MIMI'S FANTASTIC THICK SPAGHETTI SAUCE
A few years ago I came upon a sauce that was so good but........... I altered it quite a bit to fit our family. This is now the best sauce I have ever had and if you follow the measurements, it will come out the same every single time. I use Tuttoroso brand in the puree, paste, and sauce because that is the one my friend's mother always used. She was from Italy and made the best sauce in the world. Hubby loves it and comments on it whenever we have it which is once a week. It freezes well and is great with meatballs even thought there is a lot of meat in the sauce. Serve it with garlic bread and you will be sooooo happy.

Steps:
- In a heavy pot, brown sausage and hamburg, breaking it up into smaller pieces.
- Add chopped onions and minced garlic and cook till meat is done; add tomato paste and stir until it is mixed in well.
- Add tomato puree, sauce, and water (when measuring the water, put it into the puree can to rinse it all out and then add to meat mixture).
- Add basil, brown sugar, salt, parsley, and black pepper and mix well.
- Add the Parmesan cheese (yes, to the the sauce) and mix it in well.
- Simmer on low for 2-4 hours stirring occasionally so it won't burn; if you think it needs some thinning down, add about 1/8 cup water at a time; don't add too much because you want it thick so it will stick to your pasta.
- Cook your spaghetti and enjoy! Eat what you want and freeze the rest in containers that will hold the amount you will eat at a sitting.
MIMI'S SPAGHETTI SAUCE
This is my mother's home made spaghetti sauce, which I like to use when making lasagna or baked ziti too. It's not real thick, and not real thin. You can usually serve it after cooking only 1 hour, but additional time brings out the taste better. The only alteration I made to Mimi's recipe is I added chopped green pepper for DH. You can also make it with ground buffalo or ground turkey for a leaner version.

Steps:
- Put olive oil in stock pot.
- Add onion, garlic and green pepper. Saute over low heat until onion is translucent.
- Add ground beef and brown until thoroughly cooked. Drain excess grease.
- Add tomato paste and tomato sauce. Include one can water from each (about 2 cups water). Stir together until paste is mixed in well with other ingredients.
- Add basil, oregano, rosemary, thyme, bay leaves and pinch of sugar.
- Bring to a boil, then reduce heat and simmer on low for 1-2 hours.
- Serve over cooked pasta, with freshly grated parmesan cheese, salad and hot bread.

MOM'S SPAGHETTI SAUCE

- In a large saucepan over medium heat, saute the ground beef, pork and sausage until it is brown. Drain off excess fat. Add the remaining ingredients and stir until smooth. Cook for 3 to 4 hours on medium heat, stirring often to prevent scorching.

- Combine ground beef, onion, garlic, and green pepper in a large saucepan over medium-high heat. Cook and stir until meat is browned and crumbly and vegetables are tender, 5 to 7 minutes. Drain grease.
- Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.

Ok guys, I gotta tell ya I'll eat about anything my wife puts in front of me, but my wife's spaghetti is totally awesome!!! It's pretty spicy, so you may want to cut back on the red pepper and use regular Italian sausage.

- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.n
- In a large pot combine white wine, onion, mushrooms and bell pepper. Cook on medium heat until vegetables are tender. Stir in red wine, Italian seasoning, crushed red pepper, bay leaves, oregano, onion powder, garlic powder, basil, rosemary, allspice, salt, thyme, sage, marjoram, tomato sauce, tomato paste and sausage. Reduce heat, cover and simmer for 45 minutes.n

- Heat 1 Tbsp of olive oil in a large saute pan over medium heat. Add Italian sausages and cook until browned on all sides, roughly 2-3 minutes per side. Brown in two separate batches if putting them all in one pan at a time will make them too crowded. Once browned, transfer sausages to the crockpot. They don't need to be cooked through because they will finish cooking in the crockpot
- Add the additional 2 Tbsp olive oil to the same pan and add diced onion. Add the dried spices crushing them in your hand before putting them in the pan with the onion. Saute until onions are cooked and translucent, about 5 minutes. Add chopped garlic and stir continuously for 30 seconds being careful not to let garlic burn
- Add white wine to the pan with the onions and garlic and stir. Saute until wine is reduced by half, roughly 3-4 minutes. Transfer this onion and garlic mixture to the crockpot with the Italian sausage
- Add 28 oz can of diced tomatoes and both cans of tomato paste to the crockpot with the Italian sausage and onion/garlic mixture. Fill up one of the tomato paste cans with water four times and pour into the crockpot with the other ingredients
