KHEEMA MALAI KOFTA



Kheema Malai Kofta image

This is a very tasty party non-vegetarian dish. You can use minced mutton or minced beef. Serve with pulao or with parathas or pooris.

1 pound ground beef
1 egg, beaten
4 green chile peppers, minced
⅓ cup dry bread crumbs
1 tablespoon minced fresh ginger root
2 teaspoons minced garlic
1 teaspoon garam masala
salt to taste
1 ½ cups cooking oil for deep-frying
2 tablespoons cooking oil
3 cloves garlic, minced
1 tablespoon minced fresh ginger root
1 teaspoon white sugar
1 teaspoon Kashmiri red chili powder
½ teaspoon garam masala
½ teaspoon ground fennel seed (sanuf)
salt to taste
1 (28 ounce) can tomato puree
½ cup water
1 tablespoon dried fenugreek leaves (kasoori methi)
¼ cup cream
2 tablespoons chopped fresh cilantro, for garnish

Steps:

  • Mix the ground beef, egg, green chile peppers, bread crumbs, ginger, garlic, garam masala, and salt together in a large bowl until evenly mixed. Shape the mixture into balls (koftas) about the size of limes.
  • Heat 1 1/2 cups oil in a large, deep skillet or large saucepan to 375 degrees F (190 degrees C). Fry the koftas in the hot oil until browned and crispy on all sides, 10 to 15 minutes.
  • To make the gravy, heat 2 tablespoons oil in a deep saucepan over medium heat. Fry the garlic, ginger, red chili powder, garam masala, fennel seed, and salt in the hot oil for 1 to 2 minutes; stir the pureed tomatoes into the mixture and cook until the tomatoes are deep red in color, about 10 minutes. Add the water, fenugreek leaves, and the koftas to the mixture and simmer until thoroughly reheated, another 10 minutes. Pour the cream into the mixture and cook another 2 to 3 minutes. Garnish with cilantro to serve.

This Indian masala kheema, or minced meat, can be made with any meat you prefer including lamb, chicken, pork, and beef. Serve with Indian flatbread.

3 tablespoons vegetable oil (or canola or sunflower cooking oil)
1 teaspoon cumin seeds
2 medium onions (finely chopped)
1 tablespoon garlic paste
1 tablespoon ginger paste
2 tablespoons coriander
1 tablespoon cumin
1 tablespoon garam masala
Salt (to taste)
1 pound ground beef (or use any ground meat you prefer for this recipe)
2 medium tomatoes (finely chopped)
1/2 lime (or lemon, juiced)
Garnish: fresh cilantro leaves (chopped)

Steps:

  • Gather the ingredients.
  • Heat the cooking oil in a wok or deep pan over medium heat.
  • Add the cumin seeds and fry for 1 minute or until the seeds stop spluttering.
  • Add the onions and sauté till they turn a pale golden color, about 5 minutes.
  • Add the garlic and ginger pastes and fry for 1 minute to get rid of the "raw" fragrance.
  • Add the coriander, cumin, garam masala, and salt to taste and sauté, stirring almost continuously, until the oil begins to separate from the masala. (When this happens, you know the spices are cooked to perfection.)
  • Add the meat to the masala and sauté until browned, stirring often to prevent burning- about 5 to 7 minutes.
  • Add the tomatoes , stir, and cook until they are soft.
  • Turn off the heat, add the lime or lemon juice, and stir to mix well.
  • Garnish with chopped coriander leaves and serve hot.

