LOW CARB KETO CHEESECAKE



Low Carb Keto Cheesecake image

Number Of Ingredients 10

24 ounces cream cheese (3 (8 oz.) packages, softened)
3 eggs
1 egg yolk
1 cup sour cream
1 tsp lemon juice
1 tsp vanilla liquid stevia
2 tsp vanilla extract
1/3 cup Swerve confectioner's sweetener
1 tsp baking powder
1/4 tsp salt

Steps:

  • Preheat oven to 325 degrees F.
  • Combine all ingredients into a stand mixer or use an electric hand mixer until you have no clumps and a smooth texture.
  • Grease an 8 inch spring form pan and pour the batter into the pan. Even off the top then wrap the bottom of the pan with aluminum foil.
  • Place the spring form pan into a large roasting pan. Fill the roasting pan with hot water, until half way up the sides of the spring form pan.
  • Bake for 45 minutes. Turn off oven, do not open oven door. Let the cheesecake stay in the oven for 1 hour.
  • Remove cheesecake from the oven, remove aluminum foil and cover cheesecake with plastic wrap. Refrigerate for 2-3 hours or overnight.
  • Top with sugar free whipped cream and sugar free maple syrup if desired!

A gluten-free, keto cheesecake recipe that's EASY to make with only 8 ingredients and 10 minutes prep time. This low carb sugar-free cheesecake tastes just like the real thing!

2 cups Wholesome Yum Blanched Almond Flour
1/3 cup Unsalted butter ((measured solid, then melted))
2 tbsp Besti Monk Fruit Allulose Blend ((granular or powdered works fine))
1 tsp Vanilla extract
32 oz Cream cheese ((softened))
1 1/4 cups Besti Powdered Monk Fruit Allulose Blend
3 large Eggs
1 tbsp Lemon juice
1 tsp Vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (177 degrees C). Line a 9-inch (23-cm) springform pan with parchment paper.
  • To make the almond flour cheesecake crust, stir the almond flour, melted butter, Besti, and vanilla extract in a medium bowl, until well combined. The dough will be slightly crumbly.
  • Press the dough into the bottom of the prepared pan. Bake for about 10-12 minutes, until barely golden. Let cool at least 10 minutes.
  • Meanwhile, beat the cream cheese and powdered sweetener together at low to medium speed until fluffy.
  • Beat in the eggs, one at a time.
  • Beat in the lemon juice and vanilla extract. (Keep the mixer at low to medium the whole time; too high speed will introduce too many air bubbles, which we don't want.)
  • Pour the filling into the pan over the crust. Smooth the top with a spatula (use an icing spatula for a smoother top if you have one). If you want to ensure no air bubbles, tap the pan on the counter several times.
  • Bake for about 40-55 minutes, until the center is almost set, but still jiggly.
  • Remove the cheesecake from the oven. If the edges are stuck to the pan, run a knife around the edge (don't remove the springform edge yet). Cool in the pan on the counter to room temperature, then refrigerate for at least 4 hours (preferably overnight), until completely set. (Do not try to remove the cake from the pan before chilling.)

Steps:

  • Preaheat oven to 350 F
  • Add all the ingredients to a blender or food processor and blend until smooth. Spread into an 8 inch round baking dish.
  • Bake for 25-30 minutes or until toothpick inserted in center comes out clean.
  • Cool for 30 minutes, then chill in refrigerator for at least 2 hours.
  • Use a small scoop to scoop out the cheesecake into bowls and then garnish if desired.

2 cups cream cheese (dairy-free, if needed)
2/3 cup sugar free powdered sugar
1 cup heavy cream (** See notes)
1 teaspoon vanilla extract

Steps:

  • Use an 8-inch store-bought crust or prepare a homemade crust. Alternatively, keep this crustless. Grease an 8-inch circular pan lightly, and set aside.
  • In a small saucepan or microwave safe bowl, melt your dark chocolate and set aside.
  • Beat together the cream cheese, powdered sugar and vanilla extract, until smooth. Add the melted chocolate and continue beating, until fully combined and silky smooth.
  • In a separate bowl, whip together the heavy cream until medium peaks form. Slowly fold it into the cheesecake mixture.
  • Pour the cheesecake filling into the crust or greased pan. Once filled, place in the refrigerator for at least 6 hours, to firm up. If desired, top with ganache or frosting.

  • Remove the refrigerated ingredients from the fridge at least 2 hours before you start mixing. They must be at room temperature.
  • Place the cream cheese in a large bowl. Using a handheld mixer set to the lowest speed, lightly beat the cream cheese until smooth.
  • Place the pan in the oven, on the middle rack, above the water pan. Bake, without opening the oven door, until the edges are very light brown and slightly puffed, and the center is still sunken but not liquid, 50-60 minutes. If you shake the pan gently, the center will jiggle at this point.
  • Turn the oven off, and leave the cake in the oven, with the oven door ajar, for one hour. Then remove the cake from the oven and place the pan on a cooling rack. If the cake's edges haven't pulled away from the pan, gently run a knife around the rim of the pan to loosen the cake's edges from the pan. This helps prevent cracks from forming as the cake cools. Let the cake cool completely in the pan on the counter, about 2 more hours.
