MIMI'S GRANOLA BARS

- Position an oven rack in the middle of the oven and preheat to 350 degrees F.
- In a large bowl, combine the flours, quick oats, flax seed, wheat germ, baking soda, cinnamon, salt and baking powder.
- In a stand mixer, cream together the butter, coconut oil, brown sugar, honey and peanut butter until creamy and well mixed, about 4 minutes, scraping down the bowl halfway through. Add the egg and mix until incorporated. Add the flour mixture and mix just until incorporated. Fold in the granola, cherries and coconut.
- In a 9 by 13-inch baking pan, place a piece of parchment across the bottom (it will extend over the long sides, but not the ends). Spray with nonstick spray. Add the dough to the pan and cover with plastic wrap. Using your hands, gently press the dough out into the pan until evenly spread. Place the pan on the middle rack and bake until the edges are starting to brown lightly and a toothpick comes out clean, 35 to 40 minutes. Remove from the oven and cool in the pan for 15 to 20 minutes. Then gently lift the parchment out onto a cooling rack and cool completely; it will firm up as it cools, but crumble if you move it too soon. Once completely cool, move to a cutting board and cut into bars with a bench scraper or large knife, about 3 by 1-inch each.

- Stir oats, milk chocolate pieces, flour, flax seed meal, brown sugar, and salt together in a large bowl. Make a well in the center of the oat mixture.
- Whisk egg in a separate bowl until light and fluffy. Add honey, oil, and vanilla; whisk until well-combined. Pour egg mixture into the well in the oat mixture. Stir until evenly combined. Pour mixture into a 9x13-inch glass baking dish; pat down and spread the mixture flat, leaving at least 1-inch of space between the mixture and the sides of the dish.
- Bake in the preheated oven until golden and set, about 25 minutes.

- In a large bowl, cream butter and sugars until light and fluffy. Bear in eggs and vanilla. Combine the flour, baking powder and salt; gradually add to the creamed mixture. Stir in chips and 1 cup of M&M's. , Spoon into a greased 13-in. x 9-in. baking pan; spread evenly in pan. Sprinkle with the remaining M&M's. Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars.

- Preheat the oven to 350 F. Line an 8×8 baking dish with parchment paper, leaving a bit of overhang. Spread the oats and coconut out onto a large baking tray. When the oven is heated, place the baking tray in the oven for 4 minutes, then rotate the pan and toast for another 2 minutes. Remove and let cool.
- In a large mixing bowl, combine the oats and coconut, rice krispies and cinnamon. In a medium saucepan over medium-high heat, melt the butter, brown sugar and honey together. Once the mixture starts simmering, remove it from heat and stir in the vanilla extract. Pour the honey mixture over the bowl of oats and use a wooden spoon to stir it all together. Allow it to cool for 10 minutes before adding in the M&M’s (or they’ll melt). Stir them in gently.
- Empty the granola mixture into the baking dish and press down evenly. Use your hands to press down firmly, putting some weight into it. Press in a few reserved M&Ms on top for visual effect. Place the baking dish into the refrigerator for 3-4 hours before removing. Hold the ends of the parchment paper to lift the bars out of the pan and onto a large cutting board. Use a large knife to cut the bars into 12 (or whatever size you prefer). Wrap each individually in plastic wrap, or place the bars into a container. Store the bars in the refrigerator (or freezer).
