Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 9

1 (3 lb) boneless leg of lamb
3 tablespoons butter
1/2 lb cremini mushroom, sliced
1 large shallot, minced
1 tablespoon salt
1 tablespoon pepper
10 ounces chevre cheese
4 tablespoons olive oil
butchers kitchen twine

Steps:

  • Preheat oven to 350 degrees.
  • Pound lamb out to about 1 1/2 inches thick.
  • In a large saute pan heat butter over med heat and saute mushrooms until soft. Set mushrooms aside until later.
  • Season lamb liberally with salt and pepper.
  • Layer lamb with shallots, chevre and criminis.
  • Roll the lamb into a log and tie with butchers twine.
  • In a large saute pan, heat oil over med-high heat and sear lamb on all sides.
  • Place lamb on wire rack with baking sheet underneath. Roast for about an hour until internal temp is reached (140 for rare, 170 for well done, I usually go about 155 and it's nice and pink but not bloody).
  • Let the lamb rest about 10 minute to prevent juice from running and it drying out.

Categories     Lamb     Mushroom     Roast     Rosemary     Winter     Thyme     Chard     Bon Appétit

Yield Makes 12 servings

Number Of Ingredients 16

10 medium Swiss chard leaves (from 2 bunches), thick ribs removed
1 tablespoon butter
4 tablespoons olive oil
1 1/4 pounds assorted wild mushrooms (such as portobello, crimini, and stemmed shiitake), finely chopped
1/2 cup finely chopped onion
1 garlic clove, minced
1 cup fresh breadcrumbs made from day-old French bread
2 tablespoons whipping cream
1 1/2 tablespoons chopped fresh rosemary
1 1/2 tablespoons chopped fresh thyme
3/4 teaspoon salt
1/2 teaspoon ground black pepper
1 6- to 7-pound boneless leg of lamb, butterflied to 2-inch thickness, excess fat and sinew trimmed
4 ounces ground veal or lamb
1 large egg
3 garlic cloves, sliced

Steps:

  • Cook Swiss chard in large pot of boiling salted water until just tender, about 5 minutes. Drain. Squeeze chard dry, then finely chop enough to measure 1 1/2 cups. Transfer to large bowl.
  • Melt butter with 2 tablespoons oil in large nonstick skillet over medium-high heat. Add wild mushrooms, onion and 1 minced garlic clove and sauté until mushrooms are tender, about 6 minutes. Cool. Transfer to bowl with chard. Add breadcrumbs, cream, 1 tablespoon rosemary, 1 tablespoon thyme, 3/4 teaspoon salt, and 1/2 teaspoon pepper and mix to blend. (Can be prepared 1 day ahead; cover and refrigerate. Before continuing, stir mushroom stuffing in skillet over medium-high heat until just lukewarm.)
  • Preheat oven to 425°F. Open butterflied lamb like book and place cut side up on work surface. Sprinkle with salt and pepper. Mix veal and egg into mushroom stuffing. Spread evenly over lamb; press to adhere. Starting at narrow end, roll up lamb tightly, enclosing filling. Fasten ends with poultry skewers. Rub outside of lamb with remaining 2 tablespoons oil, then with remaining 1/2 tablespoon rosemary, and 1/2 tablespoon thyme. Sprinkle with salt and pepper. Tie lamb with kitchen string at 2-inch intervals to hold shape. Using small sharp knife, cut several 1-inch-deep slits in top of lamb, spacing apart; insert 1 garlic slice into each slit. Place lamb on rack in roasting pan.
  • Roast lamb to desired doneness or until instant-read thermometer inserted into thickest part of lamb registers 135°F to 140°F for medium-rare, about 1 hour 25 minutes. Remove from oven. Cover with foil and let stand 15 minutes. Remove skewers and string. Cut lamb into 1/2-inch-thick slices. Place on platter.

STUFFED LEG OF LAMB

Stuffed Leg of Lamb image

Rolled leg of lamb stuffed with spinach, goat's cheese and pine nuts. Suggested: Serve with Brussels sprouts cooked in butter and fresh garlic. A scrumptious Irish cuisine that is sure to please!

