1 cup uncooked cavatappi pasta
1 tablespoon butter
1-1/2 teaspoons all-purpose flour
1/4 teaspoon pepper
1/2 cup 2% milk
3/4 cup shredded sharp cheddar cheese
1 package (18 ounces) Hawaiian sweet rolls
1 carton (16 ounces) refrigerated fully cooked barbecue shredded pork, warmed
2 tablespoons melted butter
1 tablespoon honey
1/2 teaspoon ground mustard
1 jalapeno pepper, sliced, optional

Steps:

  • Preheat oven to 375°. Cook pasta according to package directions., Meanwhile, in a small saucepan, melt butter over medium heat. Stir in flour and pepper until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 3-5 minutes. Stir in cheese until melted. Drain pasta; stir into cheese sauce. Set aside., Place roll bottoms in a greased 13x9-in. baking dish. Layer with pork, pasta mixture and roll tops. Combine melted butter, honey and mustard. Brush over roll tops., Bake until tops are golden brown and filling is hot, 10-12 minutes. If desired, top with jalapeno pepper slices.

Feed a crowd at a party or buffet with these American-themed canapés of crispy squares of macaroni cheese, sandwiched in mini bread rolls

500g macaroni
50g butter
3 shallots , finely chopped
50g plain flour
500ml whole milk
1 tbsp Dijon mustard
100g cream cheese
100g cheddar , grated
1 egg , beaten
300g mozzarella , chopped into 36 chunks
3 x 12-pack assorted mini bread rolls
1 pack watercress
barbecue sauce (optional)

Steps:

  • Heat oven to 190C/170C fan/gas 5. Cook the macaroni following pack instructions, then drain in a colander. Meanwhile, melt the butter in a large saucepan over a medium heat. Once melted, add the shallots and cook very gently for 10-15 mins until soft. Add the flour, mix well, then slowly add the milk, a splash at a time, mixing well after each addition to make a smooth sauce. Once all the milk has been added, keep cooking and stirring until the sauce thickens. Stir in the mustard, cream cheese, cheddar and egg. Season well.
  • Tip the cooked macaroni into a deep baking dish (ours was 28 x 18cm) and pour over the cheese sauce, making sure the macaroni is well coated. Bake for 20 mins until starting to turn lightly golden. Remove from the oven, leave to cool completely, then chill overnight.
  • The following day, heat oven to 190C/170C fan/gas 5 and slice the macaroni cheese into 36 blocks. Transfer to 2 baking trays so the blocks have space around them. Gently press a piece of mozzarella into the middle of each. Bake for 10-15 mins or until starting to crisp at the edges and the cheese has melted. Put the blocks into the mini rolls with a few watercress sprigs and a squeeze of BBQ sauce, if you like. Serve immediately.

1 (12 count) package Hawaiian sweet rolls
1 (6 ounce) package thinly sliced deli ham
¾ pound shredded Swiss cheese
½ cup unsalted butter
1 tablespoon Dijon mustard
1 tablespoon poppy seeds
2 teaspoons Worcestershire sauce
2 teaspoons dried minced onion
¼ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9-inch square baking pan with aluminum foil and spray with cooking spray.
  • Slice attached rolls in half widthwise with a serrated knife, keeping rolls connected, into a bottom and top 'slab.' Place bottom slab in the prepared pan.
  • Layer about half the ham evenly over the bottom slab of rolls. Layer Swiss cheese evenly on top, and arrange remaining ham over the cheese. Cover with the top slab.
  • Place butter in a microwave-safe bowl. Heat in the microwave until melted, about 1 minute. Add mustard, poppy seeds, Worcestershire sauce, onion, salt, and pepper. Whisk to combine.
  • Pour butter mixture evenly and slowly over the rolls. Spread over the tops using a spatula; some of the mixture will pool at the base of the rolls. Cover with aluminum foil and let stand at room temperature for 5 to 10 minutes.
  • Bake in the preheated oven until cheese has melted, about 20 minutes. Uncover and continue baking until browned as desired, 3 to 5 minutes more. Slice into individual sliders.

