, and broth. Stir to blend. Cook, covered, 5 minutes. Add kidney beans, chili powder, cumin, cilantro, and bay leaf. Cover and cook over medium-low heat for 40 minutes.
  • Add mushrooms. Add salt to taste. Simmer for 5 minutes. Discard bay leaf and cilantro.
  • Serve hot. If desired, serve with sour cream, chopped scallions, and grated cheese on the side.

(Chili Appreciation Society International) CASI chili-cookoff winners tend to use blended chili powder and also Jalapeno chiles, which are usually removed before serving. The beef is cubed, and masa, which is a flour made from ground dried corn, is used to thicken the chili. This recipe is from "The Whole Chile Pepper Book". If you like it "hot", this is it. There are no beans, but you can always add some (but don't tell anybody that I said that) lol. The heat scale rating is 4, on a scale of 1 to 5. I gave it a 5. (Maybe I'm a whimp). Caution: I once made a huge amount of this chili, I scraped the seeds from the jalapenos with my thunbnail. Don't ever do that, I burned the skin under my nail, OOOOOOOOOOOOuch!!!!

4 jalapeno chiles, stems and seeds removed, sliced in half
4 tablespoons chili powder
1 tablespoon paprika, ground
2 lbs beef chuck, cut into 1-1/2 inch cubes
1 medium onion, chopped
2 tablespoons vegetable oil
1 (8 ounce) can tomato sauce
1 (12 ounce) can beer
2 cups beef broth
3 teaspoons ground cumin
2 teaspoons garlic powder
1 teaspoon black pepper, freshly ground
1/4 cup masa harina flour

Steps:

  • Brown the meat and onions in the oil.
  • Add the tomato sauce, beer, beef broth, chiles, cumin, garlic, black pepper, and 2 tablespoons of the Chili Powder. .
  • Simmer the chili over a low heat for 2 hours until the meat is tender.
  • To thicken, make a thin paste of the masa and water. Quickly stir this into the chili. (If done too slowly it will lump).
  • Add the remaining chili powder and paprika. Simmer for an additional 15 minutes. Remove the Jalapenos and serve.
