MEXICAN CHORIZO MEATLOAF

Steps:
- For the meatloaf: Preheat the oven to 375 degrees F.
- In a heavy skillet, add the oil and heat over medium-high heat. Add the onion, carrot, celery and garlic and cook, stirring often, until the vegetables are soft, about 8 minutes. Set aside until cool enough to handle.
- In a large bowl, combine the sauteed vegetables, ground beef, chorizo and green chiles.
- In a medium bowl, combine the salt, cumin, black pepper, cayenne and eggs. Add the ketchup and sour cream. Mix well with a fork, then pour it on top of the meat mixture. Sprinkle with the breadcrumbs and mix thoroughly with clean hands.
- Put the mixture into a loaf pan. Bake until an instant-read thermometer inserted into the center of the meatloaf registers 160 degrees F, 40 to 45 minutes. Remove from the oven and carefully pour off any accumulated pan juices.
- For the salsa-glaze: Heat the oil in a heavy skillet over medium heat. Add the garlic and onion and saute until softened, 3 to 4 minutes. Stir in the tomato puree, sugar, mustard, green chiles and chipotle chile. Bring the mixture to a simmer over medium-low heat. Cook until slightly thickened, 5 to 6 minutes. Season with salt to taste.
- Slice the meatloaf and arrange on a platter. Spoon the salsa-glaze over the meatloaf, garnish with fresh cilantro if desired and serve.

- Put the mixture into a 9 by 13-inch loaf-pan. Bake until an instant-read thermometer inserted into the center of the meatloaf registers 160 degrees F, about 40 to 45 minutes. Remove from the oven and carefully pour off any accumulated pan juices.
- Meanwhile, heat a heavy skillet over high heat. Add the whole tomatoes, onion, garlic cloves, and serrano chiles. Cook, turning frequently, until lightly charred on all sides. Peel the garlic cloves. Add all the charred ingredients to a blender. Pulse until chunky, then pour into a small skillet. Stir in the sugar, chipotle chile and mustard. Bring the mixture to a boil over medium heat. Cook until slightly thickened, about 4 to 5 minutes. Season with salt, to taste.
- Slice the meatloaf and arrange on a platter. Spoon the salsa-glaze over the meatloaf and serve.

- In a medium skillet, melt butter over medium heat. Add garlic, onion, and green pepper and saute until onions are soft.
- Preheat oven to 375 degrees F (190 degrees C).
- In a large mixing bowl, place ground beef, crushed crackers, Cheddar cheese, taco seasoning, and sauteed onion and green pepper. Mix thoroughly.
- Press beef mixture into a 9x5 inch loaf pan. Bake in a preheated oven for 45 to 55 minutes or until done. Check with a meat thermometer for doneness. Internal temperature should read 165 degrees F (74 degrees C).

- Preheat oven to 350 degrees F (175 degrees C). Line a 9x13 inch baking pan with aluminum foil.
- In a large bowl, mix the beef, onion, green bell pepper, celery, eggs, soy sauce, and ketchup. Season with basil, parsley, oregano, garlic powder, and 2 teaspoons pepper. Mix in 1/2 cup oats. Gradually mix in remaining oats 1/4 cup at a time until the beef mixture is firm but not stiff. Transfer to the prepared baking pan, and form into a loaf shape.
- In a small bowl, mix the brown sugar, ketchup, brown mustard, mesquite smoke flavoring, 1/2 teaspoon pepper, and paprika. Drizzle evenly over the meat loaf.
- Bake meat loaf 1 hour in the preheated oven, or to a minimum temperature of 160 degrees F (72 degrees F).

I had bought the ingredients the day before, thinking I had meatloaf seasoning at home. When I started to make the meatloaf, I did not have the seasoning pack. I just threw a few things from the pantry together and called it Tex-Mex Meatloaf. It was a huge hit, several wanted the recipe and I have been requested to bring it several times since. SWEET AND SPICY MEATLOAF
I first had this at a church supper. It was delicious and asked for the recipe. I was amazed to see that there were not many ingredients in it. I now make this one and alternate it with my regular one Recipe #102545. The Sweet & Spicy Meatloaf has only a few ingredients and is delicious, and my regular one has more in it, but is delicious too. This has a nice sauce on top. I always thought that if there were more ingredients in a meatloaf, it would taste better, but not necessarily so. This is very,very tasty!

- Mix the hamburg, bread crumbs, milk, onion, salt, and pepper together.
- Make into a loaf and place in a 9x13 pan.
- Set the oven for 350 degrees.
- SAUCE: Mix the catsup, brown sugar, and dry mustard together.
- Put half of the sauce on the meatloaf and bake for 20 minutes.
- Get rid of any grease.
- Put the rest of the sauce on and bake for another 25 minutes (total of 45 minutes).
- Let sit for about 10 minutes.

- Preheat oven to 300.
- Combine the first 8 ingredients together. Mix well.
- Add ground beef, and mix well.
- In a 9x13" baking pan, shape meat into a loaf about 1" high x 8" long x 6" wide.
- Top with the 6 T. Mexican cheese down the middle of the loaf.
- Bring up both sides of the meatloaf to cover the cheese, and then press down to cover cheese. Carefully reshape into a loaf again.
- Put in the oven, and bake for 40-45 minutes.
- Meanwhile, combine ketchup, reserved 2 tablespoons jalepanos, reserved onions, and garlic powder in a small plastic dish.
- Put in microwave on high heat for 2 minutes, or until thoroughly heated.
- Spoon sauce over cooked loaves, and sprinkle with the 3/4 cup cheese.
- Put pan back into the oven, and cook about 15 more minutes, or until cheese is melted down the sides of the meatloaf.
- When done, take out of oven, slice into 2" slices, and serve.
