LAURA'S MEATLOAF
This is one of the first meals I made when I started out cooking for my husband. I was lucky to come across this recipe for meatloaf in a church cookbook because it is one of our favorites even today. I have tried other meatloafs but none of them taste like this one...

Steps:
- Combine eggs, oatmeal, milk, worcestershire sauce, salt, garlic powder, pepper, mustard, onion. Mix with hamburger. Pat into loaf pan. Bake @350 for one hour. Combine ketchup, brown sugar and mustard. Spread over meatloaf. Bake 20-25 minutes longer.

LAURA'S MEATLOAF
Steps:
- Combine meat, egg, bread crumbs, salt, pepper, garlic powder, dried mustard, and onions into a bowl. Slowly add evaporated milk until well moistened and formed. All of the milk may not be used.
- Preheat the oven to 350 degrees F. Mix glaze together and pour over meatloaf.
- Put loaf into lightly greased pan and cook for 45 minutes to 1 hour.

- Preheat oven to 350 degrees.
- Mix meat and other ingredients.
- Shape into a firm oval loaf in shallow baking pan.
- Bake for 1 hour.
- Makes 6 servings.
- Laurie's Note: Total 11 carbs.
- This was really good- very moist.
- When I removed it from the oven the baking pan was full of fat.
- I didn't pour it off; just let the meatloaf sit and soak it back up.
- Lana's Note: We like our meatloaf a little drier, so I drained off the fat.
- I have tried this recipe both ways& both are very good.

- mix ketchup, mustard and brown sugar.
- spread on loaf.

- Preheat oven to 350 degrees. Line half sheet pan with heavy-duty foil, spray lightly with nonstick cooking spray and set aside.
- In a large skillet, saute onions in olive oil until tender and browned, about 10 minutes. Pour into a large bowl.
- To the onions, add in ground beef, bread crumbs, eggs, milk, salt, pepper, 1 cup ketchup, and Worcestershire sauce. Mix well until completely combined.
- Form into a long log on the prepared baking sheet and flatten the top. Spread with remaining ketchup and bake 45 minutes to 1 hour or until cooked thoroughly. Top meatloaf with chopped parsley and serve.

- In a sauté pan over medium heat, cook the onion and garlic in the olive oil for about 6 to 8 minutes or until soft and translucent, allow to cool completely.
- In a small bowl, put the slices of bread and pour the milk over them, let them sit for a few minutes or until the bread soaks up all the milk.
- In a large bowl, combine the beef, the milk soaked bread, cooked onion and garlic, parsley, parmiggiano, worchesteshire sauce, eggs, salt and pepper. Mix until everything is well combined but don’t over mix and compact the mixture too much otherwise your meatloaf will be tough.

- Preheat the oven to 350 degrees and line a baking sheet with parchment paper and drizzle a little olive oil to stop meatloaf from sticking.
- In a large bowl, mix together the cooled onion and garlic mixture, parsley, bread crumbs, parmiggiano, raw egg, the remaining 1 tbsp of olive oil, milk and the salami. Season with salt and pepper, add the turkey and mix until everything is combined but don’t overwork the meat.
- Dump the mixture onto the prepared baking sheet and flatten out. To get rid of any air pockets, add ½ of the provolone along the middle lengthwise and place the 4 hard boiled eggs on top. Add the remaining provolone around the eggs and carefully shape into a loaf covering the eggs making sure its all the same thickness so it cooks evenly.
