MAGNOLIA CREAM CHEESE BROWNIES
This dessert was voted dessert of the month in Southern Living Magazine's March 2001 issue. It is made and served at Magnolias in Charlestown, South Carolina. There is a caramel sauce and chocolate sauce that is traditionally served over the brownie and then topped off with vanilla ice cream. Talk about decadent! You don't need to make both of the sauces to still have a great brownie.

Steps:
- Microwave first 3 ingredients in a 1-quart glass bowl at HIGH 2 minutes or until melted, stirring once. Cool and set aside.
- Beat cream cheese and 1/4 cup butter at medium speed with an electric mixer until creamy; gradually add 1/2 cup sugar, beating well.
- Add 2 eggs, 1 at a time, beating until blended. Stir in 1 teaspoon vanilla. Fold in 2 tablespoons flour and 1/2 cup chocolate morsels; set aside.
- Beat remaining 4 eggs in a large bowl at medium speed with an electric mixer. Gradually add remaining 1 1/2 cups sugar, beating well. Add melted chocolate mixture and 2 teaspoons vanilla extract; beat mixture until well blended.
- Combine 1 cup flour, baking powder, and salt; fold into chocolate batter until blended, and stir in remaining 1 cup chocolate morsels.
- Reserve 3 cups chocolate batter; spread remaining batter evenly in a greased 13- x 9-inch pan. Pour cream cheese mixture over batter. Top with reserved 3 cups batter, and swirl mixture with a knife.
- Bake at 325° for 40 to 45 minutes or until a wooden pick inserted in center comes out clean. Cool and cut brownies into squares.
- Caramel Sauce:.
- Melt butter in a heavy saucepan over medium heat; add sugar, and cook, stirring constantly, until mixture boils. Gradually add cream, vanilla, and salt, stirring constantly, until mixture boils. Remove from heat.
- Yields 1 1/2 cups.
- Chocolate Sauce:.
- Bring cream to a boil in a heavy saucepan; remove from heat.
- Add chocolate, stirring until melts.
- Yields 1 3/4 cups.
- **Cook time is just for the brownies and does not include making either of the sauces.

CREAM CHEESE BROWNIES
These are my mom's creation--kind of. The brownies are Marcia Adams's "Very Best Brownies" from her Heartland cookbook. The cream cheese filling is my mom's concoction. I like that the cream cheese layer doesn't overwhelm the brownies.

- Preheat oven to 350.
- Combine butter, sugar, and cocoa in large mixing bowl.
- Add eggs, one at a time. Blend after each addition.
- Add remaining ingredients and mix until just combined.
- In another bowl, combine ingredients for cream cheese layer. Mix until smooth.
- In 9 x 13 greased baking dish, pour half of brownie batter. Smooth to even.
- Spoon the cream cheese layer into the baking dish. This shouldn't be an easily spreadable layer--we just dollop and try to smooth it out for a more even distribution.
- Use butter knife to slightly marble into bottom layer.
- Top with remaining brownie mixture. Spread as evenly as you can, then tap pan lightly on counter to level batter.
- Bake 20-25 minutes (some ovens require a full 30 to completely bake), until the top is firm to the touch. Baking too long will result in dry brownies.
- Allow to stand 15 minutes before cutting.

CREAM CHEESE BROWNIES
These are my favorite kind of brownies. I like chocolate, but I'm not into the serious fudgy-chocolate kind of stuff. With these brownies I can pick out the ones with more cream cheese and leave the more chocolaty ones for someone else (like my mom).

Steps:
- To prepare the brownies: Preheat the oven to 350°F. Lightly grease a 9 by 13-inch pan.
- Place the chocolate and butter in a microwave-safe bowl and cook on high for 2 minutes, or until completely melted. Stir in the sugar until well combined. Add the flour, eggs, and vanilla and stir until combined. Spread the mixture into the baking pan.
- To prepare the cream cheese: Place the cream cheese in a bowl and, using an electric mixer on medium speed, whip the cream cheese until smooth. Add the sugar, egg, and flour and mix until smooth.
- Drop spoonfuls of the cream cheese batter on top of the chocolate and swirl it into the chocolate by running a knife back and forth across the pan. Bake the brownies for 35 minutes, or until the cream cheese is light brown. Cool completely before cutting.
WARM CREAM-CHEESE BROWNIES

- Preheat oven to 325 degrees. Butter a 9-by-13-inch baking pan; set aside. Make the cream cheese batter: Beat cream cheese, butter, and sugar in the bowl of an electric mixer fitted with the paddle attachment until well blended. Add eggs, one at a time, beating well and scraping down the sides of the bowl at least once. Add vanilla, and beat until combined. Using a large rubber spatula, fold in the flour and chocolate chips.
- Make the chocolate batter: Melt chocolate and butter in a medium heatproof bowl set over a pan of barely simmering water. Remove bowl from heat, and let cool completely.
- In a large bowl, using a handheld whisk, beat the eggs, gradually adding the sugar, until mixture is thick and pale. Whisk in the cooled chocolate mixture. Add the vanilla, and combine well.
- Combine flour, baking powder, and salt in a medium bowl, and fold into the chocolate mixture. Fold in chocolate chips. Measure out about 1/2 cup chocolate batter, and set aside. Spoon the rest of the batter into prepared baking pan, and spread cream cheese batter evenly over the top. Drop reserved chocolate batter in dollops on top. Run a knife or offset spatula all the way through the batters to create a swirling effect.
- Bake until a cake tester inserted near the edges comes out clean, about 35 minutes. The center will still be fairly soft, but will continue to firm after being removed from the oven. Transfer to a wire rack; let cool in pan before cutting into squares and serving.
CREAM-CHEESE BROWNIES

- Preheat oven to 350 degrees. Brush a 9-inch square baking pan with butter. Line bottom and two sides with a strip of parchment paper, leaving a 2-inch overhang on the two sides. Butter paper, and set pan aside. In a small bowl, whisk 1 cup flour, cocoa, baking powder, and salt; set aside.
- Place 8 tablespoons (1 stick) butter and chocolate in a large heat-proof bowl set over (not in) a saucepan of gently simmering water. Heat, stirring occasionally, until smooth, 2 to 3 minutes; remove bowl from pan. Add 1 1/4 cups sugar; mix to combine. Add 3 eggs, and mix to combine. Add flour and cocoa mixture; mix just until moistened (do not overmix).
- Prepare cream-cheese mixture: Whisk cream cheese with 2 tablespoons room-temperature butter. Whisk in 1/4 cup sugar, 1 egg, and 2 tablespoons all-purpose flour. Alternately spoon chocolate batter and cream-cheese mixture into pan; with the tip of a paring knife, swirl to marble.
- Bake until a toothpick inserted in center comes out with a few moist crumbs attached, 50 to 60 minutes. Cool in pan for 30 minutes. Using paper overhang, lift brownies out of pan; transfer to a rack to cool completely (still on paper). On a cutting board, using a dampened serrated knife, cut into 16 squares.
