1/2 cup coconut milk
1/2 cup orange juice
4 cups cubed cantaloupe (1/2 inch)
4 cups cubed watermelon (1/2 inch)
2 medium navel oranges, sectioned
1 cup fresh raspberries
1 cup fresh blueberries
1/2 cup sweetened shredded coconut, toasted

Steps:

  • For dressing, whisk together yogurt, coconut milk and orange juice. Refrigerate until serving., To serve, place fruit in a large bowl; toss gently with dressing. Sprinkle with coconut.

1 small honeydew
1/2 cup blueberries
1 1/2 cups plain yogurt
2 tablespoons pure maple syrup
2 teaspoons freshly squeezed lemon juice
1/4 teaspoon grated peeled fresh ginger, (optional)
1 cup granola, plus more for garnish

Steps:

  • Cut melon in half crosswise; remove seeds with a spoon. Using a melon baller, scoop out flesh and transfer melon balls to a bowl; reserve melon rinds to use as serving bowls. Add blueberries to the melon balls; toss to combine.
  • Stir together yogurt, maple syrup, lemon juice, and ginger in a small bowl.
  • Fill each melon rind with 1/2 cup of the yogurt mixture; top with 1/2 cup granola. Top with half of the melon mixture. Spoon 1/4 cup plain yogurt over each; garnish with more granola. To serve, spoon layered mixture into small serving bowls.

1 cup mixed berries, such as blueberries, blackberries and raspberries
1 lemon, zested and juiced
5 tablespoons honey
One 8-ounce container mascarpone
2 tablespoons heavy cream
Splash of vanilla extract
Fresh mint leaves, for serving
Biscotti, for serving

Steps:

  • Mix the berries, lemon zest and juice and 2 tablespoons of the honey in a bowl; set aside.
  • In a separate bowl, add the mascarpone, heavy cream, vanilla and remaining 3 tablespoons honey. Using a hand mixer, whip together until light and fluffy.
  • Divide the sweetened mascarpone among 4 serving bowls. Use the bottom of a spoon to create a well in the middle of each mascarpone mound. Spoon the berry mixture into each well. Garnish with a sprig of mint on top of the berries and a biscotti on the side.
