Cauliflower soup is awesome for so many reasons: it's easy to make, wholesome, delicious, and super low-carb. This one, from Carb Manager's Keto Diet Cookbook is a great base with subtle flavor that you can easily customize to take on other flavors if you want. You can add spices, like curry powder, cumin, and turmeric, to give it an Indian flair, or pesto for an Italian twist. Here's what the Carb Manager's Keto Diet Cookbook has to say about it:"Delicious, sweet cauliflower is sautéed with diced onions and celery, simmered gently with heavy cream and pureed to smooth perfection. The key to allowing the soup's flavor to develop properly is to be sure not to brown the onions and celery, but to sweat them instead. This means cooking them on a lower heat until they are translucent. Using frozen cauliflower rice is very convenient and recommended. 1 Tbsp extra virgin olive oil
1/2 cup diced white onion
1/4 cup diced celery
1/4 tsp kosher salt
3½ cups fresh or frozen cauliflower rice
1 cup (240 ml) heavy cream
1 cup (240 ml)water
2 tsp pine nuts
1 tsp sunflower seeds
1/8 tsp chia seeds
1 tsp fresh parsley, finely minced

Steps:

  • Heat a medium-sized stockpot over medium-high. When the pot is hot, add the oil and let it heat until shimmering. Add the onion and celery and turn the heat down to medium. Stir and cook until the vegetables are translucent, 3 to 4 minutes. Add the kosher salt and stir well.
  • Add the cauliflower rice and cook until fully defrosted if using frozen and slightly translu-cent if using fresh. Then add the heavy cream and water. Bring the mixture to a gentle boil.
  • As soon as it comes to a boil, place the hot mixture into a blender and blend on high until very smooth (you can also use an immersion blender). If your blender has a soup setting, use that to puree. Taste the soup, adding more salt to taste.
  • Place the pine nuts and sunflower seeds in a dry, small, nonstick sauté pan. Heat over medium heat and toast the nuts until browned, about 1 to 2 minutes. Mix in the chia seeds and parsley.
  • Divide the soup between four bowls and top with the toasted nut topping.

1/2 zucchini, chopped
6oz/170g shrimp, peeled and deveined
5 lime leaves or lemon grass
1 1/2 tsp red curry paste
handful cilantro, chopped

Steps:

  • Add the coconut milk and the curry paste to a small cooking pot and cook at medium-high heat, stirring until you get a smooth and even broth (could take 3-4 minutes). Another option here would be whisking the ingredients instead of stirring - this can speed up the process.
  • Once the curry and the coconut milk are combined, add the shrimp and the lime leaves or lemongrass. Cook for a few minutes until the shrimp turns pink.
  • Stir in the zucchini and turn the heat off.
  • Take out the lime leaves if using and serve topped with fresh cilantro.

  • Start off by grating the cauliflower on the largest setting of a box grater or by using the grater attachment of the food processor. The texture is much better than buying pre-made riced cauliflower from the store. Preheat a wide pot or pan with high sides over medium heat with 2 tablespoons of oil. Add the onions, ½ teaspoon salt, a couple cracks of pepper, and cook for 8 minutes. Add the garlic and cook another 3-4 minutes until the onions are soft. Add the riced cauliflower along with ½ teaspoon of salt, a few cracks of pepper, and mx well. Cook for 8-10 minutes so some of the moisture from the cauliflower can cook off.
  • Meanwhile, pat the moisture off the shrimp using a couple layers of paper towels, it’s important they are dry. Season the shrimp with 2 teaspoons of oil, smoked paprika, onion and garlic powder, and mix well. Let sit at room temperature while you proceed with the grits.
  • Add the veggie stock and coconut milk, mix well and bring to a boil. Immediately reduce to a low simmer and cook for 25 minutes with the lid off, stirring often. Check for seasoning after 15 minutes, you will need more salt, but not too much because the cheese is salty. After 25 minutes, turn the heat off and add the grated cheese, parsley, and mix well. Check for seasoning and adjust if needed. Cover the grits and set aside.
  • To cook the shrimp, preheat a large pan, preferably cast iron, just above medium-high heat for 3 minutes. Meanwhile, season the shrimp with ¾ teaspoon of salt and mix well. Add 3 tablespoons of ghee to the pan, once it begins to smoke a bit, add half the shrimp to the pan and spread it out in one even layer. Cook for 2-3 minutes, or until deep golden brown, flip, and cook 1 minute more. Shrimp cook incredibly quickly. Remove from pan, add more ghee if needed, and cook the second batch. Once all shrimp are cooked, spoon a bit of ghee over them and mix well so they stay juicy, you can use the leftover ghee as a sauce.
