- Whisk all ingredients in a large bowl. Let sit for 5 minutes.
- Preheat a large nonstick skillet or pan under low-medium heat and coat with butter or nonstick spray.
- Pour ¼ cup portion of pancake batter onto pan and cook for 2-3 minutes on each side until golden brown.
- Serve with sugar-free maple syrup, butter, or coconut butter.

- Whisk together the water, Besti, and maple extract in a small saucepan.
- Bring the mixture to a gentle boil. Simmer for about 5 minutes, stirring occasionally, until the sweetener dissolves.
- Pour the liquid into a medium bowl. Sprinkle half of the xanthan gum on top (don't dump, just sprinkle lightly and evenly). Whisk immediately, until no lumps remain. Repeat with the remaining xantham gum.
- Wait a few minutes to allow the syrup to thicken further. If it's still thinner than you'd like, add a little more xanthan gum, just a tiny bit (1/16 teaspoon) at a time and immediately whisk again.

- Mix the eggs, protein powder, and baking powder in a large bowl. Add the water or almond milk a little at a time until the batter is pancake batter consistency. You may not need all of the water.
- Using a 1/3 cup measure, pour out the batter into the skillet. I was able to make 3 at a time. They are ready to flip when bubble start to form on the top.
- Serve with butter, sugar free syrup, and chocolate chips.
