- Preheat the oven to 400℉.
- Line a large baking sheet with parchment paper or a silicone baking mat. Place the sweet potato cubes, Brussels sprouts, and minced garlic on the baking sheet. Drizzle oil over vegetables then gently toss to coat and sprinkle with salt and pepper before spreading them out so that they're in a single layer.
- Place the baking sheet in the oven and roast the vegetables for 15 minutes.
- While the vegetables are roasting, mix the ground beef with ¼ cup BBQ sauce, garlic and onion powders, thyme, salt, and pepper. Divide the meat mixture into 4 portions and shape each into a football shape about ¾-inch thick. Set aside.
- After the vegetables have been in the oven for 15 minutes, remove the baking sheet from the oven. Stir vegetables then make a space between them for the meatloaves.
- Place the meatloaves on the pan and spread the remaining BBQ sauce over each one.
- Return the baking sheet to the oven and bake for an additional 12-15 minutes or until an instant-read thermometer inserted into the thickest part of the meatloaves registers 165℉.
- Remove the baking sheet from the oven, sprinkle with chopped parsley (if desired) and serve immediately.

- Preheat oven to 375 degrees.
- In a medium bowl, mix together milk and bread until a paste is formed.
- In a small bowl, mix together the ketchup and mustard.
- Then in the bowl, with the milk and bread paste, add the ground beef, Worcestershire sauce, onion powder, garlic powder, salt, pepper, parmesan cheese, shredded cheddar cheese, egg, and half of the ketchup mustard mixture. Mix all of the ingredients until everything is evenly distributed throughout the meat. Form into four loaves and place onto a sheet pan coated with cooking spray. Spread the remaining ketchup and mustard mixture evenly onto the top of the meatloaves.
- In another medium bowl, mix together the potatoes with 1 tablespoon of olive oil, salt, and pepper. Place onto the sheet pan next to the meatloaf.
- In the same medium bowl as the potatoes, mix together broccoli florets and 1 tablespoon of olive oil. Place on the sheet pan next to the potatoes.
- Cook for 40 minutes or until meatloaves are cooked completely and veggies are roasted.
- Serve immediately or store in glass meal prep containers for dinner throughout the week.

- Preheat oven to 400 degrees F and line a rimmed baking sheet with parchment paper
- In a clean medium sized bowl, add halved potatoes, green beans, oil, 1/2 teaspoon salt and 1/8 teaspoon pepper. Stir to coat well and place on one half of baking sheet
- Turn potatoes so they are cut side down on the pan.
- Fold the edge of a piece of foil to create a ledge and place it on the empty side of the pan.
- In a medium bowl, stir together beef, onion, 1/3 cup barbecue sauce, egg, 1/2 teaspoon salt and 1/8 teaspoon pepper.
- Shape into 4 mini rectangular meatloaves and line up on the foil on one side of the baking sheet. Divide remaining barbecue sauce between meatloaves and brush on top.
- Bake for 25-30 minutes or until potatoes are tender and the meatloaf reaches an internal temperature of at least 160 degrees F. Serve.

MINI VEGAN MEATLOAF SHEET PAN DINNER

- Preheat the oven to 375 degrees(F).
- Heat 1 tablespoon of olive oil on medium high in a large non-stick skillet.
- Add the garlic, onion, carrots and mushrooms to the skillet. Saute, reducing heat as needed, for about 5-7 minutes or until the mushrooms are cooked and the carrots have softened. Season with a pinch of salt and pepper. Turn the heat off.
- In a large mixing bowl, add the cooked lentils and mash them. Either with a fork or potato masher. Mash the lentils well, but leave a little texture.
- Then add the sauteed veggies, the panko, 1/4 cup of ketchup(saving the rest for the topping), soy sauce, maple syrup, salt and pepper. Stir together to start incorporating. Then I like to just use my hands to mash and mix everything. It is mixed properly if the mixture holds together well.
- Spray a large sheet pan with non-stick spray. Then divided the lentil mixture into 4, and form them into mini loaves with your hands. Placing them on one side of the sheet pan.
- Next mix together the remaining 1/2 cup of ketchup and the balsamic vinegar. Then using about half of the mixture, brush it on the tops of the mini meatloaves. Save the rest for later.
- Now, cut any potatoes that are larger than an inch. You can cut them in half or quarters if need be. Put them in a large mixing bowl with the green beans and drizzle with the remaining olive oil and a few pinches of salt and pepper. Toss to coat.
- Put the potatoes and green beans on the other side of the sheet pan.
- Bake for 15 minutes, then remove the pan from the oven. Toss the veggies and then brush the meatloaves with more of the ketchup mixture.
- Then bake for 15-25 more minutes or until the potatoes are soft and the meatloaves are firm. Brush with any remaining ketchup mixture. Serve immediately.

- Preheat oven to 425°. In a large bowl, combine eggs, tomato juice, oats, onion and salt. Add beef; mix lightly but thoroughly. - Preheat the oven to 350 degrees.
- Sauté the vegetables: Melt the butter in a small saucepan over medium heat. Sauté the onions and peppers for 4 minutes. Add the garlic and sauté for 1 more minute. Remove and let cool.
- Combine Wet ingredients: Whisk together the egg, milk, mustard, ketchup, BBQ Sauce, Worcestershire sauce, cheese, salt, and pepper in a large bowl.
- Add remaining ingredients: Stir in the Ritz crackers, then add the cooled onions/peppers/garlic. Add the ground beef and gently mix until just combined. Don't overwork the meat or it will become tough.
- Form into loaves: Divide the meat mixture into 4 equal parts and mold them into 5-inch loaves. Place on a parchment paper lined baking sheet (preferably a sheet that has raised edges to avoid overflow from drippings.) Combine the glaze ingredients and brush half of it over the meatloaf.
- Bake Once/Remove Grease: Bake for 25 minutes and carefully remove it from the oven, there will be grease to remove. To do this, carefully transfer each meatloaf to a new parchment paper lined baking sheet using a spatula. OR, transfer to a plate and replace the original baking sheet with new parchment paper. (See PRO tips in notes section for an alternative method of handling the grease.)
- Bake Twice: Brush remaining glaze on top of the meatloaf. Bake for 15 more minutes, the internal temperature should be 160 degrees.
- Serve: I like to brush a little more ketchup on top prior to serving. Serve with mashed potatoes and roasted green beans or roasted carrots.

- Bake for 25 minutes
- Now work on the sauce. In a small bowl add all of the sauce ingredients and whisk.
- After the 25 minutes of baking take the meatloafs out of the oven and brush the sauce on the tops of the meatloafs. Place bake in the oven for 15-20 more minutes.
