Steps:
- Place all ingredients in a small blender or food processor and blend until smooth.
- Pour about 3 tablespoons batter onto hot griddle or large frying pan for each pancake.
- When top is covered in bubbles and edges appear dry, flip pancakes. Continue to cook until bottom side is browned.
- Remove from griddle. Serve warm with butter and low carb maple flavored syrup if desired.

- Add some butter to a pan and stick it on medium heat.
- Throw the cream cheese and eggs into a bowl and mix with a fork until creamy. If you're planning to, now is the time to add some extras. But be careful! The batter is quite runny, so I wouldn't add things like nuts.
- Alternatively you can use a, but remember to let the batter sit for a minute or two! It'll cook better then.
- Off it goes into the pan. I usually make just one big pancake, but two medium-sized ones would also work perfectly fine.

- Microwave the cream cheese for 10-20 seconds to soften it. It needs to be truly soft, though not liquid.
- In a medium bowl, whisk the eggs well with a hand whisk.
- Add the cream cheese, vanilla, and stevia. Whisk patiently until well incorporated and smooth. This will require some elbow grease, so try to be patient!
- Heat half the butter in two mini nonstick skillets (or use an egg frying pan) over medium heat. Add 1/4 of the batter to each skillet. Cook until golden brown and set on the bottom, about 2 minutes. Flip and cook 1 more minute. Transfer to a plate and loosely cover with foil.
- Repeat with the remaining batter, adding more butter to the pans.
- These pancakes are delicious with no toppings, but obviously, you can top them with butter, sugar-free maple syrup, or sugar-free honey.
