The vibrant colors make this dish a pretty first course or light dessert. I've always been a fan of savory hollandaise, so I created this version for fruit. -Patricia Harmon, Baden, Pennsylvania.

1 can (8 ounces) unsweetened pineapple chunks, drained
1 medium nectarine, chopped
1 medium kiwifruit, peeled and chopped
1/2 cup halved fresh strawberries
2 tablespoons fresh blueberries
1 tablespoon lime juice
2 teaspoons honey
1/8 teaspoon ground nutmeg
DRESSING:
2 tablespoons mayonnaise
2 tablespoons lemon yogurt
1 tablespoon honey
1 teaspoon lemon juice
1 teaspoon orange juice
1/2 teaspoon grated lemon zest
1/2 teaspoon grated orange zest

Steps:

  • In a small bowl, combine the first five ingredients. Whisk the lime juice, honey and nutmeg; pour over fruit. Toss to coat., In another bowl, whisk the dressing ingredients; drizzle over salad.

When I was a teenager, I did all the cooking for my family of 10. I came up with this recipe when I was partway through making a different salad and discovered I didn't have all the ingredients.

1/4 cup sugar
1/4 cup lemon juice
2 teaspoons grated lemon zest
1-1/2 teaspoons poppy seeds
4 medium apples, diced
1 can (11 ounces) mandarin oranges, drained
1 large carrot, grated
1/2 cup raisins
Lettuce leaves, optional

Steps:

  • For dressing, combine the sugar, lemon juice, zest and poppy seeds in a small saucepan. Cook over medium heat for 5-6 minutes or until sugar is dissolved, stirring occasionally. Remove from the heat; cool., In a large bowl, combine the apples, oranges, carrot and raisins. Add dressing and toss to coat. Cover and refrigerate for 4 hours. Serve in a lettuce-lined bowl if desired.

1 cup raspberry
1 cup blackberry, halved lengthwise

1 cup strawberry, stemmed and sliced lengthwise
½ cup Simple Truth™ Organic Mini Seedless Cucumbers, sliced into half-moons
¼ cup Simple Truth™ Organic Lemon Turmeric Dressing
3 tablespoons Simple Truth™ Organic Mint leaves

Steps:

  • Peel the kiwis, then, using a small knife, carefully cut small wedges lengthwise every ½ inch around each kiwi. Cut crosswise into ¼-inch-thick pieces to make flower-cut kiwi slices. Discard the scrap wedges.
  • Using a sharp knife, carefully slice off the top and bottom of the orange. Set the orange on a flat side and, working from top to bottom, slice the skin away from the flesh and discard, making sure to remove any remaining white pith. Cut between the membranes to release the orange segments, discarding the membrane.
  • Add the kiwi flowers and orange segments to a large bowl with the raspberries, blackberries, blueberries, grapes, strawberries, and cucumbers. Drizzle the Simple Truth™ Organic Lemon Turmeric Dressing over the fruit and gently toss to coat.
  • Garnish with the mint.
  • Enjoy!

The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

⅔ cup fresh orange juice
⅓ cup fresh lemon juice
⅓ cup packed brown sugar
½ teaspoon grated orange zest
½ teaspoon grated lemon zest
1 teaspoon vanilla extract
2 cups cubed fresh pineapple
2 cups strawberries, hulled and sliced
3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned
1 cup seedless grapes
2 cups blueberries

Steps:

  • Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  • Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

Turmeric has become quite the "buzz" word, in the last couple of years, and I found a turmeric rotini. It has a nice yellow color, and very mild, if any turmeric flavor. You can start fresh with this salad, or use small amounts of leftover vegetables, if you like.

1 (10 ounce) package turmeric rotini
3 tablespoons extra-virgin olive oil, divided
½ cup chopped green bell pepper
½ cup sliced carrot
¼ cup chopped red onion
1 cup fresh broccoli florets
1 cup fresh cauliflower florets
1 pinch seasoned salt, or to taste
⅔ cup mayonnaise
3 tablespoons balsamic vinegar
1 sprig fresh basil

Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain and transfer to a large bowl. Add 2 tablespoons olive oil, toss, and set aside.
  • Heat remaining olive oil in a nonstick skillet over medium heat until it shimmers. Add bell pepper, carrot, onion, broccoli, cauliflower, and seasoned salt. Cook, stirring, until broccoli turns a deep bright green and onion is beginning to turn translucent, about 3 minutes.
  • Toss vegetables with pasta and refrigerate salad for 30 minutes to allow flavors to meld and cool.
  • Remove cooled salad from refrigerator and toss with mayonnaise and balsamic vinegar. Season with more seasoned salt if needed. Garnish with fresh basil.

DD#2 needed a quick, light "something" to take to a picnic an hour after she got home from work. I remembered reading a salad recipe with a package of pudding added so I opened the cupboard and started draining and dumping. She came home with an empty bowl and requested I make more for home. That's a good sign I think! (Cooking time is for refrigeration)

1 (3 1/2 ounce) package instant lemon pudding
1 (10 ounce) bottle maraschino cherries, halved,drained
1 (8 ounce) container Cool Whip, thawed
1 (21 ounce) can chunk pineapple, do not drain
1 (12 ounce) can mandarin oranges, drained
2 cups mini marshmallows

Steps:

  • In serving bowl, dump can of undrained pineapple.
  • Pour pudding mix over and mix into juices.
  • Set aside for 5 minutes to slightly set.
  • Meanwhile drain oranges and cherries, patting dry if necessary.
  • Mix into pineapple mixture along with marshmallows.
  • Gently fold in cool whip.
  • Refrigerate at least 30 minutes.