Provided by Patrick

Categories     World Cuisine Recipes     European     UK and Ireland     Irish

Time 1h25m

Yield 8

Number Of Ingredients 12

1 (5 pound) boneless leg of lamb
salt and black pepper to taste
1 (10 ounce) bag fresh spinach leaves
6 ounces goat cheese, or more if needed
2 teaspoons pine nuts
kitchen twine
1 cup all-purpose flour
1 tablespoon salt
1 tablespoon ground black pepper
1 teaspoon dried thyme
1 teaspoon fennel seeds
1 tablespoon sesame oil

Steps:

  • Remove plastic netting or twine from around the leg of lamb, if any, and open up the roast on a cutting board. Place the boned side of the roast up. With a sharp paring knife, cut away any excess fatty areas. Use a sharp knife to cut 1/2-inch deep slits in the meat about 2 inches apart, to help the meat lie flat. Cover the meat with a sturdy piece of plastic wrap or a cut-apart food storage bag, and pound the meat with a mallet or the edge of a small plate until the roast is about 3/4 inch thick everywhere, and 10 to 14 inches square.
  • Preheat an oven to 400 degrees F (200 degrees C).
  • Sprinkle the upper side of the meat with salt and pepper, and then spread spinach leaves over the top of the roast to within 1/2 inch of the edges. Break up the goat cheese and sprinkle it evenly over the spinach, then sprinkle the pine nuts over the cheese.
  • Roll the roast up into a tight cylinder, and tie the roast together with kitchen twine at 2 inch intervals. It's okay if a little stuffing protrudes from the sides of the roast.
  • In a flat dish, mix together the flour, 1 tablespoon of salt, 1 tablespoon of pepper, the thyme, and the fennel seeds, and press the tied roast firmly into the flour mixture to coat all sides.
  • Heat the sesame oil in a heavy oven-proof or cast-iron skillet over medium-high heat until the oil shimmers, and sear all sides of the roast, including the ends, to a golden brown color. Lay the roast into the skillet, place into the preheated oven, and roast to your desired degree of doneness, or an internal temperature of 145 degrees F (65 degrees C) for medium, about 40 minutes. Remove from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area 10 to 15 minutes before slicing.

LEG OF LAMB WITH PISTACHIO STUFFING AND POTATOES

Leg of Lamb with Pistachio Stuffing and Potatoes image

This Easter centerpiece looks like a fancy roulade, but it's simply a boneless leg of lamb folded over an aromatic pistachio-scallion stuffing and tied nice and neatly with butcher's twine. This cut is less expensive than a rack and more flavorful-and when roasted with potatoes, it's practically a one-pan meal.

Provided by Greg Lofts

Time 1h30m

Number Of Ingredients 14

1 bunch scallions, light-and dark-green parts only, cut into 2-inch pieces
1 bunch curly parsley, thick stems removed (2 lightly packed cups), plus more for serving
1 tablespoon finely grated lemon zest (from 2 lemons), plus 2 tablespoons fresh juice
1/2 cup salted roasted pistachios
4 tablespoons extra-virgin olive oil, divided
Kosher salt and freshly ground pepper
2 tablespoons coriander seeds
2 tablespoons cumin seeds
2 tablespoons mustard seeds
3 tablespoons minced garlic (from 1 head)
1 boneless leg of lamb (2 1/2 to 3 pounds)
2 1/2 pounds unpeeled russet or Yukon Gold potatoes, cut into 3/4-inch-thick rounds
1 tablespoon chopped fresh rosemary leaves, plus a few whole sprigs
Flaky sea salt, such as Jacobsen, for serving (optional)

Steps:

