A warm breakfast of hearty homemade oatmeal will give you the energy you need.

1/2 teaspoon coarse salt
2 cups rolled oats
1/4 cup heavy cream
2 tablespoons butter
4 tablespoons maple syrup
4 tablespoons dried cherries

Steps:

  • In a medium (3-quart) saucepan, bring 4 cups water to a boil. Stir in salt and oats. Reduce heat to medium; cook until oatmeal is tender and creamy, stirring often, about 8 minutes.
  • Remove from heat. Stir in heavy cream. Divide oatmeal among four bowls; top each serving with 1/2 tablespoon butter and 1 tablespoon each syrup and cherries, as desired. Serve immediately.

1/2 cup raw oats
3/4 cup water
3/4 cup pasteurized liquid egg-whites
1 tablespoon peanut butter
artificial sweetener, to taste (e.g. Splenda, stevia)

Steps:

  • Add oats and water to a microwave-safe bowl.
  • Microwave on medium power for approximately 1 minute and 30 seconds. Keep your eye on the bowl as oatmeal has a tend to boil over in the microwave.
  • Remove from microwave and stir in the peanut butter and stevia until well-blended. Stir in the egg whites until well-blended.
  • Microwave on medium power for 1 minute.
  • Remove and check the consistency. Eggs should be smooth, not scrambled or watery. If you would like it cooked a little more, microwave in 10-second increments on high, checking each time for consistency. Don't cook it too much or it will get curdled.
  • Enjoy!

  • Preheat oven to 350°F. In a large bowl beat butter with a mixer on medium 30 seconds. Add brown sugar, baking soda, and salt. Beat on medium 2 minutes, scraping bowl as needed. Beat in 1/3 cup maple syrup, egg, and 1 tsp. of the vanilla. Beat in flour on low. Stir in oats and raisins.
  • Drop dough by teaspoons 2 inches apart onto an ungreased cookie sheet. Bake 12 minutes or until edges are set and centers are still soft. Cool 2 minutes on cookie sheet. Remove; cool on wire rack.
  • In a small bowl stir together powdered sugar, the 3 Tbsp. maple syrup, and the remaining 1/2 tsp. vanilla. If necessary, add a milk or water, 1/2 tsp. at a time, to desired consistency. Drizzle over cooled cookies.

Using a wooden spoon, stir in as much of the remaining flour as you can.
  • Turn dough out onto a lightly floured surface. Knead in enough remaining flour to make a moderately soft dough that is smooth and elastic (3 to 5 minutes total). Shape dough into a ball. Place in a lightly greased bowl, turning once to grease surface of dough. Cover; let rise in a warm place until double in size (about 1 hour).
  • Punch dough down. Turn dough out onto a lightly floured surface. Divide dough in half. Cover; let rest 10 minutes. Meanwhile, lightly grease two 9x5x3-inch loaf pans or line bottoms with parchment paper; set aside.
  • Shape dough into 2 loaves by patting or rolling. To shape by patting, gently pat and pinch, tucking edges underneath. To shape by rolling, on a lightly floured surface roll each dough half into a 12x8-inch rectangle. Roll up each rectangle, starting from a short side. Seal seams with your fingertips. Place shaped dough in prepared pans. Cover; let rise in a warm place until nearly double in size (30 to 45 minutes). Preheat oven to 375 degrees F.
