LOW-FAT CHOCOLATE PUDDING

- Whisk the agave nectar, cornstarch and salt in a heavy-bottomed pot. Whisk in the evaporated milk and egg whites until well combined. Cook over medium-low heat, whisking constantly, until the mixture bubbles and thickens, about 10 minutes. Remove from the heat; stir in 1 tablespoon vanilla.
- Transfer 1 cup of the mixture to a medium bowl. Add the white chocolate chips and the remaining 1 teaspoon vanilla and stir until the chips melt. Add the cocoa powder and semisweet chocolate chips to the remaining pudding and stir until the chips melt.
- Divide the chocolate pudding among dishes and top with the vanilla pudding. Cover with plastic wrap and refrigerate until set, at least 2 hours. Chop some chocolate chips to sprinkle on top.

- Preheat the oven to 350 degrees F (175 degrees C).
- Combine flour, white sugar, cocoa powder, baking powder, and salt in a 9-inch square baking pan; stir well. Add milk, oil, and vanilla extract; stir until smooth.
- Mix together brown sugar and cocoa powder in a small bowl; sprinkle over batter. Pour boiling water over batter but do not stir.
- Bake in the preheated oven until cake springs back when lightly touched in the center, about 40 minutes.

- In a medium bowl, prepare pudding mix according to package directions using the 1 3/4 cups milk. Stir in vanilla; set aside.
- Place cream cheese in a large microwave-safe bowl. Microwave, uncovered, on 100% power (high) for 15 seconds; stir. Microwave on 100% power (high) for 15 seconds more. Beat cream cheese with an electric mixer on medium speed for 15 seconds. Add half of the pudding mixture; beat until smooth. Add the remaining pudding mixture; beat until smooth. Fold in half of the whipped topping. Spread mixture in pie shell. Chill 4 to 24 hours or until set.
- Top individual servings with the remaining whipped topping, the raspberries, and grated chocolate.

- In a mixing bowl, combine pudding and peanut butter; stir until smooth. Fold in whipped topping; stir until completely blended.
- Pour filling into pie crust. Freeze pie until firm. Partially thaw in refrigerator, for about 2 hours or so, before serving. You can store leftovers in the refrigerator or freezer. Leftover pie sometimes gets a little soft in the refrigerator, and doesn't hold its shape. It still tastes good, though. If you want perfect looking slices after you make the first incision, store in freezer and thaw as needed.

- Add milk to dry pudding mix, beat with whisk or on low speed until well mixed.
- Gently stir in 2 cup of whipped topping.
- Spread into crust.
- Refrigerate 45 minutes.
- Before serving, using a pastry bag with star tip, top pie with remaining whipped topping.
- Refrigerate remaining pie.

Found this in the local newspaper just in time to make my Dad his chocolate cream pie for Thanksgiving which he loves. My Dad being a heart patient, I'm looking for ways to lower the fat in everything nowadays.

- Combine cocoa, sugar, cornstarch and salt in a large pot.
- Over medium-high heat, gradually blend in milk and vanilla.
- Bring to a boil, stirring constantly.
- Boil and stir until thickened and cornstarch is cooked.
- Pour into individual cups, or a pre-cooked pie shell, and chill in refrigerator until set.
- Note: times might not be correct. I used 20 minute to combine ingred. and stir the pot. Used 35 minute for refrigerator time to set the pudding. Since I haven't made this yet, I don't really know the times.
