- In 12" skillet, heat oil, add rice.
- Cook until golden brown, stirring frequently.
- Stir in remaining ingredients.
- Bring to a boil, reduce heat, cover and simmer 15 to 20 minutes.

Steps:
- In a large skillet, over medium heat, fry the bacon until just crisp. Add the jalapenos and saute until slightly softened. Stir in the Zesty Rice Salad and cook until rice is heated through. Add corn, diced tomatoes, and chili seasoning. Continue to fry on medium heat until corn is cooked and tomatoes are hot. Season with salt and pepper, to taste. Sprinkle with chopped cilantro before serving.
- Heat oil over medium heat in a medium sauce pot. Add garlic, and rice and saute for 2 minutes until rice is toasted. Add 2 1/4 cups water, chili seasoning and season with a pinch of salt and pepper and bring to a boil. Cover, reduce heat to low and simmer for 15 minutes. Remove to a baking sheet and let cool.
- In a large bowl combine onion, yellow pepper, cooled rice, beans, vinegar and cilantro. Mix well and serve.

Steps:
- Heat the oil in a saucepan and sizzle the onion for 5 mins until just starting to soften. Add the garlic and cook for a minute more, then stir in the chipotle paste (if using) and the tomato purée and cook for a minute.
- Add the tomatoes and simmer for a few minutes, then scatter the rice into the pan and stir, so it's coated in the tomato mix. Pour over the hot stock, season, give everything another stir and bring to the boil, then cover the pan with a lid and turn the heat down to the lowest possible setting.
- Gently simmer for 15-20 mins until all the stock has been absorbed and the rice is cooked through. Leave the rice to sit for a few mins off the heat, then stir through the coriander and serve.

- Set a large mixing bowl next to the stove. Warm 1 tablespoon oil in a large skillet over medium-high heat. Add the onion and garlic and saute until fragrant. Add the bell peppers and continue cooking until tender. Transfer to the waiting bowl.
