This oven roasted maple glazed carrot recipe is the perfect side dish! Slightly sweet, it is a healthy carrot recipe everyone will enjoy!

1 pound carrots, peeled and chopped into chunks (or use baby carrots)
2 TBSP maple syrup
1 teaspoon nutmeg
1 to 2 TBSP Olive Oil
Fresh thyme (optional)
Salt & Pepper

Steps:

  • Preheat the oven to 400 degrees F
  • Pat dry the carrots you will be roasting
  • In a small bowl, add carrots, maple syrup, nutmeg and a pinch of salt & pepper to taste. Mix gently.
  • Drizzle with 1 to 2 TBSP Olive oil and toss to coat
  • Spread carrots out on a sheet pan.
  • Roast for 15 minutes or until carrots become tender and start to caramelize.
  • Remove from oven and let cool slightly. Sprinkle with fresh thyme and enjoy!

1 lb precut baby carrots
1/2 tablespoon olive oil
1/4 teaspoon salt
1/2 tablespoon butter
1/2 tablespoon maple syrup

Steps:

  • Preheat oven to 475 degrees.
  • In shallow baking dish, toss carrots with oil and salt to coat.
  • Roast in oven for 10 minutes.
  • Heat butter in small saucepan until golden brown (dont burn!), remove from heat and add maple syrup.
  • Drizzle over carrots and shake pan to coat.
  • Return to oven and continue to roast for another 8 minutes, or until brown and tender.
  • Serve immediately.

1 1/4 pounds carrots, peeled and trimmed, sliced on the bias 1/3-inch thick
2 tablespoons unsalted butter
1 small shallot, finely chopped
1/2 teaspoon freshly grated lime zest
1/4 cup grade A medium amber or dark amber maple syrup
1 tablespoon lime juice
Coarse sea salt
Freshly ground black pepper

Steps:

  • Pour cold tap water into a large pot fitted with a steamer basket to a depth of 1 inch. Bring to a boil over medium-high heat, add the carrots, cover and cook just until the carrots have lightened in color and are barely tender, about 4 minutes.
  • Preheat the broiler with a rack set about 4 inches from the heat. In a large ovenproof skillet, melt the butter until frothy and add the shallot and lime zest. Sauté, stirring occasionally, over medium heat until the shallot is translucent, but not browned, about 4 minutes. Add the carrots, maple syrup, lime juice and a pinch of salt and stir to coat. When the mixture begins to bubble, continue to simmer 6 to 8 minutes, or until the liquid is reduced by half and is syrupy.
  • Transfer the skillet to the broiler and cook until the edges of the carrots have just begun to brown, about 5 minutes. Finish the dish with a sprinkling of salt and a few coarse grinds of black pepper.

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Brush carrots with olive oil and sprinkle with salt and pepper.

  • Pour the orange juice into a 4 cup microwave safe dish.
  • Heat 1 minute at high .

Peel the carrots (and if they are large, cut uniform slices so that they will roast evenly and be finished at the same time).
