CUCUMBER LIME AGUA FRESCA
Cucumber Lime agua fresca is among some of the popular drinks for those hot summer days. An easy to prepare a drink that takes the term "agua fresca" to the next level, it really tastes like fresh times 2! Cucumber, lime juice, sugar, and mint to garnish.

Steps:
- Peel the cucumbers and remove the seeds using a spoon. Chop cucumbers into chunks and place into the blender. Gather all the ingredients to prepare the agua fresca.
- Add the 2/3 cups of sugar, ½ cup of lime juice, and three cups of the water into the blender. Process for a couple of minutes, until everything has been processed into a smooth mixture.
- Now, using a strainer, pour the mixture into a large-sized pitcher. In this case, I'm using my Rubbermaid pitcher. Press down on the strainer with the back of a spoon to extract as much liquid as possible. Afterwards, discard those residues.
- Add the remaining 3 cups of water and 2 cups of ice cubes, then stir and refrigerate for an hour. To serve, place some slices of lime or cucumber in the glasses and garnish with a few mint leaves. Enjoy!

- Blend 2 cups water, cucumbers, lime juice, and 2 tablespoons sweetener together in a blender until smooth. Pour into pitcher; add remaining water. Stir in additional sweetener to taste.

CUCUMBER LIME MARTINI
Steps:
- Slice 4 very thin slices from the cucumber, then peel, seed and coarsely chop the rest. Combine the lime juice, chopped cucumber, some Simple Syrup and 2 cups cold water in a blender and blend until smooth. Pour into a pitcher and stir in the lime zest, mint and dill. Cover and refrigerate until very cold, at least 2 hours. Keep the cucumber slices covered and chilled.
- Put some ice, a shot of vodka and some of the lime mixture in a cocktail shaker and shake for 10 seconds. Strain into a martini glass and garnish with a cucumber slice, some mint and dill. Repeat to make 3 more martinis.
- Bring the sugar and 1 cup water to a boil in a small saucepan over medium high heat. When the sugar is completely dissolved, remove the saucepan from the heat and cool the syrup to room temperature. Refrigerate, covered, for up to 1 week.
MEXICAN CUCUMBER MARTINIS

- In small saucepan, bring the water and sugar to a boil over medium high-heat. Simmer until the sugar has dissolved completely. Set aside to cool.
- Put the chile-lime powder on a small plate. Using the lime wedge, moisten the rims of the martini glasses. Invert the martini glasses into the chile-lime powder, to coat the rims.
- In a blender, combine the simple syrup, cucumber, water, and lime juice until smooth. Strain the mixture into a pitcher. Add the vodka and mix well. Fill a martini shaker with ice and add about 1 cup of the prepared cucumber mixture. Shake well and serve.
HOMEMADE CUCUMBER-LIME HARD SELTZER
Making your own hard seltzer is super easy, and you can tailor it to your favorite flavors for a refreshing summertime drink. For extra flavor, muddle the cucumber, lime juice, and vodka ahead of time and let sit. When ready to use, add in the ice, shake, and strain!

CUCUMBER LIMEADE
The first time I had a beverage with cucumber in it was at a spa several years ago. Simple thinly-sliced cucumber rounds in clean iced water... and it was heaven! (Ok, so the lovely, relaxing spa environment didn't hurt.) This slightly "enhanced" version is from Martha Stewart. Feel free to adjust the amount of lime juice to your taste. I found it needed significantly more than the original recipe's call for the juice of one lime (I'm a citrus-head), but once I got it right, it was perfect! I grabbed a book and melted into the hammock out back while sipping this truly refreshing beverage.

- Peel cucumber, cut in half lengthwise and remove the seeds. This is easily done by scraping a spoon tip (bowl side down) down the length of the inside of the cucumber half.
- Chop coarsely and combine in a blender with the remaining ingredients, blending until smooth.
- Serve over ice with cucumber spears as garnish.

- In a medium saucepan combine the water, honey and crushed red pepper. Bring to boiling over medium, stirring to dissolve honey. Remove from heat. Add cucumber. Cover and let stand 15 minutes. Place half of the mint in a 4-cup liquid measuring cup; crush against side with a muddler or the back of a spoon. Add cucumber mixture. Cover and chill 1 hour.
- Strain cucumber mixture through a fine-mesh sieve into a pitcher. If desired, reserve some of the cucumber slices for garnishing cocktails. Discard the remaining strained solids.
- Stir lime juice and tequila into strained liquid in pitcher. Slowly pour in club soda; stir gently. Serve in ice-filled glasses. Garnish with the reserved cucumber slices, the remaining mint and lime wedges.
