Healthy Mashed Sweet Potatoes image

Healthy Mashed Sweet Potatoes are the perfect light and fluffy holiday side made with 6 simple ingredients in 30 minutes!

4 pounds sweet potatoes (, (about 5))
3 tablespoons unsalted butter
1 tablespoon fresh thyme
1 teaspoon kosher salt
1/2 teaspoon ground white pepper
1/2 cup 2% milk

Steps:

  • Peel and chop the sweet potatoes into 2-inch cubes.
  • Add the sweet potatoes to a large pot in a steamer basket over 2 inches of water.
  • Cook for 20 minutes until sweet potatoes are tender.
  • In a small saucepan melt the butter and thyme on medium heat until just melted, then turn it off and let it sit.
  • Remove the sweet potatoes from the pot and drain the water.
  • Add the sweet potatoes, salt, pepper, and milk together.
  • Mash well with a potato masher or use an immersion blender to mash well.
  • Spoon sweet potatoes into a large serving bowl.
  • Pour the melted butter and thyme over the potatoes and serve.

Here's what you need: sweet potato, russet potato, cold water, kosher salt, unsalted butter, heavy cream, whole milk, freshly ground black pepper, fresh chives

3 lb sweet potato, peeled and cut into large chunks
2 lb russet potato, peeled and cut into large chunks
cold water
1 tablespoon kosher salt, plus more to taste
½ cup unsalted butter, cubed
½ cup heavy cream
½ cup whole milk
freshly ground black pepper, to taste
1 tablespoon fresh chives, chopped, for garnish

Steps:

  • Add the sweet potatoes and potatoes to a large pot and cover with cold water. Add the salt. Bring to a boil over high heat and cook until the potatoes are fork-tender, about 20 minutes longer. Drain and transfer the potatoes to a large bowl. Set aside.
  • In a small pot over low heat, bring the butter, cream, and milk to a simmer. Once simmering, remove from the heat.
  • Pour the cream mixture over the potatoes and mash with a hand masher until smooth. Season to taste with pepper and salt.
  • Garnish with chives, if desired.
  • Note: Russet potatoes gives these a lighter texture compared your typical sweet potato mash, but you can swap them out with two additional pounds of sweet potatoes if you'd prefer to keep it classic.

4 large sweet potatoes, peeled and cut into 1-inch cubes
4 ounces Neufchatel cheese (such as Organic Valley®), softened
½ teaspoon sea salt, or to taste

Steps:

  • Place potatoes into a large pot and cover with cold water; bring to a boil. Reduce heat to medium-low and simmer potatoes until tender, about 20 minutes; drain and transfer potatoes to a large mixing bowl.
  • Beat potatoes with an electric mixer until smooth; add cream cheese and beat again until smooth. Season potatoes with sea salt.
