Lemony Cucumbers image

This is my Grandmother's favorite cucumber recipe.

2 cucumbers, sliced
¼ cup white wine vinegar
2 tablespoons white sugar
2 teaspoons celery seed
⅛ teaspoon ground black pepper
¾ teaspoon salt
2 tablespoons chopped onion
1 tablespoon lemon juice

Steps:

  • In a mixing bowl, combine the cucumbers, vinegar, sugar, celery seed, pepper, salt, chopped onion and lemon juice. Toss, cover and chill for 4 hours.

A change from the usual vinegar cucumbers. A great combination of sweet and tart. Cucumbers will "juice" as they chill.

2 medium cucumbers, peeled and thinly sliced
1/2 small white onions or 1/2 small yellow onion, thinly sliced
1/4 cup vinegar
2 tablespoons sugar
1 tablespoon bottled lemon juice (realemon)
1 teaspoon celery seed
3/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Place cucumbers and onion in a bowl.
  • Combine rest of the ingredients in a measuring cup.
  • Stir well.
  • Pour over cucumbers and onions.
  • Chill for 4 hours.

3 10-ounce bottles club soda
1 cup gin
1/4 cup bottled lemon juice
12 thin slices lemon
12 thin slices cucumber
12 sprigs fresh mint, for garnish (optional)

Steps:

  • In a large pitcher, combine the club soda, gin and lemon juice.
  • Place a lemon slice and a cucumber slice in each of 12 glasses. Add 1 cup crushed ice to each glass. Pour the gin mixture into the glasses and garnish each with a mint sprig, if desired.

I got this recipe when I was 9 years old from a friend. It's a nice, healthy, refreshing snack especially for summer. I also want to add that this is great if you're having friends over or for a barbeque. I made this for some friends and it was a big hit. You can use more cucumbers and lemons if you're having more people over. 1 lemon for every 2 cucumbers.

2 cucumbers
1 lemon

Steps:

  • 1). Peel and slice cucumbers and place into a bowl.
  • 2). Cut lemon in half and squeeze both halves over cucumbers. I like to take my thumb and mash the inside of the lemon to get as much juice from the lemon as I can.Try not to get any lemon seeds in it.
  • 3). Sprinkle as much (or as little) salt as you prefer.
  • 4). Mix them either with your fingers or a spoon.
  • 5). Chill in fridge for an hour.
  • 6). After they have chilled and are ready to be served, mix them once again.

3 large eggs
1 cup sugar
1/2 cup lemon juice (about 2 lemons)
1/4 cup butter, cubed
1 tablespoon grated lemon zest

Steps:

  • In a small heavy saucepan over medium heat, whisk eggs, sugar and lemon juice until blended. Add butter and lemon zest; cook, whisking constantly, until mixture is thickened and coats the back of a metal spoon. Transfer to a small bowl; cool 10 minutes. Refrigerate, covered, until cold.

  • In food processor: combine basil leaves, parmesan, nuts, garlic, optional lemon juice, salt, and black pepper. While blending, gradually add the olive oil until the pesto reaches your desired consistency. Taste and adjust seasoning to personal preference and blend again if needed.
  • If using traditional mortar and pestle: add basil leaves a few at a time with the garlic. Crush and grind the all the leaves and garlic until well combined. Add the nuts and cheese and continue combining into the basil mixture until a paste forms. Add the optional lemon juice, olive oil, salt and pepper. Stir and slightly grind until the everything is incorporated into the pesto.
  • Taste the pesto and add additional salt/pepper to taste. If you want some spice, add a pinch of red chili flakes.
