BASIL-CUCUMBER MOJITO
I love mojitos, but sometimes I am just not feeling the mint. Luckily, this is a great alternative that brings together the complex aromatic flavor of basil and the cool, refreshing splash of a cucumber.

STRAWBERRY BASIL MOJITO
It's cocktail time and I've got a Strawberry Basil Mojito with your name on it! Fresh strawberries and a gentle basil flavor make this my favorite mojitos recipe. It's lightly sweetened and beautifully fragrant and perfect for a hot summer's day. It's also super easy to make a big batch for easy summer entertaining.

- In a mortar-pestle or in a pitcher take 1/8 cup basil leaves, 2 slices of lemon, 1 to 2 tbsp sugar, a pinch of salt. 2 tbsp sugar makes the drink sweet. If you want more predominant tangy taste, then add 1 tbsp sugar. To make the drink diabetic friendly, add a sugar substitute like stevia. You can also use honey instead of sugar.

- Whirl 2 basil leaves and 1/4 cup sugar in a food processor until well blended; transfer to a plate and set aside.
- Put 6 to 8 remaining basil leaves in a large cocktail shaker with a few ice cubes, the remaining 4 tsp. sugar, and lime juice. Muddle the mixture with the back of a thick wooden spoon, keeping your hand over the top to prevent spilling, until basil has broken up.
- Add rum and a few more ice cubes to shaker, cover, and shake to blend. Rub a lime wedge along rim of 2 lowball glasses and dip in basil sugar (reserve remaining sugar for more cocktails). Add a few ice cubes to each glass. Remove top from shaker (do not strain), and divide mixture between glasses. Top off each with club soda and stir. Garnish with a lime wedge.

- Begin by gathering your ingredients. If you’ve never tried a Meyer lemon, it’s a little different than a regular lemon. It’s almost like a regular lemon + an orange. I made my simple syrup by quickly simmering one part turbinado sugar and one part water over a low heat and allowing it to cool.
- Pour 1/2 ounce of simple syrup into the bottom of each glass along with two Meyer lemon wedges and 5 basil leaves. Muddle these together until the basil began to break down, the lemon wedges were squeezed, and the simple syrup combined with the lemon and basil.
- To finish this delicious Meyer Lemon Basil Mojito, top each glass with either lemon-lime soda to enhance the citrus flavor or club soda and serve!

- Spread the sugar and salt in a plate and dip the glass rim in it so that the rim gets coated with sugar granules.
- Place the lemon juice, tulsi leaves, the remaining sugar and salt mix in the plate in the serving glass and muddle gently to release the flavors from the lemon and tulsi leaves. I used my pestle for this purpose.
