This is a deep red, spicy holiday sauce that goes with everything from turkey to toast. Some people eat it with a spoon when you're not looking! This recipe makes enough to last until spring.

2 cups apple cider
1 ½ cups white sugar
½ cup packed dark brown sugar
2 ½ teaspoons ground allspice
¾ teaspoon ground cloves
¼ teaspoon ground nutmeg
2 (12 ounce) bags fresh or frozen cranberries

Steps:

  • In a saucepan, stir together the apple cider, white sugar, brown sugar, allspice, cloves, nutmeg and cranberries. Bring to a boil, then reduce the heat to low and simmer for about 15 minutes, until most of the cranberries have popped. Continue cooking until the consistency is thick.
  • Ladle into sterile jars to within 1/2 inch of the rim, seal with lids and rings. Process in a simmering water bath for 10 to 15 minutes to seal, or just transfer to containers, cool, and refrigerate. It will last at least a week if it can escape being gobbled up!

1 (12 ounce) package fresh cranberries
1 (16 ounce) can whole cranberry sauce
1 (12 ounce) jar orange marmalade
⅓ cup diced onion
1 apple - peeled, cored, and chopped
1 green bell pepper, chopped
¾ teaspoon salt
1 jalapeno pepper, seeded and minced
1 lime, juiced
⅓ cup orange liqueur

Steps:

  • In a saucepan over medium heat, combine the fresh whole cranberries, cranberry sauce, orange marmalade, onion, apple, green bell pepper, salt, jalapeno, lime juice and liqueur.
  • Cook until cranberries crack open. Reduce heat and simmer until contents reduce by one third (approximately 3 hours). Remove from heat, cover and allow to cool overnight.

Homemade Fresh Cranberry Sauce with toasted hazelnuts is a must make for holiday dinners. It's great with Turkey or Ham anytime of the year.

1 large mild onion, chopped
1/3 cup brown sugar
5 tbsp. butter
2 tsp cider vinegar
12 oz. whole cranberries, fresh or frozen
1/2 cup raisins, golden or your choice
1/2 cup dry red wine, merlot, cabernet, syrah
1/2 tsp. apple pie spice
1/4 cup granulated sugar (or substitute maple syrup)
salt as desired, I used 1/2 tsp
1 cup hazelnuts, toasted and coarse chopped

Steps:

  • Heat oven to 350°, place hazelnuts on a small sheet pan and cook for 10 to 15 minutes. Let cool, then remove the skin by rolling with your hand. Coarsely chop and set aside.
  • Place butter, brown sugar, and chopped onion into a skillet on medium heat. Bring to a boil and cook for 4 minutes. Remove from the heat and add 2 teaspoons cider vinegar and set aside.
  • Place cranberries, raisins, red wine, and pie spice into a large sauce pan or dutch oven on medium high heat. Bring to a boil, reduce the heat to medium, and cook for 5 minutes, stirring occasionally.
  • Next, stir in the reserved sauteed onion and the additional 1/4 cup sugar, (or maple syrup), and cook for another 10 minutes. Stir occasionally.
  • Remove from the heat and add the chopped hazelnuts and stir to combine. Taste and add a small amount of salt if desired. Allow to cool before serving warm.
