This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

Ingredients

1 cup boiling water
1 (6 ounce) package lime flavored Jell-O® mix
1 (20 ounce) can crushed pineapple, drained with juice reserved
1 (8 ounce) package cream cheese, softened
2 cups heavy cream
1 cup chopped pecans

Steps:

In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

1/4 cup lime juice
2 garlic cloves
1/4 teaspoon Dijon mustard
1 teaspoon honey
1/4 teaspoon salt
Dash pepper
1/4 cup olive oil

Steps:

Place first 6 ingredients in blender. While processing, gradually add oil in a steady stream.

SIMPLE LIME SALAD DRESSING

We recently stayed in a villa in Bali. The cook made this dressing a couple of times to go over a salad of mixed greens tomatoes and cucumber. She included mint in the salad-not the dressing. Her recipe was actually just equal quantities of lime juice, white (not palm) sugar, and olive oil, garlic and slat and pepper, so it's super easy to make enough for 1 or 12.

2 tablespoons lime juice
2 tablespoons sugar
2 tablespoons olive oil
1 garlic clove, crushed
salt and pepper

Steps:

Mix all together until the sugar has dissolved then serve over salad ingredients of your choice.

Ingredients

1 (6 ounce) package lime Jell-O gelatin
1 1/2 cups hot water
cold water
8 ounces cream cheese, softened
12 ounces Cool Whip
20 ounces crushed pineapple, drained but save juice
1 cup chopped walnuts

Steps:

Combine jello and hot water; stir until jello is dissolved.
Add enough cold water to pineapple juice to equal ½ cup and stir into the jello. Chill until partially set; then whip with a mixer. Set aside.
In another bowl, beat the cream cheese. Add pineapple, beating briefly.
Fold in Cool whip and nuts - then combine with the jello mixture and chill until firm.

Ingredients

2 cups boiling water
1 package (6 ounces) lime gelatin
1 cup cold water
1 tablespoon vinegar
Dash salt
Dash white pepper, optional
3/4 cup mayonnaise
1/2 cup shredded carrots
1/2 cup finely chopped peeled cucumber
1/2 cup finely chopped celery
1/2 cup finely chopped green pepper
2 tablespoons finely chopped onion

Steps:

In a bowl, pour boiling water over gelatin. Stir to dissolve. Add cold water, vinegar, salt, and pepper if desired. Pour 1 cup of mixture into 6-cup mold; set aside. Chill remaining gelatin for 30 minutes, then add mayonnaise and blend with a rotary beater until smooth. Chill until almost set. Meanwhile, chill gelatin in mold until almost set. Turn mayonnaise/gelatin mixture into a bowl and whip until fluffy. Fold in vegetables. Spoon into mold. Chill until firm. Unmold to serve.

1 (6 ounce) package lime flavored Jell-O® mix
¾ cup boiling water
¼ teaspoon salt
¾ cup cold water
1 cup shredded cabbage
½ cup grated carrots
½ cup chopped walnuts

Steps:

Dissolve gelatin mix in boiling water. Stir in salt. Stir in cold water. Chill until slightly thickened.
Fold cabbage, carrots, and nuts into thickened gelatin. Pour mixture into an 8 inch mold that has been sprayed with a non-stick spray. Chill until firm.
Set mold in a sink of hot water for a few seconds when ready to unmold. Place serving plate on top of mold, and turn over. Lift off mold.

3 ounces vanilla pudding mix
5 ounces lime jello
4 cups of water
1/2 of a 20 ounce can crushed pineapple, drained
1/2 cup coconut flakes
1 8 ounce container Cool Whip

Steps:

Bring 4 cups of water to a boil.
Remove from heat and quickly mix in the jello and pudding mix.
Pour into a glass dish and add pineapple evenly throughout. I have used various sizes of glass dishes, they all work.
Cover and place in the fridge for at least four hours.
Remove from fridge and move the jello to a large bowl - mash around until it's broken up.
Mix in Cool Whip and coconut flakes.
Keep refrigerated until ready to serve.

4 ounces mandarin oranges (1 can. drained)
3 kiwi ((peeled and sliced into thick half moons))
1 cup red grapes (halved)
1 cup strawberries (quartered)
1 lime (zest)
1 teaspoon poppy seeds
2 Tablespoons honey

Steps:

Combine the fruit in a large serving bowl.
Add the lime zest and poppy seeds, and gently toss.
Drizzle the honey over the fruit and gently mix until the fruit is evenly coated with the honey. Serve immediately
This fruit salad is best served right away (or at least within an hour of making).