3 tablespoons canola oil
1 medium onion, finely diced
4 cloves garlic, minced
One 1-inch thumb fresh ginger, peeled and minced
2 teaspoons ground coriander
1 teaspoon paprika
1/2 teaspoon store-bought or Homemade Garam Masala, recipe follows
1/2 teaspoon ground cumin
1/2 teaspoon cayenne, optional
1 pound ground beef
2 medium tomatoes, chopped
Kosher salt and freshly ground black pepper
1 cup shucked fresh English peas or 1/2 cup frozen peas, thawed
2 teaspoons malt vinegar or apple cider vinegar
1/4 cup chopped fresh cilantro, plus a few extra leaves for garnish
4 chapatis or pitas, warmed
3 large cinnamon sticks (if you have the kind you get at Indian stores, it's about 3 tablespoons of cinnamon bark bits)
3 tablespoons whole cloves
1/4 cup green cardamom pods, shelled, husks discarded (about 2 tablespoons of seeds)
4 large black cardamom pods, shelled, husks discarded (about 1 tablespoon of seeds), optional

Steps:

  • In a large skillet, warm the oil over medium-high heat. Add the onions and cook until golden. Add the garlic and ginger, and saute for another minute. Stir in the coriander, paprika, Garam Masala, cumin and cayenne, if using and cook for 1 minute.
  • Add the beef, breaking up lumps with a spoon, and saute until the meat is no longer pink. Add the tomatoes, 1 cup of water and season with salt and pepper. Sprinkle in the fresh English peas. Stir well and simmer, partially covered, about 10 minutes or if using frozen peas, add them now, and cook another 5 minutes, partially covered.
  • Stir in the vinegar and chopped cilantro. Garnish with torn cilantro leaves and serve with warm chapatis or pita bread.
  • Combine the cinnamon sticks, cloves, green cardamom seeds, black cardamom seeds, if using, in a spice grinder or coffee grinder and grind until fine. Store the spice mix in an airtight container away from direct sunlight.

1 onion, chopped
1 jalapeno pepper, seeded and minced

1 (16 ounce) can diced tomatoes
1 tablespoon chili powder
1 teaspoon ground cumin

Steps:

  • Melt ghee in a large skillet over medium-high heat. Add cumin seeds; stir until fragrant and starting to crackle, about 1 minute. Stir in onion, jalapeno pepper, curry, garlic, ginger, and bay leaves. Cook, stirring occasionally, until onion starts to soften, about 5 minutes.
  • Pour tomatoes into the skillet; stir to combine, about 2 minutes. Add chili powder, cumin, coriander, turmeric, and salt; stir thoroughly. Add beef; cook, stirring with a wooden spoon to break up the meat, until no longer pink, about 5 minutes.
  • Reduce heat to low, cover, and simmer until flavors combine, about 15 minutes. Add frozen peas, cover, and simmer until heated through, about 10 minutes. For a thicker consistency, increase heat to medium and simmer curry, uncovered, until sauce reduces, about 5 minutes.

2 tablespoons ghee (vegetable or peanut oil)
2 teaspoons cumin seeds
1 large onion, finely chopped
1 tablespoon ginger-garlic paste
2 bay leaves
1 teaspoon mild curry powder (or to taste, can use medium or hot )
2 tomatoes, seeded and chopped
1 teaspoon ground coriander
1/4-1/2 teaspoon chili powder (if using Indian chili powder, it can be extremely hot)
1/4 teaspoon ground turmeric
1 pinch sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1 lb lean ground beef (or lamb)
2 1/4 cups frozen peas, straight from the freezer

Steps:

  • Melt the ghee in a flameproof casserole or large skillet with a tight fitting lid. Add the cumin seeds and cook, stirring, for 30 seconds, or until they start to crackle.
  • Stir in the onion, garlic and ginger paste, bay leaves and curry powder and continue to stir-fry until the fat separates.
  • Stir in the tomatoes and cook for 1-2 minutes. Stir in the coriander, chili powder, turmeric, sugar, salt and pepper and stir around for 30 seconds.
  • Add the beef and cook for 5 minutes or until it is no longer pink, using a wooden spoon to break up the meat. Reduce the heat and simmer, stirring occasionally, for 10 minutes.
  • Add the peas and continue simmering for an additional 10-15 minutes, until the peas are thawed and hot. If there is too much liquid left in the casserole, increase the heat and let it bubble for a few minutes until it reduces. Serve with rice, if desired.
