2tsp olive oil
1 onion, peeled and chopped
2 cloves garlic, peeled and crushed
400g (14oz) minced lamb
400g can chopped tomatoes
1tsp dried oregano
1tbsp sun-dried tomato paste
200g (7oz) macaroni
1 large egg
150ml (¼ pint) Greek yogurt
Salt and freshly ground black pepper
60g (2oz) Cheddar cheese, grated
60g (2oz) feta cheese, crumbled
2 ovenproof dishes

Steps:

  • Heat the oil in a large pan, add the onion and cook for a few mins, to soften. Add the garlic and minced lamb, and fry for 10 mins, to brown it all over.
  • Stir in the tomatoes, oregano and sun-dried tomato paste, and cook for a further 10 mins, until the meat is tender.
  • Set the oven to Gas Mark 4 or 180°C. Bring a large pan of salted water to the boil, add the macaroni and cook for about 10 mins until "al dente" - tender, yet still with a slight bite.
  • Beat the egg in a jug and mix with the yogurt. Season well.
  • Spoon the lamb into the ovenproof dishes. Drain the macaroni and spoon it on top of the meat. Pour the yogurt mixture over, sprinkle with the Cheddar and feta. Bake for 25 mins until golden.

This is something I make. It is my own concoction. I add vegetables to this too sometimes but the meat is compulsory at my home. DH and DS love this. I omit the tomato too sometimes and make a dryish onion and garlic based dish which is also very good. The spices can be adjusted to suit your taste. Anything goes in this for me as I do not make the same recipe again without tweaking (very bad habit but cannot be helped I am like that only)so I am writing out of memory and what appeals to me right now. 500 g beef mince or 500 g ground chicken
200 g elbow macaroni (you can use any shape and also a bigger qty)
2 teaspoons oil
3 big onions, chopped
1 teaspoon cumin powder (optional)
1 teaspoon coriander powder (optional)
1/2 teaspoon ground aniseed (optional)
2 green chilies, chopped
3 -4 big tomatoes, chopped
1 teaspoon garam masala, plus
extra garam masala, to taste
1 teaspoon ground cayenne pepper
3 tablespoons garlic, chopped
1 teaspoon chopped ginger
3 cups water, 150% the volume of the macaroni (e.g. if the pasta measures 1 cup use 1 1/2 cups of water)
2 tablespoons sesame seeds
1 tablespoon oregano or 1 tablespoon dried basil
2 tablespoons tomato ketchup or 2 tablespoons tomato paste, plus
extra tomato ketchup, to taste
2 tablespoons cilantro, to garnish
2 tablespoons grated cheddar cheese, to garnish (optional)

Steps:

  • Wash the mince and drain well.
  • Saute 2 onions and 1 1/2 tblsp ginger and the garlic in 1 tsp oil till translucent.
  • Add the green chillies minced.
  • Now add the mince and all the spice powders except the cayenne.
  • Add salt to taste.Cook till almost done and dry and transfer to another pan.
  • Mix in the tomato paste or ketchup and set aside.
  • Add 1 tsp oil to the vessel again and saute the remaining onion and garlic till nice and golden brown.
  • Add some soya sauce/ sugar to help this process (a tsp or so- a trick I use to aid the onions in the process of frying).
  • Add the tomatoes chopped fine and stir well till they are incorporated.
  • Add the sesame seeds, the dried herb and the cayenne pepper powder.
  • Add the mince and stir.
  • Add the macaroni and the water.
  • add a little more salt to taste.
  • Bring to a boil.
  • Cover with a lid and simmer for 5-6 minutes till most of the water has been absorbed.
  • Mix and garnish with cliantro chopped and cheddar cheese grated.
  • Add tomato ketchup to taste if you think it necessary.

500 g elbow macaroni
4 onions, finely chopped
70 g butter
1/2 teaspoon garam masala powder
1/2 teaspoon cumin powder
1 green chili, chopped
1 tablespoon coriander leaves, chopped (cilantro)
500 g beef mince
salt and pepper
500 g yoghurt
8 cloves garlic, crushed

Steps:

  • Make the macaroni as per the package instructions.
  • Fry the onions in the butter till they are golden brown.
  • Add the green chillies and saute.
  • Add the spice powders.
  • Add the minced beef and fry till brown and cooked.
  • Add the coriander leaves and mix well.
  • Add the macaroni to this and stir till heated through.
  • Mix the yoghurt and garlic together.
  • Serve the macaroni in a platter.
  • Pour the yoghurt and garlic sauce over it and serve.
