Made with ordinary limes, this "Key lime" pie tastes every bit as authentic as the real deal -- plus it's easier to make.

1½ cups finely crushed graham cracker crumbs, from about 12 whole graham crackers
⅓ cup packed light brown sugar
4 tablespoons unsalted butter, melted
Two 14-oz cans sweetened condensed milk
1 cup plain Greek yogurt (2% or whole milk)
1 tablespoon grated lime zest
¾ cup fresh lime juice
1 cup cold heavy cream
2 tablespoons confectioners' sugar
1 teaspoon grated lime zest
8 to 10 thin lime slices

Steps:

  • Preheat oven to 375 °F and set an oven rack in the middle position.
  • In a medium bowl, combine the graham cracker crumbs, brown sugar, and melted butter; stir with a fork first, and then your hands until the mixture is well combined. Using your fingers and the bottom of a glass or dry measuring cup, press the crumbs firmly into the bottom and up the sides of a 9 x 1.5-inch (deep-dish) pie pan. The crust should be about ¼-inch thick. (Tip: do the sides first.)
  • Bake for 10 minutes, until just slightly browned. Let the crust cool on a wire rack.
  • Lower the oven temperature to 350°F.
  • In a large bowl, whisk together the sweetened condensed milk, yogurt, lime zest, and lime juice. Pour the thick mixture into the warm graham cracker crust. Bake for 15 minutes, until the filling is almost set; it should wobble a bit. Let cool at room temperature for 30 minutes, then place in the refrigerator to chill thoroughly, about 3 hours.
  • In the bowl of an electric mixer, beat the heavy cream until soft peaks form. Add the confectioners' sugar and beat until medium peaks form. Top the pie with the whipped cream. Decorate with the lime zest and lime slices. Store the pie in the refrigerator until ready to serve. Slice the pie into wedges, wiping your knife clean between slices, and serve cold.
  • Make-Ahead Instructions: You can make the crust a day ahead of time, but the filling should be added on the day of serving, otherwise the crust will get soggy.

13 whole graham cracker sheets
or 1½ cups graham cracker crumbs
1 tablespoon granulated sugar
Kosher salt
5 tablespoons butter
melted and slightly cooled
4 large egg yolks
1 tablespoon freshly grated key lime zest
One 14-ounce can sweetened condensed milk
¾ cup fresh key lime juice
Whipped cream
for serving

Steps:

  • Preheat the oven to 350°F
  • For the crust, in the bowl of a food processor, add the graham crackers and pulse until finely ground
  • Add sugar, pinch of salt and melted butter and pulse until crumbs are moistened and hold when pressed together
  • Transfer crumb mixture to a 9-inch pie plate and press into the bottom and up the sides evenly to form the crust
  • Bake until lightly golden brown, 10 to 12 minutes
  • Remove and cool to room temperature
  • For the filling, in a medium bowl, add egg yolks and zest
  • Using an electric mixer, beat the yolks until pale yellow and fluffy, 2 to 3 minutes; the mixture should fall back on itself in a ribbon when the beaters are raised
  • With the mixer on, slowly stream in the sweetened condensed milk and beat for an additional 2 minutes until well combined
  • Add lime juice and a pinch of salt and whisk until fully incorporated
  • Transfer filling to the cooled crust and bake just until filling is set but with a slight jiggle, 13 to 15 minutes
  • Remove and cool on a wire rack to room temperature, then refrigerate for at least 4 hours
  • Serve chilled with whipped cream

Steps:

  • Beat 1 cup of the heavy cream into stiff peaks in a large bowl. In a separate bowl, whisk together the sweetened condensed milk, 2 teaspoons of the lime zest and lime juice. Fold the lime juice/sweetened condensed mixture into the whipped cream.
  • Spoon the filling into the pie crust and spread out evenly. Place in the freezer until solid and set, 3 to 4 hours.
  • Take the remaining 1 1/2 cups of whipping cream and add the confectioners' sugar. Whip until soft peaks. Spoon the whipped cream over the frozen pie. Garnish with the remaining key lime zest and some curled lime slices if desired.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Process graham crackers in a food processor; the finer the crumbs, the more the crust will stick together. Transfer to a bowl and mix with melted butter. Press and mold mixture into a 9-inch pie pan.

Steps:

This is a great recipe I found on Allrecipes.com by Ann Richardson. One of the easiest and best key lime pies I've ever made! Since I live in Costa Rica, key limes or sour cream aren't easy to come by. I substitute Natilla (a type of creme fraiche) for the sour cream and Mandarinas (a very sour mandarin-type orange) for the limes. I don't know if it's the heat and humidity here, but I have to bake it for 10-12 minutes to get the pinhole bubbles. But I've left the recipe as Ann wrote it, in case that's what it takes in more moderate weather... Sometimes, I'll add a topping made with natilla, a bit of mandarina juice, and powdered sugar. It is quite tasty! Prep time includes time to zest and juice the limes. Thanks, Ann!!!
