Wonderful fried chicken that has been in my family for years and years!

1 (4 pound) chicken, cut into pieces
⅔ cup all-purpose flour
salt and pepper to taste
2 teaspoons garlic powder
1 quart vegetable oil for frying
1 cup sherry

Steps:

  • Put the flour, salt, pepper and garlic powder in a brown paper bag. One by one, coat the chicken parts with mixture.
  • In a large skillet, fry the chicken in 1 inch of hot oil until golden brown. Remove the chicken from the pan and drain the oil.
  • Put the chicken back into the pan and cover the pieces with cooking sherry. Cover the pan and reduce to simmer. Let simmer for 20 minutes. Serve.

3 pounds fresh berries (cleaned and sliced)
1 lemon (zested and juiced)
2 teaspoons cornstarch
1/2 teaspoon vanilla extract
1/3 cup white sugar
2 cups all-purpose flour
3/4 cup powdered sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup cold butter (diced)
1 cup half and half

Steps:

  • Preheat oven to 350 degrees. Spray a 9×13 pan with nonstick cooking spray.
  • In a medium-size mixing bowl, toss berries with lemon zest and juice, cornstarch, vanilla, and white sugar. Spread them out in the 9×13 pan.
  • In a large mixing bowl, stir together flour, powdered sugar, baking powder, and salt. Use a pastry cutter to cut in butter until it resembles a course meal, or pulse the whole thing together in a food processor.
  • Pour in half and half and stir to form a thick batter.
  • Scoop the batter in large clumps on top of the berries to form a nice cobbler crust.
  • Bake in the preheated oven for 1 hour.

2 cups milk
1 cup cooked rice (no instant rice)
2 cups diced, cooked chicken
1 cup flour
2 tsp baking powder
1 tsp salt
1 Tbsp sugar
1 cup milk

Steps:

  • 1. Pour butter into 1 1/2 qt. casserole dish Combine milk, rice, chicken; spoon into casserole dish.
  • 3. Sift together flour, baking powder, salt, sugar; add milk, mix well, spread over chicken-rice mixture.
  • 4. Bake at 350 degrees F for 50 minutes; let stand 5 minutes before serving.

My Mom always served this cold at our family picnics, but misplaced the recipe for over 40 years. She recently found it and shared it with me! Finally! This was my favorite food as a kid, and I have searched every recipe site, but haven't found it! So I am posting it here for YOU! I made this for a potluck thinking I would serve it cold as my childhood memories remember, but it was SOOOO good hot that I stuck it in my slow cooker to keep it warm throughout the potluck! Everyone asked for the recipe! It was a HIT! You can keep in a slow cooker on Warm/Low for 3 to 4 hours!

3 pounds cut-up chicken
1 tablespoon garlic salt, or to taste
2 eggs
2 cups cornstarch
1 quart vegetable oil for frying
1 cup white sugar
½ cup vinegar
¼ cup water
¼ cup ketchup
1 tablespoon soy sauce (such as Kikkoman®)
1 tablespoon hot pepper sauce (such as Frank's RedHot®)

Steps:

  • Rub the chicken with garlic salt on all sides. Allow to rest for 30 minutes to 1 hour in refrigerator.
  • Beat the eggs well in a shallow dish; place the cornstarch in another shallow dish. Dip each piece of chicken into beaten egg and roll in cornstarch until thoroughly coated. Shake off excess cornstarch.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C). Cook the chicken, a few pieces at a time, until the crust is golden brown, about 5 minutes; drain on paper towels.
  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with aluminum foil. Place the chicken into the baking dish so the pieces touch each other.
  • Stir together the sugar, vinegar, water, ketchup, soy sauce, and hot pepper sauce in a saucepan over medium heat until the mixture comes to a boil and the sugar has dissolved. Pour the sauce over the chicken, coating thoroughly with sauce.
  • Bake the chicken in the sauce until the juices run clear, basting with sauce every 10 minutes, for 40 to 50 minutes. Turn the pieces about halfway through baking. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

I found it on another recipe site, and it is the recipe that I always use when we make fried chicken. Enjoy some good, old-fashioned, fattening, country cooking for a change!

1 -2 whole fryer chickens, cut into pieces or 2 packages chicken legs
3 cups flour
3 cups cooking oil
4 tablespoons seasoning salt
3 tablespoons onion powder
3 tablespoons garlic powder
2 tablespoons Mrs. Dash seasoning mix, extra spicy seasoning blend
2 tablespoons parsley flakes
2 tablespoons black pepper
3 cups milk
2 eggs, beaten

Steps:

  • Combine flour and spices in plastic bag.
  • Mix milk and beaten eggs in large bowl.
  • Dip chicken into milk and egg mixture.
  • Shake each piece off lightly.
  • Add chicken pieces one at a time to bag of flour and spices and shake bag lightly until each piece is coated with mixture.
  • After removing chicken from mixture, lightly shake some of the flour mixture off.
  • Heat oil in deep frying pan or in electric skillet to 350 or 375 degrees.
  • Fry each side until tender and golden brown.

8-14-2020..When the cobbler is hot, you cannot do a lattice weave. Either just lay strips on for 2nd layer or must let it cool for quite a while.,,.then do 2nd layer and put back in oven to finish baking . Or try cutting the little rounds instead of lattice., Also, bake @ 425 entire time, as crust rises and browns much better.
