THE CAKE THAT DOESN'T LAST
This is a very moist, and delicious pineapple banana nut cake. I've had this recipe for about 20 years and no one ever turns it down.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
- In a large bowl, mix flour, sugar, baking soda, salt and cinnamon. Make a well in the center and pour in the eggs, oil, vanilla, pineapple, mashed banana and chopped walnuts. Mix well and pour into prepared pan.
- Bake in the preheated oven for 75 minutes, or until a toothpick inserted into the center of the cake comes out clean. Serve hot or cold.

Steps:
- 1. Preheat oven to 350 degree F. Spray a 9 inch Bundt cake pan with bakers secret or grease and flour. In a large bowl, sift together the dry ingredients. To this add the oils, banana, pineapple and juice, eggs and vanilla. Stir with a wooden spoon, only until combined. Do not beat. Batter should be thick.
- 2. Spread into prepared pan. Bake for 1 hour and 20 minutes or until pick comes out clean.
- 3. Cool on a rack and do not remove until cool. Take a think knife and go around the inside edge if pan and the inside of the outer part of pan. Place on serving platter.
- 4. Glaze: In a medium bowl, beat the cream cheese until fluffy. Beat in the sugar, vanilla and cinnamon. Add the cream until you reach desired thinness. I used exactly 2 tablespoonfuls + 1 tsp.
- 5. Spread over top of cooled cake and if thin enough it will run down over the edges of cake. Top with nuts if desired. Enjoy! It's one awesomely moist cake.

- Cake Instructions: Combine first 5 dry ingredients in large bowl.
- Measure 1 cup undrained pineapple.
- Reserve rest for icing.
- Add measured pineapple and remaining ingredients to bowl.
- Mix just until thoroughly combined.
- Turn into greased and floured 10" cake pan.
- Bake at 350 F for 50 to 70 minutes, or until cake tester comes out clean.
- Cool on rack 20 minutes, then remove from pan and cool completely.
- Icing Instructions: Drain reserved pineapple well.
- Whip margarine, icing sugar and pineapple juice together until smooth.
- Fold in pineapple.
- Spread on top and side of cake.

You have heard of mayonnaise cake? Well, this one is Miracle Whip cake. I took the recipe off their advertising several years ago. (Can't remember if it was on the label or in an ad in a magazine). It is easy to make, fruity and delicious!

- Heat the oven to 350º.
- Grease and flour a 13x9 baking pan.
- Set aside.
- In mixer bowl add eggs, sugar, Miracle Whip, oil and vanilla.
- Beat at medium speed until light and fluffy.
- Combine the dry ingredients.
- Add them alternately with the pineapple and bananas, mixing in after each addition.
- Pour into the prepared baking pan.
- Bake at 350º for 45 to 50 minutes or until cake tests done.
- I do not usually add a frosting to this cake, it is moist and good without it.
- You could frost it though, if desired, using your favorite.

- Preheat oven to 375°F.
- Melt butter in a 9-inch cast-iron skillet and sprinkle evenly with the brown sugar.
- Remove from heat.
- Drain pineapple slices over a bowl, reserving 1/2 cup juice.
- Place 1 pineapple ring in center of skillet Cut remaining pineapple rings in half and arrange around the center pineapple ring.
- In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon and the salt.
- Combine reserved juice, banana, oil, and egg and stir with a whisk.
- Add pineapple juice mixture to flour mixture, stirring until combined.
- Pour over the pineapple, into the skillet.
- Bake for 30 minutes or until wooden pick inserted in center comes out clean.
- Invert onto a wire rack and serve while still warm or at room temperature.

