1 1/2 ounces silver tequila
1 ounce orange liqueur (Cointreau, Grand Marnier or Triple Sec)
3/4 ounce freshly-squeezed lime juice
optional sweetener: agave nectar or simple syrup, to taste
ice
lime wedge and coarse salt for rimming the glass

Steps:

  • Run a lime wedge (the juicy part) around the top rim of your serving glass. Fill a shallow bowl or plate with salt, then dip the rim until it is covered with your desired amount of salt. Set aside.
  • Add tequila, orange liqueur, lime juice and a few ice cubes to a cocktail shaker. Cover and shake vigorously for about 10 seconds. Give the mix a taste and stir in a teaspoon or two of sweetener if desired.
  • Fill the prepared serving glass with ice. Strain in the margarita mix, garnish with a lime slice, serve and enjoy. Cheers!

I made these in a pitcher and served them over ice cubes. You can also put the mixture in a cocktail shaker with some ice and give it some good shakes to get it cold, before straining the drinks into glasses. (Depending on the size of your shaker, you'll likely need to mix them up in a couple of batches.) You can use any kind of oranges, or tangerines. Cara Cara oranges are pretty mild, so depending on the flavor of the citrus you have, you may want to use less lime juice, then add more to taste.

9 ounces (1 generous cup, 270ml) freshly squeezed orange juice
2 to 3 ounces (4-5 tablespoons, 60-90ml) freshly squeezed lime juice
2 ounces (1/4 cup, 60ml) Triple sec (or another orange-flavored liqueur, such as Grand Marnier or Cointreau)
5 ounces (150ml) tequila
2 teaspoons honey or agave nectar
fresh lime slices (for garnish)

Steps:

  • Rub the rims of 4 glasses with a piece of citrus to wet it. Sprinkle some flaky sea or kosher salt onto a plate and dip each overturned glass in the salt, pressing and turning it so the rim is coated.
  • In a pitcher, stir together the orange juice, 2 ounces of lime juice, Triple sec, tequila, and honey or agave nectar. Taste, and add additional lime juice, if desired.
  • Fill glasses 2/3's full with ice then divide the margarita mix into the glasses, adding a slice of fresh lime.

Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

4 navel oranges, cut into 3/4-inch pieces
2 lemons, cut into 3/4-inch pieces
2 limes, cut into 3/4-inch pieces
1/2 cup superfine sugar
1/4 cup Cointreau
1/4 cup Triple Sec
1 1/2 cups good quality tequila (recommended: 100 percent agave)
10 cups ice
Fine salt, for the rims of the glasses
10 lime wedges

Steps:

  • Put the oranges, lemons, and limes through a juicer. Pour the juice into a large pitcher. Add the sugar and stir to dissolve. Then stir in the Cointreau, Triple Sec, and tequila.
  • To serve: Pour salt onto a small plate. Run a lime wedge around the top of each glass and dip the glass in the salt. Fill each glass halfway with ice and pour in the juice mixture. Garnish with a lime wedge and serve.
  • Chef's note: Farm freshness is the key here. Look for the citrus that is mostly in season and adjust the recipe. Tangerines, Meyer lemons, and key limes all have amazing flavor if you can find them.
