CREAMY POTATO CASSEROLE
This is a wonderful potato casserole for potlucks and parties.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a small pot, heat the soup, butter or margarine and sour cream over low heat.
- Combine potatoes, green onion and 1 cup cheese into a large mixing bowl. Mix in the heated soup mixture. Season with salt and pepper. Pour into a 9x13 inch dish. Sprinkle one cup of cheese over the top of the casserole.
- Bake 30 to 45 minutes. Serve warm.

POTATO CASSEROLE
Taken from Tasteful Traditions Cookbook by Women for Abilene Christian University. These are "Linda's Potatoes" and they are delicious with steak and prime rib. I have made this dish dozens of times and it always comes out perfect. This dish is great for holidays and dinner parties because they are very rich tasting and even picky kids love them. This can be made ahead of time, chilled and then cooked before serving.

Steps:
- Mash potatoes with butter or margarine, salt, pepper, onion and milk.
- Add sour cream.
- Mix in 1/2 of the cheese.
- Pour into a large casserole dish.
- Sprinkle remaining cheese on top.
- Bake 15 minutes at 350 degrees Fahrenheit.
- Top with crumbled bacon.
- If prepared ahead of time and chilled, bake 45 minutes at 350 degrees Fahrenheit or until bubbly.

- Boil potatoes in saucepan in water to cover until tender. Drain water; add all ingredients. Mix together with mixer. Pour into greased casserole. Sprinkle grated Cheddar cheese on top and cover. Bake 350° for 30 minutes, covered.

- Preheat oven to 350.
- Place a layer of potatoes in the bottom of a greased 1 1/2 quart casserole.
- Beat the cottage cheese and melted butter together, and spread a layer over the potatoes.
- Combine flour, salt, chives, pepper, and thyme, and sprinkle some over the cottage cheese.
- Repeat layers, ending with potatoes.
- Pour milk over all.
- Combine crumbs and Parmesan, and sprinkle over casserole.
- Dot with butter, and bake for 30 minutes.
