SESAME-KALE CRISPS

Make these delicious sesame-kale crisps for a nutritious snack.

Number Of Ingredients 5

1 bunch kale, stems removed and leaves torn into 2-inch pieces
2 tablespoon extra-virgin olive oil
1 tablespoon fresh lemon juice
1/4 cup sesame seeds
Coarse salt

Steps:

  • Heat oven to 200 degrees.
  • In a large bowl, drizzle kale with oil, lemon juice, and sesame seeds. Season with salt. Toss until evenly coated.
  • Transfer to a rimmed baking sheet and bake for 30 minutes. Remove from oven and, using a spatula, flip kale leaves over. Return to oven and continue cooking until kale is dry and crisp, 20 to 25 minutes more. Let cool completely. Store in an airtight container for up to 3 days.

1 tablespoon olive oil, plus more for drizzling
2 tablespoons minced garlic
1 (15 1/2 ounce) can rinsed and drained chickpeas
5 cups ribbed and shredded kale
1/2 cup grated parmesan cheese
salt and pepper
1 tablespoon lemon juice, for drizzling

Steps:

  • Cook pasta, then drain.
  • In a skillet, cook sausage meat in 1 tablespoon olive oil until opaque, breaking up with a spoon.
  • Add garlic and cook 30 seconds.
  • Add chickpeas and cook 3 minutes.
  • Add kale and wilt.
  • Add pasta and Parmesan; season.
  • Drizzle with olive oil and lemon juice.

Nonstick cooking spray
1 1/2 cups panko (Japanese breadcrumbs)
3/4 cup shredded Parmesan (2 1/4 ounces)
1 1/2 teaspoons Italian seasoning
1/4 to 1/2 teaspoon cayenne pepper
Coarse salt and ground pepper
2 large egg whites
2 large zucchini (1 1/4 pounds total), halved crosswise and cut into 1/2-inch wedges

Steps:

  • Preheat oven to 425 degrees, with racks in upper and lower thirds. Lightly coat 2 rimmed baking sheets with cooking spray. In a wide, shallow dish, mix together panko, Parmesan, Italian seasoning, cayenne, 3/4 teaspoon salt, and 1/4 teaspoon pepper. In a medium bowl, lightly beat egg whites.
  • Working with one at a time, dip zucchini wedges in egg whites, then breadcrumb mixture, pressing to adhere. Arrange on sheets in a single layer. Bake until coating is golden brown and crisp, 20 minutes, flipping zucchini and rotating sheets halfway through. Season to taste with salt and pepper; serve immediately.

ground pepper, to taste
2 tablespoons unsalted butter
1 large yellow onion, diced medium
3 garlic cloves, minced
1 1/2 lbs kale, tough stems and ribs removed and leaves coarsely chopped (1 1/2 lbs)
2 cups shredded chicken or 2 cups chopped cooked chicken from 1/2 rotisserie chicken
48 ounces part-skim ricotta cheese
3 tablespoons finely grated lemon zest (from 2 lemons)
3/4 cup parmesan cheese, grated

Steps:

  • Preheat oven to 350. In a large pot of boiling salted water, cook pasta according to package directions.
  • Drain and return to pot. In a large skillet, melt butter over medium-high heat. Add onion and garlic and cook until onion is beginning to soften, 4 minutes.
  • Add kale, cover, and cook 4 minutes or until almost tender about 5 minutes. Transfer to pot with pasta.
  • Stir in ricotta, lemon zest, and 1/2 cup parmesan. Season with salt and pepper. Transfer mixture to a 13x9 inch baking dish and top with 1/4 cup parmesan. Bake until top is golden, 30 minutes.
