6 large eggs (or 4 duck eggs for fluffier pancakes)
6 ounces cream cheese
15 drops vanilla stevia drops (optional)
1 tablespoon whole psyllium husks (whole)

Steps:

  • Place all ingredients in a small blender or food processor and blend until smooth.
  • Pour about 3 tablespoons batter onto hot griddle or large frying pan for each pancake.
  • When top is covered in bubbles and edges appear dry, flip pancakes. Continue to cook until bottom side is browned.
  • Remove from griddle. Serve warm with butter and low carb maple flavored syrup if desired.

½ tbsp butter
2 eggs
3/5 cup cream cheese ((3/5 cup = 2.5oz))

Steps:

  • Add some butter to a pan and stick it on medium heat.
  • Throw the cream cheese and eggs into a bowl and mix with a fork until creamy. If you're planning to, now is the time to add some extras. But be careful! The batter is quite runny, so I wouldn't add things like nuts.
  • Alternatively you can use a, but remember to let the batter sit for a minute or two! It'll cook better then.
  • Off it goes into the pan. I usually make just one big pancake, but two medium-sized ones would also work perfectly fine.

2 oz cream cheese (softened )
2 large eggs
1/2 teaspoon pure vanilla extract
1 tablespoon unsalted butter
1/2 teaspoon stevia glycerite ((equals about 2 tablespoons of sugar))

Steps:

  • Microwave the cream cheese for 10-20 seconds to soften it. It needs to be truly soft, though not liquid.
  • In a medium bowl, whisk the eggs well with a hand whisk.
  • Add the cream cheese, vanilla, and stevia. Whisk patiently until well incorporated and smooth. This will require some elbow grease, so try to be patient!
  • Heat half the butter in two mini nonstick skillets (or use an egg frying pan) over medium heat. Add 1/4 of the batter to each skillet. Cook until golden brown and set on the bottom, about 2 minutes. Flip and cook 1 more minute. Transfer to a plate and loosely cover with foil.
  • Repeat with the remaining batter, adding more butter to the pans.
  • These pancakes are delicious with no toppings, but obviously, you can top them with butter, sugar-free maple syrup, or sugar-free honey.
