MEXICAN CHRISTMAS ROAST PORK

This traditional Mexican recipe for roast leg of pork is a festive Christmas centerpiece that's a beautiful alternative to ham or turkey. Enjoy at Christmas or for any special occasion!

12 pounds boneless pork leg
2 cups hard apple cider, divided
1 onion, quartered
6 cloves garlic, peeled
salt and ground black pepper to taste
½ cup blanched almonds
15 pitted prunes, sliced
1 ½ (20 ounce) cans pineapple rings, juice drained and reserved
2 tablespoons lard

Steps:

  • Pierce pork with a sharp knife, making several slits all over the top of the leg; place into a large bowl.
  • Combine 1 cup cider, onion, garlic, salt, and pepper in a blender; blend until smooth. Pour over pork. Cover with plastic wrap and marinate in the refrigerator, 6 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Remove pork leg from the refrigerator and bring to room temperature.
  • Transfer pork leg to a roasting pan, reserving juices that have collected in the bowl. Mix pineapple juice into the bowl; pour over the pork. Insert almonds and prunes into the slits on top and in the center of the pork. Inject some of the remaining cider into the pork using a baster. Pour any remaining cider on top. Rub lard over the top of the pork and cover with pineapple slices. Cover the roasting pan with aluminum foil.
  • Bake in the preheated oven, basting every 30 minutes with pan juices, until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C), 5 to 6 hours. Remove foil and bake until browned, about 30 minutes more. Remove from oven, cover with foil, and let sit for 10 minutes before carving.

1.2 kg boneless leg of pork
1 large onion
For the Coating:
2 tsp ground cumin
2 tsp garlic powder
1 tsp dried oregano
1 tsp ground coriander
1 tsp freshly ground black pepper
2 tsp smoked paprika
2 tsp sea salt

Steps:

  • Pre-heat the oven to 200°C. If the joint is not already scored, take a sharp knife and make shallow cuts across its skin at about 3 cm intervals.
  • Mix the coating ingredients together and put into a medium-large freezer bag, together with the joint. Shake it about and rub in all over the meat through the bag.
  • Slice the onion into 4 thick rounds, place in a roasting tray and rest the coated joint on them with the skin side upwards.
  • Pop into the oven and cook for 20 minutes, then turn down to 180°C.
  • The total cooking time should be 35 minutes per 500g plus another 35 minutes. For our 2.2 kg joint this worked out at about 110 minutes i.e. 20 mins at 200°C and 90 mins at 180°C.
  • When the times up put the joint on a carving dish to rest covered with foil for about 15 minutes. In the meantime put the tray on the stove and make some gravy from the roasting juices - add a Tbsp of cornflour, apple juice or cider, chicken stock or vegetable stock and reduce, stirring constantly, until you get a thick sauce. Strain it into a jug.

2 ½ tablespoons olive oil
2 tablespoons dried sage
2 tablespoons garlic powder
2 teaspoons salt
1 tablespoon onion powder
1 (5 pound) pork leg with skin
1 large onion
6 cloves garlic, halved

Steps:

  • Preheat the oven to 430 degrees F (220 degrees C).
  • Combine olive oil, sage, garlic powder, onion powder, and salt in a small bowl.
  • Rinse pork leg and pat dry with a paper towel. Rub seasoned olive oil onto the pork leg.
  • Slice onion and separate layers into rings. Place onion rings and garlic halves in the bottom of a roaster. Place pork on top of onions and garlic.
  • Roast in the preheated oven for 40 minutes. Reduce oven temperature to 355 degrees F (180 degrees C) and roast until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), about 1 hour 20 minutes more.
  • Remove from the oven and slice and serve.

2 medium onions, sliced
2 medium carrots, sliced
2 jalapeno peppers, seeded and chopped
3 garlic cloves, minced
1/2 cup water
1/2 cup chicken broth
1 teaspoon ground coriander

1/2 teaspoon ground cumin
1/2 teaspoon dried oregano

1 boneless pork shoulder butt roast (3 pounds)

Steps:

  • In a large skillet, heat oil over medium-high heat. Cook the onions, carrots and jalapenos until tender, 2-3 minutes. Add garlic; cook 1 minute longer. 1 bone-in pork shoulder roast (4 to 5 pounds)
1 can (28 ounces) enchilada sauce
1 large green pepper, chopped
1 medium onion, finely chopped
2 garlic cloves, minced
1/4 cup minced fresh cilantro

1-1/2 teaspoons grated lime zest