  • Combine scallions, parsley, lemon zest, pistachios, and 1 tablespoon oil in the bowl of a food processor; season with kosher salt and pepper. Pulse to a chunky paste.
  • Toast coriander, cumin, and mustard seeds in a small skillet over medium heat until fragrant, 1 to 2 minutes. Transfer to a spice grinder or a mortar and pestle; coarsely grind. Stir together ground spices and garlic.
  • Pound lamb to an even 1-inch thickness and a roughly 8-by-12-inch rectangle. Generously season both sides with kosher salt and pepper, then rub all but 2 tablespoons spice mixture on outside of lamb (side with fat); turn over and spread scallion mixture evenly over other side, leaving a 1/2-inch border.
  • Starting at one long end, fold lamb in half to enclose scallion mixture; secure with twine at approximately 2-inch intervals. Let stand at room temperature at least 30 minutes and up to 2 hours.
  • Preheat oven to 425°F. In a large saucepan, combine potatoes and enough water to cover by at least 1 inch. Bring to a boil; generously season with kosher salt. Boil until potatoes are easily pierced with the tip of a knife but still firm, 5 to 7 minutes. Drain; let cool until no longer steaming, about 10 minutes.
  • Transfer potatoes to a roasting pan. Toss with remaining 3 tablespoons oil and 2 tablespoons spice mixture, and chopped rosemary; season and spread in a single layer. Place lamb on top; scatter rosemary sprigs in pan.
  • Roast 20 minutes. Reduce temperature to 350°F and continue cooking until a thermometer inserted in thickest part of lamb near center of roast registers 140°F, 35 to 45 minutes. Transfer lamb to a cutting board; loosely cover with foil to keep warm.
  • Flip potatoes and return to oven until crisp and golden brown in places, 15 to 20 minutes more. Drizzle potatoes with lemon juice. Slice lamb and serve with potatoes, sprinkled with parsley and flaky salt.

BREAST OF LAMB STUFFED WITH MUSHROOMS

Breast of Lamb Stuffed With Mushrooms image

Provided by Craig Claiborne And Pierre Franey

Categories     dinner, main course

Time 1h10m

Yield Four to six servings

Number Of Ingredients 13

2 breasts of lamb, each about 2 1/4 pounds, with a pocket for stuffing
3 tablespoons butter
1 cup finely chopped onion
1 teaspoon finely minced garlic
1/4 pound mushrooms, finely chopped, about 1 1/2 cups
1 teaspoon chopped dried thyme
1 pound ground lamb
1/2 cup finely chopped parsley
1 egg, lightly beaten
Salt to taste, if desired
Freshly ground pepper to taste
1 tablespoon corn, peanut or vegetable oil
1 onion, peeled and cut in half or quartered

Steps:

  • Preheat oven to 450 degrees.
  • The pockets for stuffing the breasts should be as deep as possible. If you want to increase the depth, run a long knife inside the pockets and make the pockets deeper without cutting through the meat. Set aside.
  • Melt one tablespoon of the butter in a saucepan and add the chopped onion and garlic. Cook, stirring, until wilted. Add the mushrooms and cook, stirring, until they give up their liquid. Cook until the liquid evaporates. Add half of the thyme and stir.
  • Put the ground lamb in a mixing bowl and add the mushroom mixture, half of the parsley and the egg. Add salt and pepper to taste.
  • Stuff the pocket of each breast with the meat mixture, pushing it in compactly from the opening to the rear of each pocket.
  • Using a trussing or other needle, sew up the opening of each breast to hold the stuffing. Sprinkle each breast all over with salt and pepper. Place the breasts meaty side up in a baking dish and brush with oil. Scatter the halved or quartered onion around the breasts.
  • Place in the oven and bake 15 minutes. Reduce the heat to 400 degrees and continue baking 15 minutes.
  • Pour off the fat from around the meat. Sprinkle the remaining one-quarter cup of chopped parsley and the remaining one-half teaspoon thyme over the breasts. Dot with the remaining two tablespoons butter.
  • Return the breasts to the oven and bake five minutes longer. Remove string. Serve carved in four to six pieces.

