Steps:
- Preheat oven to 400°F.
- Grease a 9x5 loaf pan with cooking spray and set it aside.
- In a large skillet over medium heat, add and heat the Macadamia Nut Oil.
- Now, add the onion & celery and cook until soft and translucent.
- Next, add the garlic, oregano, and chili powder, and Italian seasoning and cook until fragrant. Once fragrant, let the mixture cool.
- Now, when the mixture cools, use a large bowl to add and combine all of the ingredients - except for the ketchup.
- Shape meat mixture into the size of a large loaf, and add it to the pan. *If using bacon, wrap it in bacon before adding the meatloaf to the pan.
- Cook for 40 minutes, remove, and cover with ketchup (if using)
- Return to oven and cook for another 15-20 minutes (once the internal temp gets to 165°F).
- Let it rest 10-15 minutes before cutting into it.
- Garnish with fresh oregano, or more Italian seasoning.

- Preheat your oven to 350° F. Line a rimmed sheet pan with foil.
- In a large bowl, whisk together the egg, salt, pepper, garlic powder, onion powder, and thyme.
- Add the ground beef, almond flour, and Parmesan. Gently mix, just until uniform.
- Shape the mixture into a rectangular loaf (as shown in the video) and place it on the prepared baking sheet. Brush the loaf with ketchup.
- Bake the meatloaf until the center of the loaf registers 160° F, 50-60 minutes.
- Rest the meat for 15 minutes before slicing and serving.

- Preheat oven to 350 degrees F.
- Heat fat of choice in medium sauté pan over medium heat. Add onions stirring occasionally until translucent, but not brown, about 7-8 minutes.
- Add garlic and allow to cook for about 1-2 minutes until fragrant.
- Add grated carrots, zucchini, thyme, and sea salt. Stir occasionally just until vegetables are soft, about 2-3 minutes. Remove from heat and set aside.
- In a large mixing bowl, add ground beef, egg, sour cream, cheese and slightly cooled vegetables. Use a fork or clean hands to mix well.
- Place meat mixture into a loaf pan, a shallow 7x11 pan or shape into a rectangle loaf on a parchment paper lined sheet pan.
- Spread ketchup over the top of the meatloaf mixture.
- Bake the meatloaf for 1 to 1 1/2 hours, or until the internal temperature is 160 degrees F and the meat is cooked through. [Note: A 7x11 shallow pan will cook in about 1 hour, a loaf pan will take closer to 1 1/2 hours.]
- Let the meatloaf rest for at least 10 minutes before serving.

- Preheat the oven to 375°F degrees and grease a loaf pan (if using).
- Add all meatloaf ingredients to a large bowl. Using your hands, combine well. Form the mixture into a loaf shape and place on a greased baking dish or press into your greased loaf pan and flip out on the baking sheet.
- Bake for 20 minutes.
- While the meatloaf is baking, add all topping ingredients to a small bowl and whisk together.
- Remove meatloaf from oven and top with the ketchup mixture. Bake for an additional 10-15 minutes or until the meatloaf reaches 165°F.
- Remove from the oven and allow to rest for 15 minutes to let the juices settle before slicing and serving.
- Best stored in an air tight container in the fridge up to 5 days.

- Wash and remove any tough stems from your greens. This will be especially important if you are using kale. Put the greens, water, and salt in a large pot and bring to a covered boil. Reduce the heat to medium-low and simmer for 20 minutes.

Using the lid from your pot press on the greens while tilting your cutting board into the sink. Press the greens until very little water remains. Using a sharp knife cut the pressed greens in one direction about every half inch. Make a quarter turn to your cutting board and cut through the greens again across the previous cuts. This will give you nice even pieces to add to the sauce.
