Delicious Malteser Traybake with malted chocolate frosting and plenty of Maltesers! An easy and crowdpleasing sheet cake that's perfect for sharing

300 g (2 ½ cups) flour (plain / all purpose)
30 g (¼ cup) unsweetened cocoa powder
30 (¼ cup) malted milk powder ((Ovaltine))
330 g (1 ⅔ cups) soft light brown sugar
1 tbsp baking powder
½ tbsp bicarbonate of soda
200 g (7/8 cup) unsalted butter or Stork (softened )
4 medium eggs
120 ml (½ cup) whole milk
1 tsp vanilla bean paste (or extract)
260 g ( 2 cups) icing sugar
3 tbsp unsweetened cocoa powder
3 tsbp malted milk powder
150 g (⅔ cup) softened unsalted butter
120 ml (½ cup) milk (slightly warm)
175 g (1 cup) dark chocolate chips (melted and cooled)
Maltesers or Malteser truffles

Steps:

  • Preheat the oven to 170C (340F). Line a 9x13inch rectangular cake pan with baking paper.
  • Put the flour, sugar, cocoa powder, malted milk powder, baking powder, bicarbonate of soda and stir together to combine.
  • Add the butter, eggs, milk and vanilla.
  • Start beating on the lowest speed setting until the ingredients start to come together.
  • Increase the speed gradually, until the batter is completely smooth. Stop the mixer and scrape the sides and bottom of the bowl to make sure everything is incorporated.
  • Transfer the batter into the prepared cake tin and bake for 35 -40 minutes.
  • Check the cake is done by inserting a skewer in the centre - it should come out clean, the cake should be well risen golden and springy to the touch. Cool the cake on a wire rack before frosting.

This Malteser traybake is incredibly popular with people of all ages! An easy no bake slice with milk chocolate, crushed biscuits and lots of crunchy Maltesers!

400g Milk Chocolate, broken into small squares
200g Butter
3 tablespoons golden syrup
250g Digestive biscuits or Rich Tea Biscuits, crushed (you're aiming for a mixture of crumbs and larger pieces of biscuits, it makes for a more interesting texture)
200g Maltesers
200g milk chocolate
50g Maltesers

Steps:

  • Grease and line a 20x20cm or 32x22cm baking tin.
  • Melt the chocolate, butter and golden syrup together in a large heavy bottomed saucepan over a low heat.
  • Once the mixture has melted and looks smooth, remove from the heat and leave for a minute or two (if the chocolate mixture is too hot, the Maltesers will melt) before tipping in the crushed biscuits and Maltesers, stirring well to combine.
  • Pour the Malteser studded mixture into the lined tin. Smooth out with a rubber spatula and place in the fridge to firm up for one hour.
  • Make the topping by melting the chocolate in a heatproof bowl set over a pan of barely simmering water. Once the chocolate has melted and is smooth, remove from the heat. Remove the traybake from the fridge and pour over the melted chocolate, smoothing it out using a rubber spatula or spoon. Crush the 50g Maltesers and sprinkle over the chocolate. Return to the fridge once more for 1 hour, or until the chocolate has set hard. Cut into bars and enjoy!

My Malteser tray bake has a light crunchy base topped with a layer of chocolate is guaranteed to satisfy any chocolate cravings. This no bake recipe takes less than 15 minutes to prepare, and no oven is required!

200 g malt biscuits
100 g Maltesers
100 g butter
1 tbsp cocoa powder
2 tbsp golden syrup
50 g dark chocolate (roughly broken)
50 g milk chocolate (roughly broken)
50 g milk chocolate (roughly broken)
75 g dark chocolate (roughly broken)
40 g Maltesers (roughly chopped)

Steps:

  • Line a 20cm x 20 cm (8" x 8") square tin with baking paper.
  • Crush the biscuits to fine crumbs - either in a food processor or with the end of a rolling pin - and place in a medium size mixing bowl.
  • Roughly chop the Maltesers, leaving some larger chunks, and put them in the bowl with the biscuit crumbs.
  • In a small sauce pan over a low heat, place the butter, cocoa, golden syrup, 50g milk chocolate and 50g dark chocolate and heat, stirring, until the butter and chocolate have melted.
  • Leave the chocolate mix to cool for a couple of minutes, then pour over the Maltesers and biscuit crumbs.
  • Mix well until all the biscuit crumbs are coated in the chocolate mixture.
  • Pour into the prepared tin and smooth out, pressing down with the back of a spoon.
  • Melt the remaining 50g milk chocolate and 75g dark chocolate, either in the microwave or in a heatproof bowl set over a pan of barely simmering water.
  • Once melted, pour over the chocolate Maltesers biscuit base, and spread out to cover the slice.
  • Sprinkle over the roughly chopped Maltesers and place in the fridge for 2-3 hours to set.
  • Take out of the fridge 30 minutes before you want to cut it. Using a sharp knife, carefully cut into 16 pieces.
  • Store in an container in the fridge.

100 g unsalted butter
200 g milk chocolate
3 tablespoons golden syrup
225 g digestive biscuits, finely crushed
225 g Maltesers

Steps:

  • line a 8x8 square tin, or smaller, (your cake will be thicker thats all.)with cling, foil or baking parchment.
  • Finely crush the biscuits.
  • Place butter,syrup and chocolate in a pan and melt over a low heat, you may want to take it off the heat before the chocolate completely melts so the mixture doesn't get too hot for the maltesers later.
  • Add the crushed biscuits and mix together well.
  • Work quickly now and pour the mixture into the tin, smoothing out to make it an even thickness.
  • Place the maltesers all over the top and press into the mix.
  • Leave to cool before chilling and slicing.
  • It also looks lovely if you drizzle melted white chocolate over the top.

  • Melt marg, milk chocolate and syrup together in either a pot or in the microwave.
  • Crush the biscuits in a bag using a rolling pin. This is easier to do if you crush small amounts of biscuits at a time. Then add the crushed biscuits and maltesers (whole) to the mixture.
  • Spread mixture in a baking tray and cover it in melted white chocolate for a nice effect.
  • Leave in the fridge to set for a few hours.
