1/2 cup mayonnaise
1/2 cup chopped onion
1/2 cup sweet pickle relish
1/4 cup chopped pimientos
2 hard-boiled eggs, quartered
2 tsp prepared yellow mustard
1/2 tsp salt
lettuce leaves (optional)

Steps:

  • The Classic Rice Salad with eggs is a tasty and light option for any occasion. it works well as a side dish, appetizer, lunch or snack! It's quick, easy, delicious and perfect for grilling season. Step 1
  • Prepare rice according to package directions. Step 2
  • Mix all ingredients together in a large bowl. Transfer to the refrigerator and allow to chill. Step 3
  • Serve on washed lettuce leaves, if using. Recipe Tips For perfect hard-boiled eggs, place eggs in a single layer in a saucepan. Add enough cold water to cover by at least 1 inch. Cover saucepan and bring to a boil over high heat. Remove from heat. Let eggs stand, covered, in hot water for 15 to 17 minutes. Pour off hot water and immediately cover eggs with cold water. Let stand until completely cooled before peeling. For a dairy-free option, substitute mashed avocado in for the mayonnaise.

2 cups basmati rice
1 tablespoon olive oil
1 small onion, finely chopped, about 1/2 cup
1 bay leaf
1 teaspoon salt
Several grinds white pepper
3 cups hot chicken broth
2 tablespoons unsalted butter
2 tablespoons fresh mint leaves, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Examine the rice for foreign objects, but do not wash.
  • Heat the olive oil in the bottom of a heavy casserole until it begins to bubble. Add the onion and saute until translucent. Add the rice and stir to coat well with oil before adding the bay leaf, salt, pepper and the hot broth. Quickly bring to a boil, place a tight fitting lid on the pot and place into the oven.
  • Cook the rice for 18 to 20 minutes before removing from the oven. Stir in the butter and the chopped mint and serve.

Steps:

  • In wooden salad bowl combine rice with parsley, scallions, mint, oil, lemon juice, and seasonings.
  • Chill.
  • Just before serving, toss well.
  • Add tomatoes and radishes; serve over romaine lettuce.
  • NOTE: cooking time does not include time to prepare rice.

10 sprigs mint, stems reserved and leaves chopped (about 1/4 cup)
1 1/2 cups chicken or vegetarian broth
1 1/2 cups water
1 medium-size onion (about 6 ounces), peeled and finely chopped
2 tablespoons olive oil
1 1/2 cups converted white rice, or basmati
1/2 teaspoon kosher salt
Freshly ground black pepper to taste

Steps:

  • Place mint stems, chicken broth and water in a 2 1/2-quart souffle dish or casserole with tight-fitting lid. Cook, covered, at 100 percent power in a 650- to 700-watt oven for 10 minutes. If using plastic, prick to release steam.
  • Remove from oven and uncover. Strain liquid and allow liquid to cool to room temperature. Reserve.
  • Place onion and oil in the 2 1/2-quart souffle dish or casserole. Cover and cook at 100 percent power for 4 minutes.
  • Remove from oven and uncover. Stir in rice. Cook, uncovered, at 100 percent power for 1 minute 30 seconds.
  • Remove from oven. Stir in reserved liquid. Re-cover and cook at 100 percent power for 10 minutes.
  • Remove from oven and uncover. Stir in 2 tablespoons of the chopped mint leaves. Re-cover and cook for 8 minutes longer.
  • Remove from oven and uncover. Stir in remaining chopped mint, salt and pepper. Serve hot.

250g long grain rice
250g bunch asparagus , cut in bite-size pieces
1 red pepper , seeded and chopped
3 tbsp olive oil
garted zest and juice 1 lemon
2 x 125g packs mini mozzarella , halved (or 2 x 125g balls mozzarella, chopped)
1 large bunch mint leaves, shredded

Steps:

  • Drop the rice into a pan of boiling salted water and cook for 10 minutes. Toss in the asparagus and cook for a further 3-4 minutes until the rice is completely cooked and the asparagus is only slightly crunchy. Drain into a sieve and hold under the cold tap until cool.
  • When the rice is cold, stir in the red pepper, oil, lemon zest and juice, mozzarella and mint leaves. Season well.

2 cups uncooked white rice
1 1/2 teaspoons salt
1/2 cup fresh orange juice
1/2 cup olive oil
1/4 cup fresh lemon juice
4 teaspoons grated orange peel
2 teaspoons grated lemon peel
1/2 teaspoon ground cinnamon
30 cherry tomatoes, halved
7 small pickling cucumbers, diced (about 4 cups)
1 cup sliced green onions
1/2 cup chopped fresh mint
16 ounces feta cheese, crumbled

Steps:

  • Bring 4 cups water, rice, and salt to boil in heavy medium saucepan over high heat, stirring occasionally. Reduce heat to low; cover and cook until rice is tender and water is absorbed, about 20 minutes. Uncover saucepan and cook rice over very low heat until dry, about 5 minutes. Transfer rice to large bowl and cool to room temperature.
  • Whisk orange juice and next 5 ingredients in small bowl to blend.
  • Add halved tomatoes, cucumbers, green onions, mint, and feta to rice in large bowl. Add dressing; toss to blend. (Can be made 8 hours ahead; cover and refrigerate. Bring to room temperature and toss before serving.)

extra-virgin olive oil , for drizzling
a little lemon zest

Steps:

  • Halve the tomatoes and scatter over a large plate. Finely chop the red onion and tear up the mint leaves. Throw the onion and mint over the tomatoes. Can be kept, covered, 3-4 hours ahead. Just before serving, drizzle with extra virgin olive oil, season with salt and ground black pepper and finely grate a little lemon zest over the top.
