2 cups all purpose flour
1 tablespoon baking powder
¼ teaspoon salt
¼ teaspoon ground cinnamon
1/4 teaspoon nutmeg
2 tablespoons sugar
1 egg, separated
2 overripe bananas, mashed
1 ½ cups milk
1 tablespoon vinegar

Steps:

  • Preheat waffle iron according to manufacturer's instructions.
  • Mix vinegar into milk and set aside.
  • In a medium bowl, beat egg yolk, bananas and sugar.
  • Add dry ingredients and continue to mix. Pour in milk, mix.
  • In a small bowl, beat the egg white to stiff peaks.
  • Fold in the egg whites.
  • Grease waffle iron according to manufacturer's instructions.
  • Scoop batter into waffle iron (approximately ¾ cup batter depending on your waffle iron).
  • Cook until the waffle iron stops steaming or the waffle reaches your desired color.
  • Serve with assorted nuts, chocolate chips, syrup, honey, and/or sliced bananas.

1 1/2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
3/4 cup milk (, buttermilk, 1% or 2%)
2 tablespoons brown sugar
1 tsp vanilla extract
2 large eggs
3 tablespoons melted butter (, cooled)
3/4 cup mashed bananas (, about 2 medium bananas)

Steps:

  • Heat the waffle iron according to manufacturers instructions.
  • In a large bowl whisk together the flour, baking powder, baking soda, cinnamon and salt.
  • In a medium bowl whisk together the milk, brown sugar, vanilla extract, eggs and melted butter. Stir in the mashed bananas.
  • Gently fold the wet ingredients into the flour mixture, being careful not to over mix.
  • Lightly grease the waffle maker, and pour about 1/4 cup of batter into each waffle cavity. (Or follow waffle iron instructions)
  • Cook for 4-6 minutes or until the edges are golden.

1/4 cup cornstarch
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 Tablespoons packed brown sugar
2 large eggs
2 Tablespoons oil
3/4 cup milk
1 teaspoon vanilla extract
1 1/2 cups mashed banana (3 medium)

Steps:

  • Stir together the flour, salt, baking powder, baking soda, cornstarch, cinnamon, nutmeg, and brown sugar in a large bowl. Create a "hole" in the center.
  • Add the eggs, oil, milk, vanilla, and bananas to the center of the dry ingredients. Mix just until combined.
  • Let the batter rest for 10 minutes while the waffle iron preheats.
  • Place spoonfuls of batter on the greased heated iron and cook 3-5 minutes depending on your waffle iron. The Dash waffle maker takes about 4 minutes per waffle.
  • Use a fork to gently remove the waffle and place on a wire rack while you cook more waffles.
  • Serve hot with your favorite toppings.

Number Of Ingredients 15

2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 large eggs, separated
2 cups milk
1/4 cup canola oil
CINNAMON CREAM SYRUP:
1 cup sugar
1/2 cup light corn syrup
1/4 cup water
1 can (5 ounces) evaporated milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Mixed fresh berries, optional

Steps:

  • In a bowl, combine the flour, sugar, baking powder and salt. Combine the egg yolks, milk and oil; stir into dry ingredients just until moistened. In a small bowl, beat egg whites until stiff peaks form; fold into batter. Bake in a preheated waffle iron according to manufacturer's directions., Meanwhile, for syrup, combine sugar, corn syrup and water in a saucepan. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the milk, vanilla and cinnamon. Serve with waffles. If desired, serve with fresh berries.Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in a resealable plastic freezer bag.
