CREAMY BANANA PIE
When I read that Taste of Home was having a banana recipe contest, I knew instantly the recipe I should share. This delectable pie is from a recipe I found years ago, and everyone who tastes it enjoys its delicious old-fashioned flavor. -Rita Pribyl, Indianapolis, Indiana

- Soften gelatin in cold water; set aside. In a saucepan, combine the sugar, cornstarch and salt. Whisk in the milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. , Stir a small amount of hot filling into yolks. Return all to the pan, stirring constantly. Bring to a gentle boil. Cook and stir 2 minutes longer. Remove from the heat; stir in softened gelatin until dissolved. Stir in butter and vanilla. Cover the surface of custard with plastic wrap and chill until no longer warm. , Slice 3 bananas; fold into custard along with whipped cream. Spoon into pie shell. Cover and refrigerate until set, about 4-5 hours. , Just before serving, place lemon juice in a small bowl and slice the remaining banana into it. Melt jelly in a saucepan over low heat. Drain banana; pat dry and arrange over filling. Brush banana with the jelly. Sprinkle with grated lemon peel. Serve immediately. Refrigerate leftovers.

- Wash and hull strawberries, cut in half and set aside.
- Combine sugar, cornstarch, and salt in a saucepan; mix well, and stir in water. Add butter, cook glaze over low heat until thickened, stirring constantly. Stir in food coloring.
- Arrange strawberries and bananas in pastry shell, alternating layer of each. Pour glaze evenly over fruit; refrigerate 2 to 3 hours or until well chilled. Spread with whipped topping before serving.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Pour the condensed milk into a small baking dish, and cover with aluminum foil. Place the dish in a larger baking pan. Pour boiling water into the larger pan so it surrounds the smaller dish and comes half way up the sides. Place in preheated oven. Bake 1 hour, stirring twice, until milk turns light brown, thick, and caramelized.
- Slice the bananas and arrange on bottom of the graham cracker crust. Pour caramelized milk over bananas, and cool 30 minutes in the refrigerator.
- Place the heavy cream in a medium bowl, and whip until soft peaks form. Gradually add the confectioners' sugar; and continue whipping until stiff peaks form. Spread whipped cream over cooled caramel. Sprinkle with crushed toffee. Chill 3 hours before serving.

- Soften the cream cheese to room temperature.
- Line pie crust with slices from 2 bananas.
- Whip cream cheese till fluffy.
- Gradually add sweetened condensed milk.
- Continue to stir until well blended.
- Add lemon juice and vanilla extract-blend well.
- Pour into crust.
- Chill 2 hours or until firm.
- Garnish with banana slices from the third banana.

MOM'S BANANA GLAZE PIE
My mom has been making this for as long as I can remember. We thought that we lost the recipe but as she was going through her recipe drawer - there is was! We were so happy because mom turned 86 this year and if we had lost it, I know we would never have made it again. Hope you enjoy it like our family does!

Steps:
- Boil over low fire (after you have mixed all ingredients above except vanilla). Stirring constantly until it thickens.
- Remove from range and add drop of yellow food color and vanilla.
- Pour over sliced bananas in precooked pie shell while mixture is still hot. You will need enough bananas to slice a couple of layers into the pie shells before you add the glaze. You can also sub bananas with other fruit - we just always used bananas!
- After cooling, top with whipped cream that is sweetened.
