CREAM OF ZUCCHINI SOUP



Cream of Zucchini Soup image

1 tablespoon butter
2 tablespoons avocado oil
1 medium onion ((about 4 ounces) chopped)
2 pounds zucchini squash ((about 2 medium) trimmed and sliced)
1 teaspoon oregano
sea salt
black pepper (freshly ground)
1 clove garlic
2½ cups vegetable stock
4 ounces feta cheese (crumbled)
½ cup heavy whipping cream

Steps:

  • Heat a large, heavy saucepan over medium heat. Add the butter and avocado oil. After butter has melted, stir in the onion. Cook onion until soft and translucent.
  • Stir in the zucchini squash and oregano. Sprinkle lightly with salt (optional) and pepper. Don't overdo the salt as the feta and the stock will also add saltiness.
  • Cook the squash until starting to soften, stirring frequently. Add the garlic and cook for about one minute. Pour the stock over.
  • Cover the pot, leaving the cover slightly off center to allow steam to vent. Simmer until vegetables are soft, about 25 minutes. Stir in the feta cheese and allow to melt slightly. Puree the soup using an immersion blender, or in batches, using a traditional blender.
  • Stir in the heavy whipping cream and simmer a few minutes. Taste and adjust seasoning if desired. Soup may be thinned with additional stock if desired.

Number Of Ingredients 8

2 large zucchini's (spiralized into noodles, you can use a basic vegetable peeler to make large ribbons too)
2 tablespoons olive oil
1 lemon (zest reserved + 1/3 cup of fresh lemon juice)
4 cloves garlic (finely minced)
½ teaspoon salt
¼ teaspoon black pepper
¼ cup of cream
A handful of fresh basil or parsley (roughly chopped)

Steps:

  • Add olive oil to a large saute pan set over medium heat.
  • Add garlic and cook for 30 seconds until fragrant.
  • Add lemon juice, lemon zest, salt, pepper, and heavy cream to the pan. Cook for 8-10 minutes until sauce is reduced. Adjust seasoning to taste. Turn off heat.
  • Add zucchini noodles and toss to coat in sauce.

  • If using a stand mixer, switch to paddle attachment. Add almond and coconut flours, salt, sweetener, baking powder, baking soda, zucchini, and cinnamon to eggs and mix on medium speed till combined, scraping down sides at least once. Add sour cream, melted butter, and extract to the batter and mix again till combined.
  • Spoon the batter evenly into the prepared loaf pan and smooth out the top. If desired, sprinkle chopped pecans evenly over the top of the batter. Bake at 350 degrees for 45 minutes to an hour or until a tester comes out clean. Half way through baking and cover loosely with foil to prevent over browning! If you use a 9" pan the baking time will be slightly shorter, so keep an eye on it starting at 30 minutes!