ROAST LAMB STUFFED WITH APRICOT & MINT

Roast lamb stuffed with apricot & mint image

Take roast lamb to another level with a flavourful apricot and mint stuffing. Great for a Sunday roast, or as an alternative to turkey at Christmas

Provided by Aidan McGee

Categories     Dinner, Lunch, Main course

Time 1h40m

Number Of Ingredients 11

1 leg of lamb (about 2kg), boned (ask your butcher to do this for you)
100g carrot , chopped
100g leek , chopped
100g celery , chopped
½ bulb of garlic , broken into cloves and lightly crushed
½ pack rosemary
500ml lamb or chicken stock
200g ready-to-eat dried apricots , finely chopped
½ pack mint , leaves picked and finely chopped
150-200g breadcrumbs (using 200g gives you more solid stuffing, which is easier to carve; 150g is softer and more spoonable)
1 egg

Steps:

  • Lay the lamb, skin-side down, on a board - if the joint you bought is tied up, then snip the strings and unroll it. Cut several pieces of string long enough to tie around the lamb, then slide them under the joint so they're regularly spaced out. Mix the stuffing ingredients together, and season well. Spread the stuffing out along the middle of the lamb, then fold the meat over to form a roll. Tie the string so the roll stays together, but don't make it too tight or it will cut into the meat. Tie some string lengthways too, if necessary.
  • Heat oven to 170C/150C fan/gas 3. Season the lamb evenly all over. Heat a little oil in a large frying pan, then brown the lamb all over. Start with the side where the seam meets, as this will stop the lamb breaking up when you carve it.
  • Tip the veg, garlic and rosemary into a roasting tin and put the lamb on top, seam-side down. Cook the lamb until the core temperature reaches 60C on a meat thermometer - this should take around 1 hr for a 2kg leg. As you rest the lamb, the temperature will continue to rise so don't overcook it.
  • Lift the lamb out of the tin and, keeping it warm, rest for up to an hour. Put the roasting tin on the hob. Add the stock, bring to a simmer, then tip the lot into a saucepan, scraping up any bits. Add 500ml water and then simmer again until reduced by half. Pour through a fine sieve and serve with the lamb.

STUFFED LEG OF LAMB

Stuffed Leg of Lamb image

This is a wonderful way to flavour and enjoy a leg of lamb. Sometimes I cook two the old-fashioned way over fire, and of course you're welcome to do the same if you can, but I've written this recipe for roasting in a standard oven. Get some lovely local lamb from your butcher and get them to bone it, too.

Provided by Jamie Oliver

Categories     main-dish

Time 1h45m

Yield 8 to 10 servings

Number Of Ingredients 10

150 grams (5 ounces) stale rustic bread
50 mililliters (scant 1/4 cup) Prosecco
Olive oil
1 lemon
4 cloves of garlic
1 dried red chilli
1 bunch of fresh mint (30 grams [1 ounce])
4 anchovy fillets in oil, from sustainable sources
1 tablespoon baby capers in brine
1 large butterflied leg of lamb, boned but shank bone left in (2.5 kilograms [5.5 pounds])

Steps:

  • Preheat the oven to 200 degrees C (400 degrees F). Tear the bread into rough 2-centimeter (3/4-inch) chunks and place in a food processor, then pour over the Prosecco, drizzle with 1 tablespoon of oil, finely grate in the lemon zest and squeeze in the juice. Season generously with sea salt and black pepper, then leave to soak for 10 minutes. Peel the garlic and roughly chop with the chilli, pick the mint leaves, and add to the processor with the anchovies and capers. Pulse into crumbs, then taste and season to perfection, if needed.
  • Lay the lamb leg on a board, skin side down. Massage all over with a pinch of salt and pepper, then spoon over the stuffing in an even layer. Roll up the leg meat to seal the filling inside, then tie at regular intervals with six lengths of string to make sure the stuffing is secure. Place straight on to the bars of the oven, with a tray underneath to catch the juices. Roast for 1 hour 10 minutes, or until the lamb is golden, yet still blushing and pink in the middle (cook for a further 10 to 15 minutes if you prefer your lamb well done). Rest for 5 minutes, while you simmer the tray of drippings on a medium heat with a little water, stirring to pick up any nice sticky bits. Slice the lamb and spoon over the tray juices. Beautiful served with roast potatoes and seasonal veg--or I love it stuffed into a sandwich.
