5 tablespoons butter, softened
1/3 cup brown sugar, packed
1 cup flour
1/2 cup sugar
1 (8 ounce) packet cream cheese, softened
1 egg
2 tablespoons milk
1 tablespoon lemon juice
1/2 teaspoon vanilla

Steps:

  • Heat oven to 350.
  • In a medium bowl blend thoroughly butter, brown sugar and flour with a fork until mixture resembles coarse crumbs.
  • Put 1 cup of the mixture aside for topping.
  • Press remaining mixture into an 8x8x2 inch baking dish sprayed lightly with cooking spray; bake for 15 minutes.
  • In another bowl combine sugar and cream cheese, mixing until smooth.
  • Thoroughly beat in egg, milk, lemon juice and vanilla.
  • Spread over the baked crust and sprinkle with remaining brown sugar mixture.
  • Bake for 25 minutes.
  • Let cool, then chill for at least 1 hour.
  • Cut into 16 squares; serve.

¼ cup sifted powdered sugar, or to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Combine flour, sugar, cream cheese, butter, eggs, baking powder, vanilla, and salt in a bowl until a dough forms.
  • Drop rounded tablespoons of dough 2 inches apart onto cookie sheets.
  • Bake in the preheated oven until bottoms are very lightly golden brown and tops are just about to turn color, 10 to 14 minutes. Let cool for at least 10 minutes. Sprinkle with powdered sugar.

Steps:

  • In a mixing bowl blend, cream cheese, butter, and sugar until fully combined.
  • Add flour to cream cheese mixture and continue to blend together until fully combined.
  • Add crushed cookies to the mixture and gently fold together. Ensure the cheesecake batter is fully mixed.
  • Cover with plastic wrap and chill in refrigerator for 30 minutes, or until batter is firm to touch.
  • Preheat oven to 350°F(180°C).
  • Roll batter into small balls and place on a parchment lined baking sheet.

So easy, so delicious... so say hello to the holiday season with these fabulous cookie bars. Top them off with some colored sugar and enjoy. You won't believe how easy they are to make. I don't care for nuts, so I omit them when I make them, but have included walnuts and pecans when giving them as a treat and gotten rave reviews!

1 cup all-purpose flour
1/3 cup unsalted butter, softened
1/2 cup light brown sugar, firmly packed
1/2 cup nuts, any kind chopped and toasted
1 (8 ounce) package cream cheese, at room temperature
1/4 cup sugar
1 egg, at room temperature
2 tablespoons milk
2 tablespoons fresh lemon juice
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees F.
  • Line an 8 by 8-inch square baking pan with parchment paper. Let parchment come up over the sides of the pan to use as "handles" when unmolding after baking.
  • In a mixer bowl, combine flour, butter, and brown sugar. Blend at low speed until incorporated and mixture is like sand, about 2 to 3 minutes. Stir in nuts. Reserve 1 cup of mixture for topping.
  • With your fingers, press remaining mixture into pan. Bake on the middle rack of the oven until crust is set and golden brown, about 8 to 10 minutes. Let cool on a rack while assembling the filling.

3 ounces cream cheese
1 egg (separated)
1 teaspoon vanilla
1 lemon (for zest)
¼ teaspoon salt
1 cup powdered sugar
1 cup flour
1 cup graham cracker crumbs
20 ounces cherry pie filling

Steps:

  • In a medium bowl, cream butter, cream cheese, egg yolk, vanilla, 1 teaspoon lemon zest, and salt until fluffy.
  • Gradually mix in powdered sugar and flour to make stiff dough.
  • Cover bowl with plastic wrap and place in the fridge to chill for about 2 hours.
  • Remove from fridge and preheat oven to 325 degrees.
  • Shape dough into small one inch balls.
  • Beat egg white until foamy.
  • Dip balls in egg white then roll in graham cracker crumbs. Arrange cookie dough balls about 2 inches apart on ungreased cookie sheet and make a depression in the middle of each cookie with your thumb.
  • Bake for 12-15 minutes, or until cookies begin to brown on the bottoms.
  • Remove cookies from baking sheet and let cool.

1 (4.8 ounce) package graham crackers, finely crushed
1 ½ teaspoons baking powder
1 stick unsalted butter, softened
½ cup brown sugar
1 large egg, divided
⅓ cup cream cheese, softened
¼ cup white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Combine flour, crushed graham crackers, and baking powder in a bowl.
  • Beat butter, brown sugar, and egg white together in a separate bowl with an electric mixer until creamy. Add to the dry ingredients and mix until moist.

2/3 cup cold butter
1 cup chopped walnuts
FILLING:
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
2 eggs
1/4 cup 2% milk
2 tablespoons lemon juice
1 teaspoon vanilla extract
Sliced red and green maraschino cherries, optional

Steps:

  • In a large bowl, combine flour and brown sugar; cut in butter until mixture resembles coarse crumbs. Stir in walnuts. Reserve 1 cup. Press remaining crumbs onto the bottom of an ungreased 13x9-in. baking pan. Bake at 350° for 12 minutes. , Meanwhile, in a large bowl, beat cream cheese and sugar until light and fluffy.
