GARLIC SPAGHETTI SAUCE

Garlic Spaghetti Sauce image

I adopted this recipe from Zaar some time ago and finally got round to trying it myself. It's quick and simple and full of fresh flavours. I prefer using basil but the original recipe stated parsley so I left it here for you to choose. Try adding some sliced black olives, fried or marinated mushrooms or sun blush tomatoes at the end.

WHITE SAUCE FOR PASTA

White Sauce for Pasta image

My husband lived in Italy for 3 years, so he's really picky about his Italian cuisine! I needed a great meal that was super-quick one night for his dinner; I had spicy battered shrimp on hand that I wanted to use and a couple choices of dried pasta. This sauce sounded perfect to tie it all together! Served over tortiglioni pasta with salad and toasted Italian bread. Just like I spent all day on dinner. It is really hard to mess-up this kind of white sauce. In my opinion, it was very much like an Alfredo sauce! Of course there is very little difference in the two sauces.

PASTA WITH CHICKPEA SAUCE

Pasta with Chickpea Sauce image

Onions, carrots, and garlic cook in olive oil until buttery soft, then get blended with chickpeas and water to form a deeply savory puree that coats pasta beautifully. It's a satisfying dish that just happens to be vegan. Try to let the blender run for a minute or two when pureeing the ingredients; the smoother the sauce, the better the dish. A flourish of fresh herbs at the end brightens and freshens the dish; you can use all parsley or all basil if you don't have both on hand.

Provided by Ann Taylor Pittman

Yield Serves 4 (serving size: about 1 cup)

Number Of Ingredients 11

3 tablespoons olive oil
1 cup chopped onion
1 cup chopped carrot
4 garlic cloves, minced
1 cup drained canned unsalted chickpeas
3/4 cup water
1 teaspoon kosher salt
1/2 teaspoon black pepper
4 cups hot cooked whole-grain penne (8 oz. uncooked)
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil

Steps:

  • Heat olive oil in a skillet over medium.
  • Add onion, carrot, and minced garlic; cook 8 minutes.
  • Place onion mixture, chickpeas, water, salt, and pepper in a blender; process until smooth.
  • Toss with hot cooked penne; sprinkle with parsley and basil.

  • Meanwhile, melt 1 Tablespoon butter in a large skillet over medium-high heat then add garlic and saute until golden brown. Add wine then simmer until reduced by half. Add chicken broth, lemon juice, and capers then turn heat up to high and simmer until sauce is reduced by half. Add remaining Tablespoon butter then taste and add salt if necessary.
  • Remove skillet from heat then add cooked pasta and stir to combine. Let sit for 3-4 minutes to let sauce adhere to pasta - it will thicken up as the pasta cools. Serve with fresh chopped herbs and a crack of black pepper for garnish, if desired.

  • Rich No-Cream Wild Mushroom Pasta Sauce. – This has been a popular recipe here for a long time. It’s delicious without being too rich or heavy; white wine and broth are thickened with a little flour instead of cream.
  • Lemon Pepper Pasta with Capers. – Sometimes the best recipes are the simplest. This one has just a few ingredients, but it leans heavily on tasty little capers for a big burst of flavor.
  • Velvety Broccoli and Feta Pasta. – This recipe is like several others on this list: it uses steamed vegetables instead of meat or dairy to make up the bulk of the sauce.
  • Roasted Garlic, Olive and Tomato Pasta Salad. – This is a pasta salad recipe, but it works just as well with hot pasta. The principle is simple: Use mashed roasted garlic as a sauce instead of cream or butter.
  • Basic Tomato Sauce (with Optional Zing!) – Basic tomato sauce, made with canned tomatoes, is one of the easiest, prettiest, most encouraging things you can eat in the winter!
  • Spinach Pesto Pasta with Fresh Peas and Mushrooms. – Another veggie pesto recipe. You can use frozen peas (very good!).
  • Pasta with Butternut Squash, Sage, and Pine Nuts. – This meat-free pasta has a rich flavor through the pan-frying process, and we love how creamy the squash is, mashed through the pasta.
  • Spring Greens Pesto. – It’s not spring, of course, but what about trying bitter greens here instead? Turnip tops, beet greens, steamed collards, kale, Swiss chard — all of these would give a unique flavor to your pasta dressing.
