MELT IN YOUR MOUTH BANANA BREAD
I searched and searched for a banana bread recipe with the texture that I wanted and couldn't find one. One day I decided to modify my Recipe #14187 to see if I could make up my own recipe. My family loved it and it was exactly what I was looking for so here it is. I hope you like it as much as we do.

Steps:
- Preheat oven to 325°F.
- Mix oil, eggs and mashed bananas.
- Combine remaining ingredients and add to banana mixture.
- grease and flour pans,place on baking sheet.
- Bake in a 2/ 9 x 5 x 3 inch pan 0r 4 mini loaves [mini's will take about 45 minutes] for 1 hour or until bread tests done.

Steps:
- Mix 1 cup flour, sugar, baking power, baking soda, and salt.
- Add mashed bananas, butter, and milk.
- Mix for 2 minutes.
- Add eggs and remaining flour, beat till blended.
- Stir in nuts.
- Poor batter into a greased 8x4x2 inch loaf pan.
- Bake at 350°F for 55-60minutes.
- Cool for 10 minutes.
- Remove from pan.

MELT IN YOUR MOUTH BANANA NUT BREAD
I tweaked this recipe from a variation of the Amish Friendship bread, the one that got passed around in baggies.This one does not involve weeks of "fermentation', thank goodness, but became such a hit in my family, that now every holiday, I get requests for shipments of this bread.

- Preheat oven to 325 degrees.Prepare loaf pans by spraying cooking spray, the coating with cinnamon sugar. This recipe will make either 2 large loaf pans, 3 medium, or 6 small, or mini loaf pans.
- Add all dry ingredients (except nuts) into a large bowl and stir together until well mixed.
- Add milk, oil(or oil and applesauce), eggs,and vanilla and mix well with beater or stand mixer.Batter will be slightly thick. Add thawed bannas including juice, and mix well. stir in nuts (optional).
- Pour into prepared pans and bake for 40min- 1hr 15min, depending on size of pan. I prefer light colored or shiny aluminum to the darker pans, as they tend to burn the bottom. Use knife or toothpick to test for doneness. Cool for 15-20 min, then wrap in foil, if not eaten right away, to preserve moistness. I have wrapped these and shipped them this way by 2-3 day mail, and they arrive just as moist as if they were fresh from the oven!
- ***For the moistest results, I let the bananas completely blacken, then freeze them until I am ready to use them. Then I thaw them out in the microwave, and pour into batter, juice and all. This not only gives a more concentrated banana flavor, but the juice ensures moistness too!

- Cut two 25x3-in. strips of heavy-duty foil; crisscross so they resemble an X. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., Combine the first 6 ingredients. Crumble beef over mixture and mix lightly but thoroughly. Shape into a round loaf; place in center of strips in slow cooker. Cook, covered, on low 5-6 hours or until a thermometer reads at least 160°. , In a small bowl, whisk ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over meat loaf. Cook until heated through, about 15 minutes longer. Using foil strips as handles, remove meat loaf to a platter. Let stand 10-15 minutes before slicing.