Grilled Mac N' Beer Cheese Sliders With Bacon, Beer & image

Forget the cellophane-wrapped yellow squares, this grilled cheese uses mac n' cheese for its gooey filling. Not to mention it's topped with a bacon, beer and tomato jam, adding the perfect amount of salty sweetness to this delicious sandwich.

1/2 lb elbow macaroni
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1/2 cup half-and-half or 1/2 cup milk
6 ounces beer
smoked paprika (optional)
2 cups grated white cheddar cheese
2 cups sharp cheddar cheese
salt and pepper, to taste
bacon
1 lb smoked bacon
1 1/2 cups crushed tomatoes
4 garlic cloves, smashed
1/2 cup yellow sweet onion, finely diced
12 ounces beer
2 tablespoons brown sugar
2 teaspoons apple cider vinegar
salt and pepper, to taste
1 baguette
butter, for frying the grilled cheese
10 slices white cheddar cheese, broken in half

Steps:

  • Make the Jam.
  • In a large pan with high walls, cook the bacon, working in batches to avoid overlap. Once all of the bacon has been cooked, allow it to cool and then roughly chop.
  • Pour out all but about 1 tablespoon's worth of drippings from the pan. Heat the pan again and add in the onions. Cook the onions until they have become translucent, about 3-4 minutes. Then, add the garlic and cook for a minute.
  • Pour in the beer and apple cider vinegar and deglaze your pan using a wooden spoon.
  • Add the brown sugar, chopped bacon, crushed tomatoes, salt and pepper and stir well.
  • Place the lid over the pan, cracked so that the steam can vent slightly, and allow the mixture to boil for a minute. Then, reduce the heat to maintain a simmer. Cook until much of the liquid has evaporated and you are left with a thick, chunky jam, about 1 hour.
  • Make the Mac n' Beer Cheese.
  • Cook the macaroni according to the directions on the box.
  • Heat a pot over medium-high and add the butter.
  • When the butter melts entirely, whisk in the flour to create a roux. Cook until it begins to bubble and turns a gold-ish color.
  • Slowly add the milk and beer while whisking the mixture. Then, add the cheeses a little bit at a time, and stir constantly until the mixture is smooth.
  • Turn the heat down to medium and keep stirring for another 5 minutes or so as the mixture thickens up.
  • Add the salt and pepper. You may also choose to add a bit of chipotle chili powder, smoked paprika and/or nutmeg, depending on how you like your macaroni and cheese. I add a pinch of each.
  • Mix in the cooked macaroni.
  • Assemble the Sliders.
  • Slice your baguette to your desired thickness. Butter one side of each slice.
  • Heat a large pan over medium heat.
  • Place a piece of cheese on the unbuttered side of one slice of bread, and scoop a generous amount of Mac n' Beer Cheese on top of the cheese. Place, buttered-side down, into the hot pan. Do this with 3-4 pieces at a time. Place another piece of cheese on top of the Mac n' Beer Cheese.
  • Top each with another slice of bread that has been spread on the unbuttered side with Bacon, Beer and Tomato Jam.
  • Fry until slightly browned and the cheese binding the sandwich has begun to melt. Then carefully flip each slider over to fry the other side. Serve warm.

1 (12 ounce) pkg. King's Hawaiian Rolls
4 Tablespoons mayonnaise
6 slices cheddar cheese
6 slices provolone cheese
2 Tablespoons butter (melted)

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a 9x13-inch baking pan with nonstick cooking spray; set aside.
  • Without pulling the rolls apart, cut them in half and lay them on a clean work surface.
  • Spread 2 Tablespoons of mayonnaise on the inside of each half of the rolls.
  • Place the bottom half of rolls in the the prepared baking dish.
  • Top with sliced cheddar cheese and sliced provolone cheese.
  • Place top half of rolls on top.
  • Brush on melted butter.
  • Cover baking dish with foil and bake for 10 minutes.
  • Remove foil and bake for an additional 10 minutes, or until cheese is melted and rolls are golden brown.
  • Cut rolls apart and serve.
