- In a saucepan, combine water or chicken broth, lemon (or lime) juice, rind, garlic salt and bring to boil.
- Reduce heat and stir in rice. Cover and simmer for about 30 minutes or until all liquid has been absorbed.
- While rice is still hot and just before serving, add chopped fresh cilantro and toss gently.
- Serve with fish, seafood or any meat.

- In a medium saucepan, add the rice, bay leaves, and water and bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 18 minutes.
- Remove the lid, fluff the rice with a fork, and cover. Let rest and absorb any steam for 10 minutes.
- Remove the bay leaves, then add the lime juice, lemon juice, salt, and cilantro. Stir to combine.
- Enjoy!

Steps:
- Marinate the chicken in a mixture of 1/2 cup lemon juice and 1/2 of the chopped cilantro for 1 hour.
- Mix the rest of the chopped cilantro with the remaining lemon juice. Add the lemon pepper seasoning and 1 tablespoon olive oil. Set aside.
- Spread 1 tablespoon olive oil into the bottom of a 9 X 12 inch glass baking pan. Layer the potatoes and the chicken in the dish. Pour lemon pepper mixture over. Cover.
- Bake at 350 degrees F (175 degrees C) for 30 minutes. Uncover, and bake for 10 minutes more.

- Rinse rice thoroughly with cold water. Drain. Heat o.o. in saucepan. Add rice and stir till coated. Add stock, lemon juice, cilantro and salt. Bring to a boil. Reduce heat to lowest possible. Cook for 20 minutes. Let stand for 5 minutes before uncovering.

- Cook Rice - First thing, I seldom use rice cooker to cook rice. I prefer to boil rice with 1 cup extra water (it just takes10-12 minutes, unattended). Then, I drain the extra water to get rid of some rice starch (hence a little less carbs). So, cook rice with 3 cups of water on medium heat for 8-12 minutes until just done, not mushy.
