We're combining the best elements of White Chicken Chili and classic Mexican Street Corn. This simple Chicken Chili Recipe is loaded the zesty flavor!

2 teaspoons olive oil
1 large sweet onion, (peeled and chopped)
4-5 cloves garlic, (minced)
1 large jalapeno, (seeded and chopped)
1/3 cup chopped cilantro
2 teaspoons ground cumin
1 teaspoon dried oregano
1/4-1/2 teaspoon cayenne pepper
4 cups chicken broth
1 1/2 pounds boneless skinless chicken breast
7 ounce chopped green chiles, (mild or medium)
4 cups fresh corn cut off the cob ((about 4-5 cobs))
2 cups sour cream
1 cup shredded pepper jack cheese
1 tablespoon cornstarch
1 lime, (juiced)
Salt and pepper
Possible garnishes: More cilantro or shredded cheese, avocado slices, lime wedges, or tortilla chips

Steps:

  • Set a large 6-8 quart soup pot (or dutch oven) over medium heat. Add the oil and chopped onions. Saute the onions for 2-3 minutes, stirring. Then add in the garlic, jalapeno, cilantro, cumin, oregano, and cayenne pepper. Saute another 2-3 minutes to soften.
  • Add the chicken broth, whole chicken breasts, and chopped green chiles to the pot. Season with 1 teaspoon salt and 1/4 teaspoon ground black pepper. Bring to a boil. Then simmer for 20 minutes until the chicken is cooked through.
  • Meanwhile, cut the corn off the cobs and set aside.
  • Use tongs to remove the cooked chicken from the pot. Add the corn, to the pot and stir. Then chop or shred the chicken breasts, and place the meat back into the pot.
  • Stir in the sour cream and shredded cheese. Stir rapidly as you sprinkle the cornstarch over the top of the chili. (Stirring fast helps reduce clumps.)
  • Simmer for 3-5 minutes until the chili base thickens. Then turn off the heat and stir in the lime juice. Ladle into bowls and serve with your favorite garnishes.

1 onion, diced
1 teaspoon ground cayenne pepper
2 teaspoons dried oregano
1 pound frozen corn kernels
2 (14.5 ounce) cans Mexican-style stewed tomatoes
1 (15 ounce) can pinto beans, drained
1 (15 ounce) can kidney beans, drained
2 teaspoons chicken bouillon granules
1 cup water
½ teaspoon salt
¼ teaspoon ground black pepper
1 ½ cups tomato sauce
2 tablespoons tomato paste

Steps:

  • In a large pot, cook onion in oil over medium heat 1 minute. Stir in cayenne and oregano and cook 1 minute more. Stir in corn, tomatoes, pinto beans, kidney beans, chicken bouillon granules, water, salt, pepper, tomato sauce and tomato paste. Cook, uncovered, until heated through and slightly thickened, 10 to 15 minutes.

1 tablespoon garlic (chopped)
1/4 cup sour cream
1/2 cup cheddar cheese (shredded)

Steps:

  • Add all ingredients except sour cream and cheddar to large non-stick frying pan on high.
  • Cook on high stirring often to keep from burning.
  • Cook until the vegetables are tender, reduce to low.
  • Add in sour cream and combine.
  • Server over rice with cheddar cheese on top.
  • Serve Hot sauce on the side to kick it up.

3 tablespoons olive oil
6 medium ears sweet corn, husked
2 shallots, sliced into rings
1 serrano pepper, sliced into rings, optional

1/2 cup Cotija cheese, crumbled and divided

  • In a large serving bowl, whisk together lime juice and olive oil. Cut kernels off corn cobs. Add half to the serving bowl; stir in shallots and serrano, if desired. Mexican Chili Cheese Dip (Tex-Mex) image

This delicious, yet very easy dip has been a hit at every party I've prepared it for. It's so good, we'll make a batch and have it for dinner every so often. People have told me it's addictive. I rarely have to bring any home after a party. I've been making this dip for many years, so I'm not sure where it came from. When making it for my family, I use refried beans with jalapenos, hot McCormick Taco Seasoning mix, and velveta cheese with peppers. This combines for quite a kick. For guests or a party, I use reqular refried beans and velveta, but the hot taco seasoning is a must. For Christmas parties, I use the red and green tortilla chips.

1 (15 ounce) can hot hormel chili with beans
1 (16 ounce) can refried beans
1 lb ground beef
16 ounces Velveeta cheese
10 ounces extra-sharp cheddar cheese
1 (1 ounce) package taco seasoning mix
2 (16 ounce) bags corn tortilla chips

Steps:

  • In a deep pan, brown ground beef, drain and return to the pan. Add Taco seasoning and prepare according to seasoning instructions.
  • Add Hormel Chili and refried beans.
  • When hot, add the velveta. It helps to cut it up into chunks. Once melted, add the grated cheese. Once all hot and melted together, transfer to a crock pot. Serve with chips and stand back. I write the recipe on recipe cards and take them to the party with me, because I know I'm going to be asked for the recipe.

  • In a Dutch oven, heat the olive oil over medium-high heat. Add the beef and cook for 7 minutes. Add the onion, garlic, chili powder and cumin and cook over medium-low heat for 5 minutes. Add the beans, with their liquid, and the tomatoes; bring to a simmer. Cook, stirring occasionally, until thick, about 15 minutes. Season with salt and pepper.

They slide a wooden skewer in one end for you to hold the corn. We crave it often and it's become a regular on our Saturday grill nights! Give it a try. You'll be surprised!

4 ears corn on the cob, husks and silk removed
¼ cup mayonnaise (such as Hellmann's®/Best Foods®), or to taste - divided
¼ cup margarine in a squeezable container, or to taste - divided

1 teaspoon chili powder, or to taste - divided

Steps:

  • Bring a large pot of water to a boil and gently place ears of corn into the boiling water. Reduce heat to low and simmer until corn is very tender, 20 to 25 minutes.
  • Remove an ear of corn with tongs and spread about 1 tablespoon of mayonnaise all over the kernels. 2 (8 ounce) cans tomato sauce
1 (14 1/2 ounce) can black beans, drained and rinsed

2 tablespoons of minced onions
1 teaspoon ground cumin
1 teaspoon garlic salt

6 (8 inch) flour tortillas, divided

Steps:

  • Preheat oven to 350°F In a large skillet, brown ground beef over medium high heat, drain. Add tomato sauce, beans, corn and green chiles. Stir in next 5 seasonings. Bring to a boil and reduce heat. Simmer, uncovered for 15 minutes. In a 2 quart baking dish, coated with cooking spray, place 3 flour tortillas to cover bottom. Overlap as needed.