- Preheat oven the 350°F.
- Sift together dry ingredients.
- Add the bananas, undrained pineapple/syrup, sugar, eggs, and vanilla.
- Stir all together but do not beat.
- Pour into greased Bundt pan.
- Bake for approx 1 hour to 1 hour 15 minutes-keep checking for doneness when a wooden toothpick comes out clean.
- Let cake sit in pan fro about 10 minutes then remove and cool on a rack.
- When cake is cool, sprinkle with powdered sugar.
MY FAVORITE GLAZED BANANA CAKE
I've searched high and low for the *perfect* banana cake; well, I think I've found it! This is moist and delicious, easy to make, and the perfect way to use up the oldest, blackest bananas you can find. The glaze topping is a nice change from the typical cream cheese icing, because it's not overpowering--it really allows the full flavor of the banana cake to shine through. Use your choice of ground walnuts or ground pecans in this cake--I've tried both, and either one works fine. I hope you enjoy this recipe as much as I do !! I think it's just fantastic!! (Chris says it reminds him of Entemann's banana cake, only better! How's that for a compliment!) Number of servings depends on how big you make your slices.

- In mixing bowl, cream butter and sugar until light and fluffy.
- Add eggs, one at a time, combining well, then add vanilla.
- In seperate bowl, combine all dry ingredients (flour, salt, spices, baking powder, and baking soda).
- Add dry ingredients to creamed butter mixture, alternating with milk and bananas (you can combine milk with mashed bananas to make this step easier).
- Stir in nuts, and pour into a greased 9 x 13 inch baking dish.
- Bake at 350 degrees for 30-40 minutes, or until done (insert toothpick or caseknife into center of cake-if it is clean when removed, cake is done).
- Allow to cool in pan before glazing.
- GLAZE: Cream butter and sugar, then add vanilla and just enough milk to reach spreadable consistency-you may need as much as 4 tablespoons.
- Decorate surface of glazed cake with nuts, if desired.
- This cake refrigerates very well, making it a great"make ahead" dessert.
- For OAMC, freeze slices of unglazed cake-allow cake to thaw before glazing.
BANANA-PINEAPPLE CAKE
You can use Sunsweet Lighter Bake butter and oil replacement or make the fruit puree fat replacement or just add apple sauce in-place of the oil if you're looking for lighter fare... this is just the original recipe as given by my friend's wife Linda Tate. Being diabetic, I also use the splenda sugar replacement instead of regular granulated.

- Preheat oven to 350°F.
- In a mixing bowl, thoroughly stir together the flour, sugar, salt and baking soda.

TROPICAL PINEAPPLE BANANA CAKE

- 1. Preheat oven to 350 degrees. In your mixer cream butter and sugars on medium speed until fluffy. Add eggs, mashed banana, pineapple, vanilla and banana extracts, sour cream. Mix on low until well combined.
- 2. In a separate bowl combine flour, salt and baking soda.
- 3. Add entire flour mixture and mix on low until combined.
- 4. Grease and lightly flour 9x13 baking pan. Pour in batter and bake 30 to 35 minutes until done. Set aside to cool.
- 5. Combine glaze ingredients and mix until sugar has melted. Poke holes on top of cake and brush glaze over cake. You don't have to use the entire amount. I usually end up using about 3/4 of the glaze.
- 6. In a medium sauce pan add egg, evaporated milk, sugar, and butter. On medium heat cook and stir until thick and bubbling about 6 to 8 minutes. Turn off heat and stir in coconut and macadamia nuts until combined. Cool to room temperature.
- 7. Spread topping over cake. Refrigerate until ready to serve.

- 1. Preheat oven to 350 degree F. Grease a 9 x 13 baking pan with non stick cooking spray. Set aside
- 2. In a medium bowl; mix flour, sugar, baking soda, cinnamon and salt together by hand and set aside.
- 3. Next, in another bowl, mix bananas, crushed pineapple (drained), vegetable oil, eggs (beaten with fork), and vanilla with large spoon or whisk.
- 4. Blend in pecans if using.
- 5. Then pour in the dry ingredients and mix with spatula until well blended.
- 6. Pour batter into prepared pan, and smooth evenly. Bake 40-45 minutes until toothpicks comes out clean. Cool on wire rack.
- 7. Make frosting: Beat sour cream, confectioner's sugar and cream cheese in a large bowl until well blended. Spread the frosting over the cooled cake.
- 8. Enjoy!
